- Preheat oven to 400 degrees and line a baking sheet with foil. Prick the washed sweet potatoes with a fork and place them on the prepared baking sheet. Bake the sweet potatoes for 45 minutes. While the sweet potatoes are baking heat a large skillet over medium heat. Once the skillet is hot add the olive oil, thinly sliced and separated red onion, and 1/4 teaspoon of salt. Saute the onions, stirring them occasionally for about 10-15 minutes or until soft and golden brown in color. When the sweet potatoes are done baking, cool them for a few minutes before cutting them in half lengthwise. Scoop out the flesh, leaving a 1/4 inch border all around the potato. Discard 2 of the potato skins and place the remaining skins back on the foil lined baking sheet. In a large bowl add the sweet potato filling, salt, pepper, chicken broth, and a 1/4 cup of the shredded smoked gouda cheese. Mash everything together with a potato masher until it is mostly smooth. In a medium sized bowl combine the shredded chicken and BBQ sauce, stirring together until it is completely coated. Spoon the sweet potato filling evenly back into the skins. Top with the shredded chicken, caramelized onions, and remaining cheese. Place the potatoes back in the oven and bake for another 10 minutes until the filling is hot and the cheese is melted. Remove the potatoes from the oven and top with more BBQ sauce and cilantro if desired.

- For the chicken: Add the chicken, BBQ sauce, honey, vinegar, salt, chipotles, garlic and onion to a multi-cooker along with 1/4 cup of water and toss to combine. Cover and position the vent to Sealing. Set to pressure cook on high and set the timer to 12 minutes.
- When the time is up, quick-release the steam, then remove the lid. Remove the chicken to a large bowl and shred with 2 forks. Add the sauce to the meat in 1/4-cup increments until it has become saucy but not soupy. Reserve the remaining sauce for serving or freeze for future use (see Cook's Note).
- For the potatoes: Preheat the oven to 400 degrees F.
- Prick each potato all over with a fork. Rub vegetable oil on each potato and bake on a baking sheet for 1 hour. Slice the potatoes lengthwise three-quarters of the way through. Add 2 cups chicken, 1/2 cup sour cream, 1/2 cup Cheddar, 1/4 cup green onion and drizzle of reserved sauce to each potato. Serve immediately.

- Pierce potatoes with fork and rub with oil.
- Place on baking sheet, and bake until tender, about 45 minutes.
- Reduce heat to 350 degrees.
- Remove potatoes from oven.
- When cool enough to handle, horizontally cut the top skin off of each potato.
- Scoop out flesh, leaving 1/4 inch shell.
- Mash scooped out potato, then stir in cheddar cheese, sour cream, margarine, onion, and seasonings.
- Stuff potato skins with mixture (don't be afraid to pile it in!).
- Sprinkle with paprika.
- Bake until hot, about 25 minutes.

- Scrub the outside of each potato and remove any blemishes.
- Poke the outside of each sweet potato multiple times with a fork then place on a baking sheet and place on the middle oven rack.
- Heat oven to 425 degrees and bake for 45 minutes, or until a fork easily presses into the center.
- Meanwhile, spray a 9 x 13 inch baking dish with nonstick cooking spray.
- Place chicken breasts in prepared pan and cover with BBQ sauce.
- Bake at 375 degrees for 25-30 minutes, or place in the oven with the sweet potatoes for the last 20 minutes of cooking. Make sure chicken is cooked all the way through.
- Remove chicken and sweet potatoes from the oven.
- Shred cooked BBQ chicken.
- Cut each sweet potato down the middle and fill with shredded chicken.
- Divide mozzarella cheese, red onion and chopped cilantro evenly between each potato and put on top of each baked potato.
- Broil on high for 2-3 minutes, or until cheese is completely melted.
- Serve hot.

- Preheat the oven to 425°F (220°C). Line a small baking sheet with parchment paper.
- Using a sharp knife, carve out one of the breasts from the rotisserie chicken. If the chicken is particularly small, use both breasts. Chop the chicken breast into very small pieces and set aside.
- Use a fork to poke holes all over the sweet potato. Transfer the sweet potato to the prepared baking sheet.
- Bake for 40-50 minutes, until the sweet potato is tender when pierced with a paring knife or skewer.

- Gently pound chicken breasts into even thickness using the smooth side of a meat mallet, about 1/2 inch thick. Place chicken into a resealable plastic bag.
- Whisk together olive oil, balsamic vinegar, garlic, Italian seasoning, and salt in a small bowl. Pour over chicken, coat evenly, and marinate for 4 to 8 hours.
- Combine cherry tomatoes, basil, lemon juice, salt, and pepper in a small bowl.

- Preheat oven to 325 degrees F (165 degrees C).
- Arrange chicken breasts, potatoes, and onion in a large baking dish.

It's not a real barbecue until a dish of baked beans shows up! While there are many different versions and many different techniques, I'm here to tell you that these are the best. These are the tastiest, most satisfying, the easiest, and the meatiest. They not only make a great side dish, but if the budget's a little tight, these will absolutely work as a main course. Sprinkle the top with sliced green onion if you like.

- Add dry beans to a bowl, cover with water, and let soak for 8 hours, or overnight.
- Drain beans and transfer to a large pot filled with 3 quarts of cold, fresh water. Add bay leaf, pork shoulder, and onion. Bring to a simmer over high heat. Reduce heat to medium-low and stir. Skim off foam if desired. Let simmer until beans are just tender, about 1 hour.
- While beans simmer, combine barbecue sauce, ketchup, vinegar, brown sugar, molasses, mustard, Worcestershire, smoked paprika, cayenne, black pepper, kosher salt, and garlic powder in a bowl with a whisk. Set aside until needed.
- Preheat the oven to 350 degrees F (175 degrees C).
- Transfer tender bean mixture to a deep, 15x10-inch baking dish using a spider strainer. Pour in barbecue sauce mixture and 2 ½ cups of the bean cooking liquid. Place bacon slices on top.
- Bake uncovered in the center of the preheated oven until the liquids have reduced into a thick sauce, 2 to 3 hours.
