2 Tbsp. oil
1 lb. beef top round steak, cut into 1/2-inch pieces
1 lb. extra-lean ground beef
1 onion, finely chopped
1/4 cup A.1. Dry Rub Bold Original
3 cloves garlic, minced
2 cans (16 oz. each) kidney beans, rinsed
2-1/2 cups undrained canned no-salt-added diced tomatoes
1 bottle (18 oz.) KRAFT Hickory Smoke Barbecue Sauce
3/4 cup KRAFT Shredded Cheddar Cheese

Steps:

  • Heat oil in large skillet on medium heat. Add next 5 ingredients; stir. Cook 10 min. or until meat is evenly browned, stirring frequently. Spoon into slow cooker sprayed with cooking spray.
  • Add all remaining ingredients except cheese; stir. Cover with lid. Cook on LOW 7 to 8 hours (or on HIGH 4 to 5 hours).
  • Serve topped with cheese.

Steps:

  • In heavy 3-quart saucepan, cook beef and onion over medium-high heat 5 to 7 minutes, stirring occasionally, until beef is thoroughly cooked; drain.
  • Stir in remaining ingredients except cheese and corn chips. Heat to boiling; reduce heat. Simmer uncovered 5 to 10 minutes, stirring occasionally, until corn is tender. Top individual servings with cheese and corn chips.

1 3/4 pounds cubed beef stew meat
2 tablespoons ancho chile powder
2 tablespoons packed light brown sugar
1 tablespoon sweet paprika
2 teaspoons ground cumin
Kosher salt and freshly ground pepper
1/3 cup chili sauce (such as Heinz)
1 tablespoon plus 1 teaspoon red wine vinegar
1 tablespoon yellow mustard
2 teaspoons Worcestershire sauce
1 16-ounce can chili beans (do not drain)
Corn chips, shredded cheddar cheese, sour cream and/or sliced scallions, for topping

Steps:

  • Toss the beef with the chile powder, brown sugar, paprika, cumin, 1/2 teaspoon salt and a few grinds of pepper in a 6- to 7-quart slow cooker. Whisk the chili sauce with 1 tablespoon vinegar, the mustard and Worcestershire sauce; add to the slow cooker along with the beans. Cover and cook on low until the beef is tender, 7 to 8 hours.
  • Uncover and stir to combine; let sit, uncovered, 10 minutes. Stir in the remaining 1 teaspoon vinegar. Serve with corn chips and desired toppings.

1 tablespoon garlic powder
2 teaspoons celery seed
1 teaspoon coarsely ground pepper

1 fresh beef brisket (3 to 4 pounds)
1 medium green pepper, chopped
1 small onion, chopped
1 bottle (12 ounces) chili sauce
1 cup ketchup
1/2 cup barbecue sauce
1/3 cup packed brown sugar
1/4 cup cider vinegar
1/4 cup Worcestershire sauce
1 teaspoon ground mustard
1 can (16 ounces) hot chili beans, undrained
1 can (15-1/2 ounces) great northern beans, rinsed and drained
Optional toppings: Shredded cheddar cheese, chopped white onion and sliced jalapeno peppers

Steps:

  • Combine the first five ingredients; rub over brisket. Cut into 8 pieces; place in a 5-qt. slow cooker. Combine the green pepper, onion, chili sauce, ketchup, barbecue sauce, brown sugar, vinegar, Worcestershire sauce and mustard; pour over meat. Cover and cook on high for 5-6 hours or until meat is tender., Remove meat; cool slightly. Meanwhile, skim fat from cooking juices. Shred meat with 2 forks; return to slow cooker. Reduce heat to low. Stir in the beans. Cover and cook for 1 hour or until heated through. If desired, top with shredded cheddar cheese, chopped white onion and sliced jalapenos. Freeze Option: Freeze cooled chili in freezer containers. To use, partially thaw in refrigerator overnight. 1 onion, chopped
1 tablespoon minced garlic
dill, to taste
chili powder, to taste

2 (14 ounce) cans diced tomatoes, drained or 2 (14 ounce) cans substitute your favorite rotel
1 (6 ounce) can tomato paste
4 (16 ounce) cans chili beans
3/4 cup picante sauce, your favorite flavor and heat
1/2-3/4 cup barbecue sauce (I love the original KC Masterpiece, but any thick, sweet BBQ sauce should work.)
1 (4 ounce) can diced green chilies
sour cream
shredded cheddar cheese
Frito Scoops
prepared macaroni and cheese

Steps:

  • Sauté onion in a little bit of oil. Add ground beef and minced garlic. Dust with dill, chili powder, cumin and red pepper flakes. Mix and cook covered over medium heat, stirring occasionally, until beef is cooked through. Drain fat.
  • Add tomatoes, tomato paste and beans.
  • Add picante sauce, barbecue sauce, diced green chilies.
  • Add any additional chili powder and/or red pepper flakes.
  • Bring to a low boil, reduce heat to low and simmer for 30 minutes or more. I have let this simmer for up to 2 hours and the longer it sits, the yummier it gets. It's great the next day, and the day after, too!
  • Serve with sour cream and shredded cheese on top. Eat with the Frito Scoops if you are feeling adventurous enough to dig in without a spoon.
  • Optional - Make a box of mac 'n cheese and ring your chili bowl with it before spooning in the chili. Delectable!

