FISHERMAN'S GRILLED TROUT
Steps:
- Heat grill to medium-high heat.
- Rinse fillets and pat dry. Slice onion into 1/8-inch rings, and set aside. Slice lemon into 1/8-inch rings, remove seeds and set aside.
- Rub 1 clove of crushed garlic over the fillet. Place fillet in the center of the aluminum foil. Top with 1 pat of butter, 2 to 3 onion rings, then season with salt and pepper, to taste. Cover fish with 1 or 2 lemon rings. Fold aluminum foil around fish to create a sealed package. Repeat for each fillet.
- Place packets on hot grill for 5 minutes or until cooked through, careful not to overcook the fillets. Remove fish from foil, plate and serve immediately.
WHOLE GRILLED TROUT
Steps:
- Preheat an outdoor grill for high heat and lightly oil the grate.
- Rub each trout generously with olive oil and sprinkle with sea salt; sprinkle inside of cavities with salt and black pepper. Place half the lemon and onion slices into cavity of each trout, along with minced garlic, and place a sprig of rosemary and thyme into cavities.
- Turn preheated grill down to low and place the trout directly onto the grill; cook until flesh flakes easily and the skins are browned, 6 to 7 minutes per side, flipping once.

BARBECUED TROUT
This delicious recipe came from a friend her in Mountain Home. The sauce really gives the fish a wonderful flavor. Even those who aren't that fond of fish will like it prepared this way. - Combine the soy sauce, ketchup, lemon juice, oil and rosemary; pour two-thirds of marinade into a large resealable plastic bag; add fish. Seal bag and turn to coat; refrigerate bag for 1 hour, turning once. Cover and refrigerate remaining marinade for basting. , Drain and discard marinade. Place fish in a single layer in a well-greased hinged wire grill basket. Grill, covered, over medium heat for 8-10 minutes or until fish is browned on the bottom. Turn and baste with reserved marinade; grill 5-7 minutes longer or until fish flakes easily with a fork. Serve with lemon if desired.

BLAZINGLY SIMPLE BUT TRUE TROUT
Steps:
- Preheat grill.
- Place fillet, skin side down, in the center of an aluminum foil rectangle. Sprinkle dill over top, lightly squeeze some lemon over, and place a slice of lemon on trout. Fold foil over trout, leaving no air gaps, and fold edges to prevent leaking. Put foil pack on grill and cook for 7 to 10 minutes, or until fish is cooked to your liking. Flip twice during cooking.
HERBED TROUT WITH LEMON BUTTER
I'm far to lazy to bone trout! I just stuff them with the onion mix and brush well with the lemon butter. It works for me.

Steps:
- Thaw fish, if frozen. Rinse fish; pat dry with paper towels.
- On a cutting board, spread each fish open, skin side down.
- In a small bowl stir together melted butter and lemon juice. Set half of the butter mixture aside. Brush remaining half of the butter mixture over fish.
- In a small bowl stir together onion, rosemary, lemon peel, salt, and pepper. Sprinkle onion mixture over fish.
- Fold fish closed. Place fish on a greased 15x10x1-inch baking pan.
- Bake in a 450 degree F oven for 15 minutes or until fish begins to flake when tested with a fork.
- If desired, sprinkle fish with parsley. Serve fish with lemon wedges and reserved butter mixture.
TROUT IN ALMONDS SAUCE - CROATIAN WAY
This is northern Croatian recipe. In Mediterranean part they put garlic on trout (they put garlic on everything) but garlic as a very strong spice damages the delicate trout taste. Almond sauce is my invention, but as you can see, there is not much to invent. This gentle flavour combines very nicely.

- In order to prevent trout's to be slimy, after you clean them, cover them with salt and leave them for 1 hour or to become white. (Salt extracts liquid).
- Wipe trout's with paper towel and cover them with corn flour.
- Fry trout's on butter (add some oil to prevent butter burn).
- When they are done on one side (if you have space in a pot) add cleaned almonds (white), or you can remove all trout's aside to hot place and than fry almonds until get brow.
- Add brandy, flambé it and add cream and mix well.
- Pour the sauce over trout's.
- Serve with cooked potato.

GRILLED TROUT WITH OREGANO
Fresh herbs are a healthy way to season fish and other lean proteins. Here, pungent oregano and bright lemon juice balance the richness of the trout. The whole trout are grilled in this recipe, but you can use the broiler instead; lightly coat the broiler pan or a rimmed baking sheet with oil before heating, and cook the fish for the same amount of time.

- Heat a grill to medium-high (if using a charcoal grill, coals are ready when you can hold your hand 5 inches above grate for just 4 to 5 seconds); brush grates with oil. Sprinkle exterior and cavity of each fish with 1/4 teaspoon salt, and season with pepper. Tuck 2 lemon rounds and a few oregano sprigs in cavity of each fish.
- Rub each fish with 1/2 teaspoon oil, and place on grill. Cook until golden and firm, about 4 minutes per side. Transfer to a serving platter; drizzle each fish with 1 teaspoon oil. Garnish with lemon wedges and remaining oregano, and serve.

TROUT WITH LIME & THYME
This is a delicious and easy preparation for trout; simply marinate for a bit in lime, thyme and garlic and grill, broil or saute as you normally would. It's refreshing and different. Prep time includes marinating.

- Allow to marinate in the refrigerator at least 2 hours.
