1 onion
1 green bell pepper
1/2 cup barbecue sauce
3 garlic cloves
1 1/3 cups shredded sharp cheddar cheese
10 whole wheat tortillas
4 tablespoons oil
1/2 cup sour cream

Steps:

  • Dice up the garlic, green pepper, lamb, and onions.
  • Mix bbq sauce with diced lamb.
  • Heat oil in large skillet.
  • Assemble quesadilla by placing lamb on tortilla, add cheddar cheese, garlic, onions and pepper.
  • Top off with another tortilla and place in hot skillet.
  • Cook until cheese is melted and tortilla is golden brown on both sides.
  • Repeat until tortillas are used up.
  • Serve with sour cream.

1/2 cup Bob Evans Wildfire BBQ sauce
4 10" flour tortillas
1 cup (4 oz.) shredded Monterey Jack Cheese

Steps:

  • In skillet over medium heat crumble and cook sausage and onions until brown. Stir in BBQ sauce. Lay 2 of the tortillas on a flat surface. Top each with 1/4 cup cheese. Divide sausage mixture between the two. Sprinkle each with 1/4 cup cheese. Top with remaining tortillas. Heat large skillet over medium heat. Add a small amount of oil to coat bottom of skillet. Cook one quesadilla at a time until golden grown on each side, about 2-3 minutes per side. Cut into wedges and serve with sour cream and salsa.;

Steps:

  • Cut liver into 1 cm thick stakes, removing small veins. Soak liver in milk for 1 hour.
  • Drain the milk dry with paper towel, soak in oil and put on fire. Livers are done when they are rose inside.
  • Salt after otherwise livers will be hard. Serve with fresh cut onion rings.

1 teaspoon lime juice
1 carton (18 ounces) refrigerated fully cooked barbecued shredded beef
8 flour tortillas (8 inches)
1/2 cup refried beans
1 cup shredded Mexican cheese blend
1-1/2 cups shredded lettuce
Chopped fresh tomatoes, optional

Steps:

  • In a small bowl, combine the sour cream, cilantro and lime juice; set aside. Heat barbecued beef according to package directions. Spread four tortillas with refried beans; top each with 1/2 cup beef and 1/4 cup cheese. Top with remaining tortillas. , In a large skillet coated with cooking spray, heat quesadillas over medium heat for 1-2 minutes on each side or until lightly browned. Cut each into four wedges. 2 to 3 cups olive oil
1/4 cup chopped garlic
4 teaspoons salt
1 teaspoon minced fresh rosemary or 1/2 teaspoon dried rosemary, crushed
1 teaspoon salt-free garlic and herb seasoning
1 teaspoon pepper
18 lamb rib chops (1 inch thick and 4 ounces each)

Steps:

  • In a shallow dish, combine the oil, garlic and seasonings; add lamb chops and turn to coat. Cover and refrigerate overnight, turning occasionally. , Drain and discard marinade. Grill the chops, uncovered, over medium heat for 5-9 minutes on each side or until meat reaches desired doneness (135° for medium-rare, 140° for medium, 145° for medium-well).

½ lb chicken breast, cut into strips
salt, to taste
pepper, to taste
½ cup BBQ sauce
2 flour tortillas
¼ cup red onion, julienned
½ cup monterey jack cheese, double for 2 quesadillas
½ cup cheddar cheese, double for 2 quesadillas
fresh parsley
BBQ sauce

Steps:

  • In a large skillet, add chicken breast and season both sides with salt and pepper.
  • Cook 15-18 minutes, flipping halfway and adding the onions when you flip the chicken. (Cooking times may vary depending on thickness of the chicken breast).
  • Remove the chicken from the pan and continue to stir onions.
  • Shred the chicken while onions are cooking.
  • Return the shredded chicken to the pan with the onions. Add the BBQ sauce and stir. Remove from the pan and set aside.
  • Place a tortilla in a pan and add a layer monterey jack and cheddar cheese on half of the tortilla.
  • Place cooked chicken and onions, and top with the rest of each cheese. Fold in half and cook 6 minutes, flipping halfway.
  • Serve with extra BBQ sauce and garnish with fresh parsley.
  • Enjoy!
