Cocoa Syrup image

Homemade cocoa syrup comes together in just 20 minutes for a rich and chocolatey treat best drizzled over ice cream or mixed into chocolate milk. I find most chocolate syrups too sweet. This version ha a nice bitter balance like Bosco did 30 years ago. This recipe first appeared in Season 5 of Good Eats and was updated in Season 1 of Good Eats: Reloaded. Photo by Lynne Calamia

1 1/2 cups water
3 cups sugar
2 tablespoons light corn syrup
1 1/2 cups Dutch-processed cocoa powder
1 tablespoon vanilla extract
1/4 teaspoon kosher salt

Steps:

  • Bring the water, sugar, and corn syrup to a boil over medium heat in a 3-quart saucier. Decrease the heat to low and gradually whisk in the cocoa powder. Continue to whisk until all the cocoa has been incorporated. Cook until slightly thickened, about 5 minutes. Remove from the heat and add the vanilla and salt. Let cool for 15 minutes, then pour into squeeze bottles using a funnel. Store in the refrigerator.
  • To use, place the squeeze bottle in hot water for 10 minutes. Squeeze into cold milk and stir for delicious chocolate milk or serve on your favorite ice cream. And, hey, it's fat free!

Cocoa syrup:
2/3 cup sugar
1/2 cup natural unsweetened cocoa powder (spooned into cup to measure, then leveled)
2/3 cup boiling water
1 teaspoon vanilla extract
Floats:
1 cup chilled heavy whipping cream
1 teaspoon vanilla extract
6 tablespoons Kahlúa or other coffee-flavored liqueur
Chocolate ice cream
3 12-ounce bottles or 2 pints (about) chilled stout
Special equipment
6 iced-teaspoons
6 straws

Steps:

  • For cocoa syrup:
  • Whisk sugar, cocoa powder, and pinch of salt in small saucepan. Pour 2/3 cup boiling water into heat-resistant measuring cup. Whisk just enough boiling water from cup into cocoa mixture in saucepan to form smooth paste (about 3 tablespoons), then whisk in remaining water. Bring to simmer over low heat, stirring constantly. Simmer syrup 1 1/2 minutes, stirring often. Remove from heat; stir in vanilla. Cool to room temperature. DO AHEAD: Can be made 3 weeks ahead. Cover; chill.
  • For floats:
  • Using electric mixer, beat cream and vanilla in medium bowl until peaks form. Cover; chill. Pour 1 tablespoon Kahlúa and 1 tablespoon cocoa syrup into each of six 10-ounce glasses. Place 1 scoop of ice cream in each glass. Add stout, pouring gently down side of tilted glass to prevent too much head from forming. Spoon dollop of whipped cream into each glass. Drizzle with cocoa syrup, place spoon and straw in each, and serve immediately.

1 ½ cups ketchup
1 ½ cups water
¼ cup molasses
1 large onion, chopped
1 tablespoon dry mustard
1 tablespoon salt
6 slices thick cut bacon, cut into 1 inch pieces
1 cup brown sugar

Steps:

  • Drain soaking liquid from beans, and place them in a Slow Cooker.
  • Stir ketchup, water, molasses, onion, mustard, salt, bacon, and brown sugar into the beans until well mixed.
  • Cover, and cook on LOW for 8 to 10 hours, stirring occasionally if possible, though not necessary.

I have an enormous family and all of the men go trail riding several times a year and these beans are one of the things they look forward to. My aunts and I put together their favorite combination several years ago, and have it ready at their camp, and they are some happy cowboys! You can mix different beans to your liking (lima, kidney, etc.), but the boys in our family like this mixture the best.

1 pound bacon
2 pounds ground beef
1 large onion, chopped
1 cup ketchup
⅓ cup brown sugar
1 (55 ounce) can baked beans (such as Bush's®)
2 (15 ounce) cans Great Northern beans
1 (15 ounce) can pinto beans
1 (15 ounce) can pork and beans

Steps:

  • Place bacon in a large skillet and cook over medium-high heat, turning occasionally, until evenly browned and crispy, 10 to 12 minutes. Drain bacon slices on paper towels and crumble when cool enough to handle.
  • At the same time, heat another large skillet over medium-high heat. Cook and stir ground beef in the hot skillet until browned and crumbly, 5 to 7 minutes. Drain and discard grease.
  • Place bacon, ground beef, onion, ketchup, and brown sugar in a slow cooker; mix well. Add baked beans, Great Northern beans, pinto beans, and pork and beans.
  • Cook on Low, stirring often, about 4 hours.

I like keeping this on hand for when recipes call for chocolate syrup. It is much cheaper to make your own. You can serve this sauce over ice cream or use 1 to 2 tbsp in a glass of milk for chocolate milk. I have used different types of flavour extract (mint, orange, rum....) instead of vanilla to change it up every so often.
