- Place crushed potato chips in another shallow bowl.
- Dip chicken into the dressing mixture, then into the potato chips, coating both sides completely.
- Place on a rimmed baking sheet coated with non-stick cooking spray.
- Bake 20-25 minutes or until chicken is done.
HOMEMADE BARBECUE POTATO CHIPS

Steps:
- Mix the paprika, sugar, salt, onion powder, smoked paprika, chili powder and garlic powder together in a small bowl.
- Slice the potatoes about 1/16 inch thick on a mandoline. Put the potatoes in a large bowl of cold water and agitate to separate the slices and release the starch. Drain the water and repeat with fresh cold water about 3 more times, until the water runs clear. Lay out a couple of layers of paper towels and spread the potatoes out in a slightly overlapping layer (stack with more layers of paper towels to save space if necessary) and let stand to dry, about 5 minutes.
- Fill a large, wide pot with 2 inches of oil and heat over medium-high heat until a deep-fry thermometer registers 300 degrees F. Line a large mixing bowl with paper towels for draining. Add about 1/4 of the potato slices to the hot oil and fry, mixing constantly with a spider or large slotted metal spoon, until golden brown all over, about 4 minutes. Transfer the chips to the prepared mixing bowl. Fry the remaining potatoes in 3 more batches, making sure to return the oil to 300 degrees F between batches. When all of the chips are in the bowl, remove the paper towels.
- Put the seasoning mix in a sieve and dust it over the chips, gently tossing them so that they coat evenly. Cool completely and eat immediately or keep in an airtight bag or container up to 1 day.
POTATO CHIP-CRUSTED CHICKEN STRIPS WITH HONEY MUSTARD DIPPING SAUCE
Steps:
- For the chicken: Preheat the oven to 450 degrees F. Line a baking sheet with parchment.
- In a bowl or baking dish, add the flour, garlic powder, onion powder, paprika, ground mustard and 2 teaspoons each salt and pepper and stir to combine. Beat the eggs in a separate baking dish. Finely crush the potato chips in their bag or in a separate resealable bag. Pour into a bowl or baking dish.
- Sprinkle the chicken with 2 teaspoons salt. Dip the chicken in the seasoned flour and coat completely, then into the egg mixture until completely coated. Finally, dip the chicken into the potato chips, making sure the chips stick to the whole surface. Transfer the chicken to the prepared baking sheet.
- Bake, flipping halfway through, until the chicken is golden brown and reaches an internal temperature of 165 degrees F, about 20 minutes.
- For the honey mustard sauce: While the chicken is baking, mix together the honey, mayonnaise, Dijon, yellow mustard, whole-grain mustard and garlic powder in a small bowl. Season with salt as desired. Serve with the chicken.

- In a large ziploc bag, add the flour, salt, pepper, garlic powder, onion powder, and stir to combine.
- In a wide dish, beat the eggs
- In a separate ziploc bag, crush your favorite type of potato chip.
- Preheat oven to 425°F (220°C).
- To bread the chicken, first place the chicken slices in the bag of seasoned flour and shake until completely coated, then pour the chicken into the egg mixture and stir with a slotted spoon until completely coated.
- Place the egg-coated chicken and place into the bag of crushed chips and shake until they are completely coated.
- Pour the potato chip-coated chicken onto a parchment paper-lined sheet tray.
- Bake for 25 minutes, or until the chicken reaches an internal temperature of 165°F (74°C) and is golden brown.

- Open top of chip bag, secure it and crush chips using palm of hand or wooden mallet.
- Place mixture in bowl.
- Add chopped thyme, oregano and rosemary to potato chips.
- Beat four eggs in a bowl.
- Place 1/2 Cup of flour in a tray.
- Dip chicken breasts in flour.
- Dust with 1/2 Cup flour per breast.
- Pat off extra flour with hand.
- Dip chicken breasts in egg mixture.
- Coat chicken breasts in crushed BBQ chips (coat generously).
- Put 1/2 Cup olive oil in skillet (using a cast iron skillet or other skillet that you can put into the oven works best. If you don't have one, improvise) Saute on medium heat for 8 minutes on each side or until golden.
- Put skillet in oven and bake at 250° for 8 minutes (4 minutes on each side).
- Mix together the mustards.
- Remove the chicken from the oven and garnish the tops with extra crushed chips, mustard and fresh thyme.

- Preheat oven to 325 degrees F (165 degrees C).
- Arrange chicken breasts, potatoes, and onion in a large baking dish.
