GRILLED TURKEY BREAST
Learn to grill a turkey breast to be tasty and moist with a brown sugar rub. Turkey is not just for holidays anymore but a summer grilling treat.

- If your turkey breast is not injected or previously brined, brining is an excellent idea. Start with a brine: 2 qt. of water and add 1/4 cup each of salt and brown sugar. Crush 2-3 cloves of garlic and add 2-3 bay leaves are optional.
- Trim and clean a 3 1/2 to 5-pound turkey breast. Add the turkey to the brine and refrigerate for 3-6 hours.
- Preheat grill to a grill surface temperature of 350° to 400°. Mix a rub of 2 tablespoons brown sugar, 1 teaspoon chili powder, 1/2 teaspoon each oregano, and cumin. Add 1 teaspoon kosher salt if you did not brine and if you are sure the breast was not injected.
- Rinse the breast carefully, pat dry then brush with a little oil. Apply the rub.
- Grill skin-side down for about 5-8 minutes to get some browning of the skin then flip and turn off the direct heat on that side of the grill with the meat. Place the thick side of the breast towards the heat. Keep the temp of the grill 350° to 375° in the area between the direct and indirect sides. Keep the lid closed and your hands off as much as possible.
- Cook until an internal temp of 165° in the thickest part and several other locations. This will vary by the weight and thickness of the turkey breast and your grill. Generally about 1 3/4 to 2 hours). DO NOT COOK BY TIME ALONE. Remove from heat and let rest for 10 minutes before serving.

BBQ TURKEY BREAST WITH A BROWN SUGAR RUB AND BBQ SAUCE
This BBQ Turkey Breast with a Brown Sugar Rub and BBQ Sauce is a perfect summer dish! Easy, healthy and so delicious!

- In a small bowl, combine the salt, brown sugar, chili powder and fresh ground pepper.
- Separate the fillet from the turkey breast. It should remove easily. We do this for ease of BBQ'ing.
- Generously rub the tops of both the turkey breast and the fillet with the rub. (as show in the photo above)
- Preheat your barbecue to high, then, turn down the heat to low/medium.
- Add your turkey and roast over the low/medium heat for approximately 20 minutes, (10 minutes on each side), or until the internal temperature measures 165 degrees. Note: The fillet will take less time to roast because it is smaller. It will likely be done in half the time. Just check it by temperature for doneness.
- In the last few minutes, coat the top of the turkey with your favourite BBQ sauce. We like ours to be smothered!
- When the turkey is done, remove from heat and let rest under tin foil for a couple of minutes.
- When it is time to serve the turkey, cut the turkey into 3/4 inch slices, cut against the grain.
- Serve with cobs of corn, bread and a green vegetable!

GRILLED TURKEY WITH PRAIRIE RUB

- Pat the turkey very dry, inside and out. Sprinkle the breast cavity with salt and pepper. Put the bay leaves, garlic and onion inside the cavity. Mix the brown sugar, Italian seasoning, garlic, mustard, paprika, ginger, orange peel, pumpkin pie spice, cayenne, 2 teaspoons salt and 1 teaspoon pepper in a small bowl. Pulse the rub in a spice grinder in a few batches until finely ground. Spread the Prairie Rub over the entire turkey.
- Prepare an outdoor charcoal grill over a medium-high heat for both direct and indirect grilling. Position a drip pan under the grate on indirect side of the grill.
- Put the turkey breast-side up over the drip pan. Toss 1 cup of the wood chips onto the coals. Cover the grill and rotate the lid so that the vent holes are directly over the meat. To maintain a medium-low smoky fire, add about a dozen pieces of charcoal and another cup of wood chips to the fire whenever the fire dies down. Rotate turkey about every 45 minutes to prevent the side near the coals from overcooking. Cook until an instant-read thermometer inserted in the thigh registers 165 degrees F, 2 hours 30 minutes to 3 hours. Transfer to a cutting board and let rest 10 minutes. Remove the bay leaves, garlic and onion before carving.
BROWN SUGAR BBQ RUB
This is my favorite rub to use when I smoke meats. I threw it together to use on smoked pork butt, but it also works really well on chicken and ribs. Apply liberally to meat and let sit overnight for best flavor. The brown sugar helps make a nice bark. Makes enough to cover two 8-pound pork butts or 6 racks of ribs.

This is a great BBQ Turkey recipe. We almost never have any leftovers. This recipe can be used with almost any size bird.

- Preheat a gas grill for low heat.
- Rub some of the butter all over the turkey, inside and out, then rub all over with chicken base. Cut remaining butter into cubes and toss with onions, apples, and garlic in a large bowl. Stuff the bird with this mixture and place in a disposable aluminum roasting pan. Fold the turkey skin around the neck area to cover the hole and then turn the turkey over and pour wine into the opening at the other end until the turkey is full or the bottle is empty. Set the turkey breast side up.
- Place the roasting pan on the grill and cover loosely with aluminum foil. If you have a pop up timer or heat safe meat thermometer, insert it into the turkey breast. Close the lid.
- Roast until the temperature in the breast reads 170 degrees F (75 degrees C) and the temperature in the thickest part of the thigh reads 180 degrees C (80 degrees C), about 4 hours depending on the temperature of your grill. When the temperature is getting close, remove the aluminum foil covering the turkey and allow it to brown during the final minutes of cooking. If it starts to brown too much, just cover it back up. Allow the turkey to rest for at least 20 minutes before carving.

MARINATED TURKEY BREAST
This recipe came from my mother. These always turn out juicy and tender no matter how long my husband leaves them on the grill! Easy to prepare, but it's always best when marinated for at least 4 hours.

- In a small bowl, mix together the garlic, basil, and pepper. Rub over the turkey breasts. Insert one clove into each end of the turkey breasts, and one in the center.
- In a large shallow dish, blend vegetable oil, soy sauce, lemon juice, and brown sugar. Place the breasts in the dish, and turn to coat. Cover, and marinate in the refrigerator at least 4 hours.
- Preheat grill for high heat.
- Lightly oil the grill grate. Discard marinade, place turkey breasts on the grill. Close the lid, and grill turkey breasts about 15 minutes on each side, or to an internal temperature of 170 degrees F (68 degrees C).

- Thaw turkey, if frozen. Preheat oven to 400 degrees F. Coat a large shallow roasting pan and rack with cooking spray. In small bowl combine brown sugar, paprika, garlic powder, salt, cumin, chili powder, and pepper. Place turkey breast halves, bone side down, on roasting rack in prepared pan. Set aside.
- Starting at breast bone, slip fingers between skin and meat to loosen skin, leaving skin attached at top. Lift skin and spread spice mixture evenly under skin over breast meat. Insert oven-going meat thermometer into thickest part of breast, without touching bone.
- Roast, uncovered, on lower rack of oven for 20 minutes. Reduce oven temperature to 350 degrees F. Roast 1 to 1-1/2 hours longer or until thermometer registers 170 degrees F., juices run clear, and turkey is no longer pink, occasionally spooning pan juices over turkey. Let stand, covered with foil, for 10 minutes before slicing. Place breast halves on platter. Serve with Cranberry Barbecue Sauce. Makes 10 to 12 servings.
