Bean and Bacon Soup with Cheese Toasts image

Crispy cheddar-cheese toasts are perfect for dunking in a hearty bowl of bean, bacon, and vegetable soup.

Number Of Ingredients 11

1/2 pound (about 10 slices) bacon, cut into 1/2-inch pieces
1 small onion, finely diced
2 medium carrots, peeled and cut into 1/4-inch pieces
2 celery stalks, cut into 1/4-inch pieces
3 cups chicken or vegetable stock
2 cans (15 1/2 ounces each) white beans, drained and rinsed
3/4 teaspoon dried sage
1/2 teaspoon salt
1 pinch of ground pepper
4 slices sandwich bread
3/4 cup grated cheddar cheese

Steps:

  • In a medium saucepan set over medium-high heat, cook the bacon pieces, stirring frequently, until brown and just crisp, about 5 minutes. Remove from heat. Using a slotted spoon, transfer bacon to a paper-towel-lined plate; set aside.
  • Pour all but about 1 tablespoon of bacon fat from the pan. Return the pan to the heat; add the onion, carrots, and celery. Cook, stirring occasionally, until the vegetables begin to soften, about 3 minutes. Add the stock and 2 cups water, and bring to a boil. Reduce heat to medium, and simmer until the vegetables are tender, about 15 minutes. Add the beans, sage, salt and pepper, and half of the reserved bacon. Simmer for a few more minutes while preparing the cheese toasts.
  • Meanwhile, heat the broiler; place bread on a baking sheet. Sprinkle bread with cheese; broil until cheese is melted and bread is just golden, about 2 minutes. Cut into triangles.
  • Garnish soup with remaining bacon, and serve with cheese toasts on the side.

3 lbs ripe tomatoes, peeled, quartered and seeded
2 cloves garlic, crushed
2 tablespoons butter
1 leek, chopped
1 carrot, chopped
4 cups low-sodium chicken broth
4 ounces blue cheese, crumbled
3 tablespoons whipping cream
2 parsley sprigs
salt
pepper
6 ounces bacon, cooked, crumbled

Steps:

  • Preheat oven to 400 degrees Fahrenheit.
  • Spread the tomatoes out in an oven-proof dish. Sprinkle with the garlic and some salt and pepper. Place in oven and bake for 35 minutes.
  • Heat the butter in a large pan. Add the leek and carrot and season with salt and pepper. Cook over low heat, stirring frequently, for about 10 minutes, until softened.
  • Stir in the broth and baked tomatoes. Bring to a boil, lower heat, cover and simmer for 20 minutes.
  • Add the blue cheese, cream and parsley. Remove from heat and let cool slightly, then transfer to a blender and process until smooth, working in batches if necessary. Taste and adjust seasoning.
  • Ladel into warmed bowls and sprinkle with crumbled bacon.

500 g smoked streaky bacon, rind, removed, and, diced
1 large onion, diced
2 cloves garlic, crushed
2 tablespoons butter
1 (880 g) can cooked peeled tomatoes
1 liter chicken stock (cubes or powdered are ok)
3 sprigs fresh herbs (a mix of lemon thyme and marjoram and parsley are my choices)
1 (880 g) can 3 bean mix, rinsed and drained
Tabasco sauce
fresh ground pepper
chopped parsley
shaved parmesan cheese or shredded parmesan cheese, to serve

Steps:

  • Cook the onion and bacon until the onion is softened.
  • Add the garlic and cook for another couple of minutes.
  • Add the tomatoes and break them up in the pan.
  • Add the chicken stock and herbs and simmer for about 20 minutes.
  • Remove the herb sprigs, add the beans and cook for about 5 more minutes to heat through.
  • Add the Tabasco and pepper to taste.
  • Sprinkle liberally with chopped parsley.
  • Serve with shaved parmesan and crusty bread.

2 cups Puttanesca Sauce, recipe follows
1 (11-ounce) can evaporated lowfat milk
1/4 cup chopped fresh basil leaves
4 teaspoons mayonnaise
4 slices whole-wheat bread
1 cup baby spinach leaves
8 slices turkey bacon, cooked until crisp (in the microwave or skillet)
8 ounces shredded sharp Cheddar
2 teaspoons olive or vegetable oil
1 medium onion, chopped
2 tablespoons minced garlic
2 (28-ounce) cans crushed tomatoes
1 cup pitted Greek (kalamata) olives, halved
3 tablespoons drained capers
2 teaspoons anchovy paste
1/2 teaspoon salt
1/2 teaspoon crushed red pepper flakes
1/2 cup red wine, optional

Steps:

