BBQ BACON WRAPPED MUSHROOMS

Steps:
- Cut the stems off the mushrooms. Rinse briefly and dry them well with paper towels.
- Wrap each mushroom with the bacon strip halves. Use 2 if the cap is not completely covered. The bacon will stick to the mushrooms so there is no need for toothpicks.
- In a medium saute pan over medium-high heat, saute the bacon wrapped mushrooms until the bacon is golden brown. Just as the bacon begins to crisp up a bit, add the BBQ sauce and toss until coated. Serve immediately.
BBQ BACON WRAPPED MUSHROOMS
An easy three-ingredient appetizer, but it's oh-so-good! I never seem to be able to stop eating them. The recipe states you don't have to use toothpicks, but I can only seem to keep about half together once I start flipping them, so use them if you have trouble. Credit goes to Adrien Sharp, a finalist from season 3 of the Food Network's "The Next Food Network Star".

MUSHROOM BACON
Caramelized, crispy mushrooms take on the meaty flavor of bacon in this recipe. Put a few slices on toasted bread with sliced tomato and crisp lettuce for a vegetarian BLT. Or serve alongside a bowl of oatmeal for a great breakfast to jumpstart your day.

- Preheat the oven to 300 degrees F, line 2 baking sheets with parchment paper and line a third baking sheet or pan with paper towels. Brush each parchment-lined baking sheet with about 1 tablespoon of vegetable oil. Place the mushroom slices in a single layer, very close together, on the parchment and brush lightly with the remaining vegetable oil.
- Bake the mushrooms until slightly softened and brown, 25 to 30 minutes, then flip the mushrooms over, rotate the pans in the oven and bake until the mushrooms are well-browned and the edges are crispy, another 30 to 35 minutes. Remove from the oven and transfer to the paper-towel lined baking sheet to dry for a few minutes. (Leave the oven on.)
- In a large bowl, whisk together the molasses, soy sauce, brown sugar, garlic powder and paprika. Carefully toss the baked mushrooms in the marinade until evenly coated. Place half the marinated mushroom strips in a single layer (it's ok of they overlap) into a large metal steamer basket or colander that fits snugly into a large, heavy metal pot.
- Prepare a stovetop smoker: Line the bottom of a large, heavy metal pot with foil. Place two large handfuls of applewood chips in the bottom of the pot. Place the pot over medium heat and use a lighter to light a few of the wood chips. Once the chips are smoking, place the mushroom-filled steamer basket or colander inside the pot, then place a tight-fitting lid on top. Allow the mushrooms to smoke for 5 to 10 minutes, depending on how strong of a smoky flavor you want. Repeat with the second batch.
- After the mushrooms are smoked, return them to the baking sheets in a single layer. Sprinkle with salt and a few grinds of pepper and return to the oven until crisp, 3 to 5 minutes. Refrigerate in an airtight container for up to 5 days. Reheat in a low oven before serving.
BBQ BACON MUSHROOMS
This is a recipe that I CRAVE! We have eaten them as a side, main dish, and appetizer. They can also be made on the grill or in the oven. We make our own bbq sauce so feel free to use your favorite sauce in the recipe. Don't be afraid of the grape jelly, it just adds a touch of sweetness and also aids in helping the bbq sauce really carmelize onto the mushrooms. I have found that it helps to go for the good bacon, splurge a bit and you'll be happy you did. If cooking these on the grill you prepare them the same way, however my boyfriend is the one who does the grilling, so grill time would be an estimation from me. I hope you enjoy them as much as we do!

- If cooking in oven, preheat to 400.
- Pull the stems off the mushrooms. Set mushroom caps aside.
- Mix the bbq sauce and grape jelly, tabasco, and any other seasonings you like together and set aside.
- Cut the bacon pieces in half (not long ways) right down the middle.
- Wrap a half of bacon around a mushroom, take the other half and wrap around the rest of the mushroom until it is completely covered with bacon. Secure with a toothpick or wooden skewer. Dip in bbq mixture until well coated.
- Repeat with remainder of mushrooms and bacon.
- If baking in oven, place mushrooms on a broiler pan and cook for about 1 hour to 11/2 hours, depending on how crispy you like your bacon. Turn the mushrooms every 30 minutes, coating with any remaining bbq sauce.
- Remove and let cool before eating.

GRILLED MUSHROOMS AND BACON
A staple of many tapas bars, and among the most elementary of appetizers, this is a surefire crowd pleaser-as long as your crowd isn't vegetarian. Even if some members are, you can skewer plain mushrooms or mushrooms and other vegetables-like red peppers and zucchini, for example.

- Start a charcoal or gas grill or preheat the broiler: the fire should be medium-hot and the grill rack at least 4 inches from the heat source. Make 4 small skewers, alternating mushrooms and bacon. (If you are using sliced bacon, cut the 6 pieces in half, then fold each over onto itself as you skewer it.)
- Grill, turning frequently, until the bacon is crisp on the outside and the mushrooms tender, 10 to 15 minutes. Serve, offering vinaigrette or aïoli as a dipping sauce.
- Half of an English breakfast: Put 1 tablespoon extra virgin olive oil in a skillet and turn the heat to medium-high. A minute later, add the mushrooms and bacon and cook, stirring occasionally, until the bacon is crisp and the mushrooms browned and tender, about 10 minutes. Skewer if you like (it's a nicer presentation) and serve.