1 cup bbq sauce ( If gluten free be sure to use gf bbq sauce)
1 -2 teaspoons chili powder
1 teaspoon salt
1/2 teaspoon paprika
1/4 teaspoon black pepper
1 can kidney beans, rinsed and drained (optional)
2 cups shredded cheese

Steps:

  • In a skillet brown ground beef with onion and green pepper.
  • Cook until meat is browned and onions are tender.
  • Add garlic and cook for 1 minute more.
  • Drain off any fat and add meat to a crock pot.
  • Add remaining ingredients, except cheese
  • Cook on low for 6-7 hours or on high for 3-4 hours.
  • Stir in cheese just before serving or serve with cheese sprinkled on top of each bowl.

For my BBQ Chicken Chili I decided instead of chunks of ground beef or steak, I would use chopped BBQ chicken and add it to one of my favorite chili recipes with an extra bump in bean power coming from chickpeas. Chili powder, chipotle, beer and other spices round out this spicy good family favorite.

2 tbsp olive oil
1 red onion chopped
1/4 cup pickled jalapeno slices
4 cloves garlic minced
1/4 cup Worcestershire sauce
2 tbsp chili seasoning

1 chipotle pepper (minced)
1 tbsp adobo sauce that chipotle comes in
2 tsp smoked paprika
1 tsp salt

1 cup BBQ sauce (your favorite)

Steps:

  • In a large stock pot over medium heat add the oil and sauté the onion for 5 minutes. Add the jalapeños and garlic and continue cooking for 3 minutes. Deglaze pot with Worcestershire sauce and stir to pick up browned bits on bottom of pot.
  • Next add the remaining ingredients through tomato paste, stir to combine, cover and simmer on low for 1 1/2 hours. If there is too much liquid at this time, simmer to reduce with lid off for 15 minutes.
  • While chili cooks start BBQ grill and heat to 350°F. Grill chicken breasts on each side, basting on each turn with your favorite BBQ sauce. I start with 3 minutes on one side with closed lid. Turn, baste, cover for 5 minutes more. Turn once again, baste, cover for 2-3 more minutes or until internal temp reaches 160°-165°F. Remove from grill and rest 5 minutes. Chop into bite sized pieces and add to chili.
  • Serve topped with a dollop of sour cream, shredded cheddar cheese and chopped cilantro (optional).

1 lb Italian sausage
1 package Kielbasa
1 can Dark red kidney beans
1 can Light red kidney beans
1 can Lima beans
1 can Butter beans
1 bag Frozen corn
1 can Rotel
1 jar V8
1-2 bottles Dark beer
1 bottle BBQ sauce
3 TBSP Spicy mustard
2 TBSP Worcestershire sauce
1 Sweet onion
3 Peppers (green, yellow, red)
3-4 cloves Garlic
2 TBSP Garlic powder
2 TBSP Onion powder
2 TBSP Coarse ground black pepper
1 tsp Kosher salt
7 TBSP Chili powder
¾ cup Sugar

Steps:

  • Fire up your smoker to 300 degrees using your choice of wood
  • In a saucepan, sauté your onion, peppers, and garlic until soft and translucent. Add to your Dutch oven.
  • In the same saucepan, sauté your frozen corn along with a pat of butter, until soft and slightly blackened. Add to the Dutch oven.
  • Add your beans, Rotel, V8, beer, BBQ sauce, spicy mustard, and Worcestershire sauce to the Dutch oven and mix well.
  • In a large bowl, mix together your ground beef and Italian sausage. Add the garlic powder, onion powder, black pepper, salt, and chili powder. Mix until well combined and form into a large ball. Place on a wire rack.
  • Once your smoker is up to temp and producing clean smoke, place your Dutch oven on the grate and set the wire rack with the meat over top of it. Also place your Kielbasa in the smoker.
  • Smoke for about 3 hours, until the meat reaches 160 degrees internal. When your Kielbasa is fully cooked, dice it up and add to the Dutch oven.
  • When the ball of meat has reached 160, carefully crumble it into the Dutch oven and mix in.
  • Add ¾ cup of sugar and mix until dissolved. Continue smoking for about 30 minutes to meld all of the flavors together.
  • Serve hot with your choice of toppings.
