This is one of the base recipes featured in Part 2 of our Whole Life Meal Plan. Substituting beans for part of the beef in a traditional burger helps cut saturated fat while still providing quality protein. This beef and bean burger recipe is packed with plenty of flavor and moisture to satisfy your burger cravings!

1 pound grass-fed ground beef
1 - 15 ounce can low-sodium beans, drained
½ cup Panko bread crumbs ((whole grain suggested))
1 medium shallot or ¼ small onion ((~¼ cup diced))
¼ cup chopped fresh herbs
1 large egg
2 small garlic cloves, minced ((or 1 large clove))
¾ teaspoon kosher salt
Dash pepper
½ Tablespoon extra virgin olive oil or cooking spray ((for the baking sheet))
8 whole grain hamburger buns, lightly toasted
¼ cup pesto
¼ cup shredded or crumbled cheese
¼ - 2 teaspoons spices and/or dried herbs
Sliced tomato
Lettuce or leafy greens
Pickled vegetables
Sliced or mashed avocado
Mustard
Ketchup, barbecue sauce, or hot sauce
Greek yogurt ranch dip or aioli
Sliced or shredded cheese

Steps:

  • Preheat oven to 425ºF.*
  • Place beans in a large mixing bowl and lightly mash.
  • Add beef, shallot, herbs, bread crumbs, egg, garlic, salt, pepper, and any optional mix-ins. Mix until just combined.
  • Lightly brush a baking sheet with oil. Create 8 patties with your hands and place on the pan, spaced at least 1" apart.
  • Cook 10-12 minutes or until cooked through to 155ºF. Serve on toasted buns with desired toppings. Enjoy!

2 cans low-sodium beans, drained

2 Tablespoons extra virgin olive oil
2 Tablespoons finely diced onion or shallot
2 large eggs
½ teaspoon kosher salt
Dash pepper
½ Tablespoon extra virgin olive oil ((for the baking sheet))
6 whole grain hamburger buns, lightly toasted
¼ cup pesto ((replace oil and herbs))
¼ cup diced fresh or sun-dried tomatoes
¼ cup shredded or crumbled cheese
2 small garlic cloves, minced ((or 1 large clove))
¼ - 1 teaspoon spices and/or dried herbs
1 teaspoon citrus zest
Sliced tomato
Lettuce or leafy greens
Pickled vegetables
Sliced or mashed avocado
Mustard
Ketchup, barbecue sauce, or hot suace
Greek yogurt ranch dip or aioli
Sliced or shredded cheese

Steps:

  • Preheat oven to 425ºF.
  • Place beans in a large mixing bowl and mash until almost smooth or leave slightly chunky.
  • Add bread crumbs, herbs, extra virgin olive oil, onion, egg, salt, pepper, and any optional mix-ins. Mix until combined.
  • Brush a baking sheet with oil or use pan spray. Create 6 patties with your hands or using the help of a portion scoop and place on the pan, spaced at least 1" apart.
  • Cook 8-10 minutes or until cooked through and slightly brown on the edges. Serve on toasted buns with desired toppings. Enjoy!

Don't mistake this San Antonio favorite for a vegetarian burger: The beanburger is a beef patty with refried beans, Fritos, onions and Cheez Whiz. The original, invented in the 1950s at the now-closed Sills Snack Shack, was likely inspired by refried-bean-and-guacamole-topped California burgers, but Cheez Whiz was swapped in for pricey avocados.

1 tablespoon plus 2 teaspoons vegetable oil
1 cup canned refried beans
1 pound ground beef
Kosher salt and freshly ground pepper
1/2 cup cheese spread (such as Cheez Whiz)
4 hamburger buns
1 cup corn chips (such as Fritos), lightly crushed
1/2 white onion, chopped
1/4 cup sliced pickled jalapenos

Steps:

  • Heat 2 teaspoons vegetable oil in a medium skillet over medium heat. Add the refried beans and cook, stirring, until heated through, about 3 minutes; set aside.
  • Mix the beef with 1 teaspoon each salt and pepper in a large bowl. Form the beef into 4 balls, then press each into a 1/4-inch-thick patty. Heat the remaining 1 tablespoon vegetable oil in a large nonstick skillet over medium-high heat. Add the burgers and cook until browned, about 3 minutes. Flip and cook 2 more minutes for medium to medium well.
  • Remove the burgers from the heat and top with the cheese spread. Spread the warm refried beans on the bottoms of the buns and top with the corn chips. Serve the burgers on the buns and top with onion and pickled jalapenos.

1 (16 ounce) can black beans, drained and rinsed
½ green bell pepper, cut into 2 inch pieces
½ onion, cut into wedges
3 cloves garlic, peeled
1 egg
1 tablespoon chili powder
1 tablespoon cumin
1 teaspoon Thai chili sauce or hot sauce
½ cup bread crumbs

Steps:

  • If grilling, preheat an outdoor grill for high heat, and lightly oil a sheet of aluminum foil. If baking, preheat oven to 375 degrees F (190 degrees C), and lightly oil a baking sheet.
  • In a medium bowl, mash black beans with a fork until thick and pasty.
  • In a food processor, finely chop bell pepper, onion, and garlic. Then stir into mashed beans.
  • In a small bowl, stir together egg, chili powder, cumin, and chili sauce.
  • Stir the egg mixture into the mashed beans. Mix in bread crumbs until the mixture is sticky and holds together. Divide mixture into four patties.
  • If grilling, place patties on foil, and grill about 8 minutes on each side. If baking, place patties on baking sheet, and bake about 10 minutes on each side.

2 (15 ounce) cans black beans, rinsed and drained
1 ½ teaspoons grapeseed oil, or as needed
1 medium shallot, chopped
½ medium green pepper, chopped
4 cloves garlic, minced
3 sprigs fresh basil, chopped
1 ½ teaspoons ground cumin
1 ½ teaspoons ground coriander
1 ½ teaspoons smoked paprika
salt and ground black pepper to taste
2 large eggs, beaten
1 cup bread crumbs

Steps:

  • Mash black beans in a bowl with a potato masher, leaving a few beans whole for texture; set aside.
  • Heat oil in a cast iron skillet over medium heat. Add shallot, bell pepper, and garlic. Cook and stir until vegetables have softened, 3 to 5 minutes. Add to black beans and season with basil, cumin, coriander, paprika, salt, and pepper.
  • Fold beaten eggs into the bean mixture. Sprinkle in bread crumbs, adding a little at a time and fold in. Be careful not to overmix the bean mixture.
  • Reheat the skillet that you cooked the onion mixture in. Scoop out 1 cup bean mixture and shape into a ball. Set the ball into the hot skillet and gently flatten to form a burger.
  • Cook until firm and lightly browned, 5 to 7 minutes per side. Repeat with remaining bean mixture. You might need to add more oil.

To grill: Place patties on greased aluminum foil and grill 8 minutes on each side. Heat temperature is personal preference as all grills differ. Generally, black bean burgers should grill on medium-high heat about 350°F (177°C) – 400°F (204°C).
