Here's what you need: large flour tortilla, refried beans, jalapeño, shredded cheese blend, salsa

Steps:
- Using a butter knife, spread the refried beans in an even layer onto the tortilla.
- Add the jalapeño slices and shredded cheese to the top half of the tortilla.
- Fold the tortilla in half from the bottom, then fold in the sides, being careful not to tear the tortilla.
- Toast on medium-high, until golden brown. Watch to make sure it doesn't burn. Let cool for 1-2 minutes before removing from the toaster.
- Serve with salsa, if desired.
- Enjoy!

This is a kid pleaser recipe, especially served with ranch dressing for dipping. We often eat these for lunch along with chips and salsa. For a lower fat version, just microwave them instead of frying. They just lack the buttery crispy edges, but my kids still like them.

- 1. Place beans, tomatoes & seasoning in food processor and process until well incorporated. (It doesn't need to be perfectly smooth)
- 2. Spoon about 1/4 cup of mixture onto one tortilla.
- 3. Cook quesadilla on a griddle until golden on each side. If desired you can spread each side with butter before cooking.

BEAN AND CHEESE TAMALES

- Put the oil into a small skillet over medium heat. Add the onions and cook until softened, about 5 minutes. Add the garlic and cook for another 30 seconds. Remove half and reserve it for the tamale dough.
- To the pan with the remaining onions add the beans, hot sauce, chili powder and season with salt and pepper, to taste. Stir to combine and cook until heated through, about 5 minutes. Set aside to cool slightly. (Reserve 1 cup for the Round 2 Recipe, Bean and Cheese Chalupas.)
- In a large bowl combine the cornmeal, 1 teaspoon of salt and the baking powder. Cut the butter into the cornmeal using a fork or a pastry blender. Add the broth, a little at a time, until the dough comes together. Mix in the reserved cooked onions and garlic
- Cut parchment paper into 8 (8 by 8-inch) squares. Spread 1/3 cup of the tamale dough onto the center of the paper and lightly press it into a circle. Put a heaping tablespoon of the beans on top with a tablespoon of cheese. Bring the 2 corners of the paper at the ends of the rectangle up to encase the beans and cheese with the tamale dough. Fold the corners together a couple of times. Fold the other sides over to cover the seam and turn right side up. Continue this process with the remaining dough and filling.
- Put a steamer basket into a large pot and add enough water to come just below the basket. Cover the pot and put it over medium-low heat to bring the water to a simmer. Put the tamales in the steamer basket. Cover and steam the tamales until the dough is cooked through, about 1 hour, Check after 30 minutes, you may need to add more water to the pot. Remove the tamales from paper wrapping and serve warm.
REFRIED BEAN AND CHEESE QUESADILLAS

- In a small pot, warm the refried beans, over medium-low heat.
- It is best to build the quesadilla in the pan in which it is going to be cooked in. That way there is less chance of everything falling apart before you get it to the pan. Set a cast iron frying pan, over medium heat. Add 1 tablespoon of butter; melt and spread around the pan.**
- Lay a tortilla on a plate or flat surface. Spoon some of the warmed refried beans onto it and smooth out all over the tortilla as you were icing a cake. Leave about ½-inch of space around the outer edge and place it in the preheated pan.
- Quickly, add the cheese and optional peppers.
- Top with another bean-covered tortilla. This time turn the beans downward so that it sandwiches the other ingredients underneath.
- Let the quesadilla cook for about 1 to 1 ½ minutes before flipping***.
- Flip and allow the other side to crisp for 1 to 1 ½ minutes.
- Carefully slide onto a plate. We always use a pizza cutter to slice it up as you would a pizza. Garnish with any toppings you choose.

- Preheat the oven to 350 degrees F.
- Put the drained beans and chicken broth in a large bowl.
- In a saute pan, heat the olive oil over medium-high heat. Add the onion, tomato, chile, and garlic. Saute until the onion is soft, about 5 minutes. Rub the oregano, between palms of your hands and sprinkle over the beans. Add salt and pepper, to taste. Add the beans and broth to the pan and simmer for 10 minutes. Cool the beans for about 5 minutes before putting them in the blender. Carefully, pour the mixture into a blender and puree. Return the pureed mixture to the pan and gently reheat over medium-low heat, stirring frequently.
- Using tongs, pass the tortillas 1 by 1 through the refried bean sauce until they are somewhat softened and coated on both sides with the sauce. Set aside on a plate. Fill each tortilla with 1/4 cup of shredded cheese. Fold in half and arrange them, overlapping, in a 9 by 13-inch baking dish. Top with an additional 1 to 1 1/2 cups of the bean sauce, just enough to cover the beans but allow the edges of the folded tortillas to show. Bake until cheese is melted about 10 to 15 minutes.
- To serve, drizzle with Mexican sour cream lengthwise in a 2-inch thick strip down the center of the dish. Top with 8 overlapping red onion rings.
BLACK BEAN, CHEESE, AND TORTILLA CASSEROLE RECIPE

- Gather the ingredients.
- Preheat the oven to 400 F. Oil a 9- or 10-inch casserole dish and set aside.
- Warm the olive oil in a chef's pan or large, deep skillet set over medium-high heat.
- Add the onion and sauté until soft and translucent, about 5 to 8 minutes.
- Add the garlic, scallions, and cumin, and sauté about a minute more, or until fragrant.
- Stir in the black beans, tomato sauce, and salsa, lower the heat, and simmer, stirring frequently, for about 5 minutes. Remove from the heat.

- Top the casserole with the rest of the tortillas.
- Sprinkle evenly with the rest of the cheese, drizzle with a little olive oil, and bake, covered, for 20 minutes.
- Remove the foil and bake for 10 to 15 minutes more, or until golden and bubbly.
- Remove from the oven and allow the casserole to rest for 5 minutes before serving.
- Top as desired with guacamole , salsa, sour cream, and hot sauce.
- Serve and enjoy.

- Heat the oil in a heavy-based frying pan over a medium heat and fry the onion for 8-10 mins until softened and slightly caramelised. Add the garlic and spices, the chipotle chilli paste or chilli flakes, if using, and some seasoning. Fry for a few minutes more until the mixture is fragrant.
- Add the tomatoes, then swirl out the pan using 100ml water and add this too. Simmer for 10-15 mins until the mixture has thickened. Blitz the sauce using a hand blender, then taste for seasoning.
