1 green pepper, chopped
1 small yellow onion, chopped
1 can (14-1/2 oz.) diced tomatoes, undrained
1 cup frozen corn
1/2 cup KRAFT Original Barbecue Sauce
3 cups hot cooked long-grain white rice
4 oz. (1/4 of 1-lb. pkg.) VELVEETA, cut into 4 slices
1/2 cup sliced green onions

Steps:

  • Cook meat with peppers and yellow onions in large skillet on medium-high heat 5 min. or until meat is browned, stirring occasionally.
  • Add tomatoes, corn and barbecue sauce; mix well. Reduce heat to medium; simmer 15 min., stirring occasionally.
  • Spoon rice evenly into four soup bowls; top with the meat mixture and VELVEETA. Sprinkle evenly with green onions.

1 boneless beef chuck roast (3 pounds)
1 cup barbecue sauce
1/2 cup apricot preserves
1/3 cup chopped green or sweet red pepper
1 small onion, chopped
1 tablespoon Dijon mustard
2 teaspoons brown sugar
12 sandwich rolls, split

Steps:

  • Cut the roast into quarters; place in a greased 5-qt. slow cooker. In a bowl, combine barbecue sauce, preserves, green pepper, onion, mustard and brown sugar; pour over roast. Cover and cook on low until meat is tender, 6-8 hours. , Remove roast. When cool enough to handle, shred meat with two forks; return to slow cooker and stir gently. Cook, covered, 20-30 minutes longer. Skim fat from sauce. Serve beef and sauce on rolls.

1 skirt steak
Sunny's Pear and Ginger Marinade, recipe follows
One 8-ounce box brown rice noodles
Quick Pickled Asian Slaw, recipe follows
Miso Carrot Ginger Dressing, recipe follows
Chopped scallions, for garnish
Black and white sesame seeds, for garnish
1 cup pear juice (should be opaque and pulpy, not clear)
1/2 cup soy sauce
1/4 cup honey
1 tablespoon freshly grated ginger
1 teaspoon sesame oil
4 cloves garlic, grated on a rasp
Freshly ground black pepper
1/2 small head green cabbage, thinly sliced
1/2 English cucumber, thinly sliced into half-moons
2 large carrots, cut into thin strips (see Cook's Note)
1/2 cup rice wine vinegar
1/2 cup white vinegar
2 tablespoons sugar
1 teaspoon salt
2 medium carrots, chopped
1-inch piece ginger, chopped
1/4 cup rice vinegar
2 tablespoons white miso paste
2 tablespoons vegetable oil or avocado oil
2 teaspoons honey
2 teaspoons toasted sesame oil

Steps:

  • Marinade the skirt steak in the Pear and Ginger Marinade at room temperature for 2 hours. Remove the steak from the marinade and discard the marinade.
  • Heat a grill or grill pan to hot. Grill the skirt steak for 3 to 5 minutes on each side or until desired doneness. Remove from the heat and let rest.
  • Cook the brown rice noodles according to the package directions. Plate the noodles in a large serving bowl or smaller individual bowls.
  • Slice the steak into thin strips and place on top of the noodles. Top with the Quick Pickled Asian Slaw, then drizzle with Miso Carrot Ginger Dressing. Garnish with scallions and sesame seeds. Serve.
  • Combine the pear juice, soy sauce, honey, ginger, sesame oil and garlic in a small pot over medium heat. And a few grinds more than normal of black pepper. Bring to a boil, then remove from the heat and allow to cool completely. Use as desired.
  • Toss the cabbage, cucumber and carrots together in a heatproof bowl, then set aside.
  • Bring the vinegars, sugar and salt to a boil in a small saucepan. Pour the vinegar mixture over the cabbage mixture, tossing to make sure all the veggies are covered. Let sit for 15 minutes. Use the slaw to add flavor to your favorite Asian bowl or sandwich. Vegetables can be kept in their pickling liquid in the fridge for up to 2 weeks.
  • Combine the carrots, ginger, vinegar, miso paste, vegetable oil, honey, sesame oil and 2 tablespoons water in a blender and blend until smooth.

1 ½ lb ribeye steak, or any other well-marbled, tender cut
1 onion, 1/2 roughly chopped and 1/2 thinly sliced
3 cloves garlic cloves
½ pear, peeled and roughly chopped
3 spring onions, 1 cut into pieces and 2 sliced into 1/4-inch rounds
3 tablespoons brown sugar
1 teaspoon black pepper
⅓ cup soy sauce
3 tablespoons sesame oil
1 tablespoon canola oil
1 teaspoon sesame seed, for serving
2 cups cooked rice, for serving
Banchan (Korean side dishes), for serving (optional)

Steps:

  • Slice the beef as thinly as you can, then set aside in a large bowl. Using frozen or cold beef will make the slicing easier.
  • In a blender or food processor, blend the onion chunks, garlic, pear, green onion pieces, brown sugar, pepper, soy sauce, and sesame oil until smooth.
  • Pour the marinade over the beef, add the thinly sliced onion, then mix to coat evenly. Cover with plastic wrap and marinate in the fridge for at least 30 minutes, or overnight.
  • Heat the canola oil in a large skillet over high heat. Pat the meat dry.
  • Being careful not to crowd the pan, sear the marinated beef and onions until browned. Sprinkle with the sliced green onions and sesame seeds.

One 5-pound beef brisket, well-trimmed (no more than 1/8 inch of fat on top)
Salt and freshly ground black pepper
1/4 cup olive or vegetable oil
4 cloves garlic, chopped
2 to 3 stalks celery, chopped
2 carrots, peeled and chopped
2 red chiles, such as Fresno or Thai, seeded and chopped
1 large or 2 medium onions, chopped
One 1-inch piece ginger root, peeled and grated
2 tablespoons tomato paste
3 cups beef stock
1/2 cup tamari
2 tablespoons mirin
2 tablespoons rice wine vinegar
2 3/4 cups chicken stock
2 tablespoons butter
1 1/2 cups basmati rice
Salt
1 cup baby spinach, packed
1/2 cup fresh cilantro leaves, packed
1 lime, zested and rserved
Sliced scallions
Toasted sesame oil
Toasted sesame seeds
Sriracha or other hot sauce

Steps:

  • Preheat the oven to 325 degrees F.
  • For the brisket: Bring the beef to room temp and pat dry. Sprinkle the brisket with salt and pepper. Heat 3 tablespoons of the oil over medium-high to high heat. Add the meat and brown on both sides, then remove. Add 1 tablespoon of the oil and then add the garlic, celery, carrots, chiles, onions and ginger. Season with salt and pepper, and stir 8 to 10 minutes. Add the tomato paste, and stir. Then, add the stock, tamari, mirin and vinegar. Add the brisket and cover. Braise in the oven until very tender, 2 1/2 to 3 hours.
  • Remove the brisket from the sauce. Puree the sauce to smooth in a food processor or with an immersion blender, if desired. Slice the brisket and add back to the sauce. Cool and store for a make-ahead meal. Reheat over medium heat, stirring gently.
  • For the rice: The night you serve, heat the stock and butter to a boil. Add the rice and stir. Season with salt and cover, reduce the heat to a simmer, medium low. In a food processor, pulse the spinach and cilantro into a fine chop. After the rice has cooked 15 minutes, stir in the cilantro, spinach and the lime zest. Cover and cook until the rice is tender, about 3 minutes. Fluff with a fork. Cut the zested lime into wedges.
  • Fill the bowls with the green rice and make a well in the center of the bowl. Fill with the beef, and top with the juice from a wedge of a lime, scallions, drizzle of sesame oil, sesame seeds and a few drops of hot sauce.
