The signature blend of tangy and spicy in salsa makes it a versatile flavor enhancer in all kinds of dishes. We blended it into an easy grilling sauce to brush onto grilled meats and vegetables.

1 cup salsa
2 tablespoons extra-virgin olive oil
1/4 cup honey
1/4 cup tequila
Grilled meat

Steps:

  • Blend salsa with olive oil, honey, and tequila in a food processor. Transfer mixture to a small pot; bring to a boil. Cook until reduced to 1 cup, about 10 minutes. Brush onto grilled meat. To store, let cool and refrigerate.

Grilled Tomatillo Salsa image

Fire up the grill for a salsa packed with tomatillo, onion and cilantro and a shot of chipotle chile.

8 ounces tomatillos, husked and well washed (about 3 large tomatillos)
1/2 medium yellow onion, cut lengthwise into 3 wedges
1 large clove garlic, unpeeled
1/4 cup fresh cilantro leaves
1 chipotle chile in adobo sauce
Kosher salt

Steps:

  • Prepare a grill over medium heat.
  • Put the tomatillos, onion and garlic on the grill (put the garlic on a metal skewer or small piece of aluminum foil to keep it from slipping through the grates.) Grill the vegetables, removing them as they are ready, until the tomatillos, turning as needed, are soft but not bursting, the onion is tender and the garlic skin is charred, 5 to 15 minutes. Cool slightly.
  • Peel the garlic and put in a blender with the tomatillos, onion, cilantro, chipotle chile and 1/2 teaspoon salt. Blend until well incorporated but slightly chunky.

This salsa is so easy to throw together on days when you already have the smoker going. Tweak it to your preferred heat level by leaving some or all of the jalapeno seeds in for a spicier salsa! The longer you let the salsa sit, the better it becomes. I like to use hickory wood, but fruit woods also work great.

4 large Roma tomatoes, halved lengthwise
1 small red onion, quartered
1 jalapeno pepper, halved and seeded
4 cloves garlic, peeled
⅓ cup chopped cilantro
1 lime, juiced
1 pinch salt to taste

Steps:

  • Preheat the smoker to 225 degrees F (110 degrees C). Add wood chips according to manufacturer's directions.
  • Place tomatoes, onion, jalapeno pepper, and garlic inside a disposable foil pan and place on the smoker rack. Smoke vegetables for 90 minutes.
  • Transfer vegetables into the bowl of a food processor or blender. Add cilantro, lime juice, and salt. Pulse several times until vegetables are finely chopped; do not over-process. Serve at room temperature or refrigerate to let flavors meld.

1 medium onion
2 jalapenos
1 yellow bell pepper
3 tablespoons barbecue sauce
1 teaspoon kosher salt

Steps:

  • Use an extremely sharp knife and slice the onion into matchstick sized strips; and the yellow pepper, and jalapeños into rice sized pieces. You may remove the seeds and ribs of the jalapeños if you prefer a milder taste.

3 tablespoons olive oil
3 tablespoons red wine vinegar
5 garlic cloves, minced
1 teaspoon salt
1/2 teaspoon sugar
1/2 teaspoon pepper

Steps:

  • Grill the tomatoes, corn, peppers and onion, covered, over medium heat for 10-12 minutes or until tender, turning occasionally. Allow vegetables to cool slightly. Remove corn from cobs; transfer to a large bowl. Chop the remaining vegetables and add to corn., In a small bowl, whisk the cilantro, oil, vinegar, garlic, salt, sugar and pepper. Pour over vegetables; toss to coat. Serve warm or cold.
