There's nothing like tender baked chicken. After a dip in barbecue sauce and coating mixture, even the chicken is happy.

1 bag (16 oz.) coleslaw blend (cabbage slaw mix)
3/4 cup KRAFT Lite Zesty Italian Dressing
1/2 cup KRAFT Original Barbecue Sauce
1 pkt. SHAKE 'N BAKE Extra Crispy Seasoned Coating Mix
8 small boneless skinless chicken breasts (about 2 lb.)
6 cups hot steamed corn

Steps:

Preheat oven to 400°F. Toss coleslaw blend and dressing; cover. Refrigerate until ready to serve.
Place barbecue sauce and coating mix in separate pie plates or shallow dishes. Dip chicken in barbecue sauce, then in coating mixture, turning over to evenly coat both sides of each chicken piece. Place in single layer in aluminum foil-lined 15x10x1-inch baking pan. Discard any remaining coating mixture.
Bake 20 min. or until chicken is cooked through (170°F). Serve with the coleslaw and corn.

Ingredients

8 chicken thighs (skin removed or cut of your choice)
2 large lemons, juice of
1/2 lemon, rind of, of
1 tablespoon fresh rosemary leaf
1 teaspoon crushed garlic
1/2 teaspoon salt
1/4 teaspoon pepper
1 tablespoon olive oil
2 large lemons (cut in halves)

Steps:

Special Equipment: I use a mortar& pestle, however a heavy bowl and the end of a rolling pin does the trick too.
Mix marinade ingredients using mortar and pestle and give a bit of a thump or 3 to bruise rosemary& lemon rind.
Place chicken and marinade in a ziplock bag (removing any air pockets) massage and refrigerate overnight.
Preheat BBQ to Medium to Medium-High.
BBQ chicken for approximately 25 minutes (or until done)- turning regularly.
Squeeze a lemon half over chicken with each turn.
Serve with salad.
Enjoy!