  • In a large pot, combine diced tomatoes, Puttanesca Sauce and evaporated milk. Bring mixture to a simmer. Simmer 10 minutes. Working in batches, puree soup in a blender. Return to pot and stir in basil.
  • Preheat broiler.
  • Spread 1 teaspoon mayonnaise on each bread slice. Top with 1/4 cup spinach leaves, 2 bacon slices and 2 ounces shredded cheese. Place bread slices on a baking sheet and place under broiler. Cook 1 to 2 minutes, until cheese melts. Serve soup with Bacon Cheese Melts.
  • Heat oil in a large saucepan over medium heat. Add onion and garlic and saute 2 minutes. Add tomatoes, olives, capers, anchovy paste, salt, and red pepper flakes and stir to combine. Add the wine and bring mixture to a boil. Reduce heat and simmer 15 minutes.

5 ounces pancetta, finely diced
4 cloves garlic, finely chopped or grated
2 to 3 small stalks celery, finely diced
2 medium carrots, finely diced
1 large fresh bay leaf
1 onion, finely diced
Herb bundle of fresh parsley, sage, rosemary and thyme tied with kitchen string
Kosher salt and freshly ground pepper
2 tablespoons tomato paste
1/2 cup dry white wine
6 cups chicken stock
Two 15-ounce cans cannellini beans
1 small bunch Tuscan kale, stems and ribs removed and leaves finely shredded or chopped
Freshly grated nutmeg
1 rind from a wedge of Parmigiano-Reggiano
Shaved Parmigiano-Reggiano, for serving
Crusty bread, for serving

Steps:

  • Heat the EVOO in a Dutch oven or medium soup pot over medium-high heat. Add the pancetta and cook until crisp. Add the garlic, celery, carrots, bay leaf, onions and herb bundle and season with a little salt and more pepper. Cook until soft, 7 to 8 minutes. Add the tomato paste and cook, stirring, for 1 minute. Deglaze with the wine, stirring and scraping up any browned bits from the bottom of the pot with a wooden spoon. Stir for 1 minute more. Add the stock and bring to a low boil.
  • Add a few ladles of the soup to a food processor along with 1 can of beans and puree until smooth. Return the puree to the soup and stir to combine. Add the remaining can of beans and the kale and cook until the kale is wilted. Season with a hint of nutmeg. Add the cheese rind and simmer for 15 minutes at a low bubble to let the flavors combine. Adjust the seasonings.
  • Remove the cheese rind, herb bundle and bay leaf from the soup. Ladle the soup into shallow bowls and top with shaved Parmigiano-Reggiano and a drizzle of EVOO. Serve with bread for mopping.

1 tablespoon extra-virgin olive oil
1 large red onion, chopped
1 garlic clove, chopped
coarse salt and ground pepper
3 large tomatoes (about 2 pounds total), cored and chopped
1 cup low-sodium chicken or vegetable broth
1/4 cup heavy cream
6 slices bacon
2 tablespoons butter, room temperature
8 slices white sandwich bread
1 cup shredded Gruyere cheese

Steps:

  • In a large saucepan, heat oil over medium. Add onion and garlic; season with salt and pepper. Cook, stirring, until onion softens, 4 to 6 minutes. Add tomatoes and increase heat to medium-high. Cook, stirring, until tomatoes begin to break down, 4 to 6 minutes.
  • Add broth and 1 cup water. Simmer until tomatoes are very soft, about 10 minutes. In batches, puree soup in a blender (use caution when blending hot liquids). Return soup to pot and simmer 1 minute; stir in cream and season with salt and pepper. Remove from heat and cover to keep warm.
  • In a large skillet, cook bacon over medium until lightly browned but not crisp, about 5 minutes. Drain on paper towels; discard fat from skillet. Butter 8 slices bread. Place 4 slices, buttered side down, on a work surface. Top with bacon and cheese. Top with remaining bread, buttered side up. In batches, cook sandwiches in skillet over medium-low until cheese melts and bread is golden, about 5 minutes per side. Quarter sandwiches and serve with soup.

1 pound small red potatoes
½ pound fresh green beans, cut into 1-inch pieces
4 slices bacon
¼ cup white wine vinegar
¼ cup olive oil

salt and ground black pepper to taste
4 ounces crumbled blue cheese
4 green onions, thinly sliced

  • Fill a large bowl with iced water. Line a baking sheet with a dish towel.

1/2 teaspoon pepper

Toasted garlic bread, optional

  • Drain and rinse beans. Put them back in the pot and add 4 quarts of water. Add parsley stems, thyme and bay leaves. Continue to cook until the beans begin to melt into the tomato mixture, but are still whole, about 30 more minutes or until it has thickened from the beans.
