1 large egg
1 pound ground beef
1 slice bread, torn in small pieces
1/4 cup onions, finely chopped
2 tablespoons capers, drained
1 tablespoon Dijon-style mustard
1 tablespoon ketchup
1 tablespoon Worcestershire sauce
1/2 teaspoon salt
1/4 teaspoon black pepper
1 cup steak sauce (optional)

Steps:

  • Preheat broiler. Spray broiler pan and rack with non-stick cooking spray. In a medium bowl, beat egg. Add beef, bread, onion, capers, mustard, ketchup, Worcestershire sauce, salt and pepper and mix well. Shape into 3-inch patties. Place on broiler rack. Broil 6 inches from heat source for 10 minutes for medium or until desired doneness. (It is not necessary to turn burgers over during cooking.) Serve with steak sauce.

2 cups all-purpose flour
1 ½ teaspoons curry powder
1 dash salt
¼ cup margarine
¼ cup shortening
⅓ cup water
2 tablespoons margarine
1 pound ground beef
1 small onion, finely diced
1 teaspoon curry powder
1 teaspoon dried thyme
1 teaspoon salt
1 teaspoon pepper
½ cup beef broth
½ cup dry bread crumbs
1 egg, beaten

Steps:

  • Preheat oven to 400 degrees F (200 degrees C). In a large bowl, combine flour, 1 1/2 teaspoons curry powder, and pinch of salt. Cut in 1/4 cup margarine and shortening until mixture resembles coarse crumbs. Stir in water until mixture forms a ball. Shape dough into a log, and cut into 10 equal sections. Roll each section into a six inch circle (approximately 1/8 inch thick). Set aside.
  • Melt margarine in a skillet over medium heat. Saute onion until soft and translucent. Stir in ground beef. Season with 1 teaspoon curry powder, thyme, 1 teaspoon salt, and pepper. Cook until beef is evenly brown, stirring constantly. Stir in beef broth and bread crumbs. Simmer until liquid is absorbed. Remove from heat.
  • Spoon equal amounts of filling into each pastry circle. Fold over and press edges together, making a half circle. Use a fork to press edges, and brush the top of each patty with beaten egg.
  • Bake in preheated oven for 30 minutes, or until golden brown.

1 pound ground beef
1 onion, finely chopped
3 whole scallions, finely chopped
1 clove garlic, minced
2 Scotch bonnet peppers (any color), seeded and minced
1 teaspoon dried thyme or 2 sprigs fresh
1/4 cup vegetable oil
2 teaspoons curry powder
1 teaspoon salt
1/2 teaspoon freshly ground black pepper
1 1/2 to 2 1/2 cups water
1/2 cup breadcrumbs
2 1/2 cups all-purpose flour
1/2 teaspoon salt
1/4 teaspoon baking powder
2 tablespoons curry powder
1/2 cup butter (1 stick)
3/4 cup ice-cold water
1 egg, beaten with 1 teaspoon water

Steps:

  • To make the pastry, combine the flour, salt, baking powder, and curry powder in a large mixing bowl. Cut the butter into small pieces and add to the bowl. Working quickly and using your fingertips, squeeze together the flour mixture and butter and toss it together by scooping under the mixture with both hands. When the mixture resembles a very coarse meal, add the water to the bowl.
  • With floured hands, mix and squeeze the dough just until it forms a ball. Knead it once or twice to combine it fully (the less kneading, the better). Spread the dough into 2 pieces, flattening each into a thick pancake. Wrap in plastic and set them in the refrigerator to chill for at least 15 minutes. (The dough will keep in the refrigerator up to 5 days. Remove it from the refrigerator a few minutes before using it.)
  • For filling, mix together the beef, onion, scallions, garlic, peppers, and thyme in a large bowl. In a large skillet, heat the oil over high heat until it is very hot, and add the beef mixture. Fry until the meat is brown and the moisture is evaporated, about 8 minutes. Add the curry powder, salt, and black pepper, stirring occasionally over high heat, allowing a crust to form on the bottom of the pan.
  • Add the water and stir the mixture, scraping the bottom to incorporate the browned crust. Add the breadcrumbs and stir. The consistency should be like a thick stew. Add more water as needed. Cover, reduce the heat to very low, and cook for 15 minutes. Set it aside to cool.
  • Preheat the oven to 400 degrees. Cut each piece of the dough into 9 pieces. Using a rolling pin on a floured surface, roll out each piece of pastry into a rectangle shape with rounded edges. Spread a large spoonful of the cooled meat mixture over one side of the dough, leaving at least 1/2- to 3/4-inch border on the outside edge. Using your finger, paint water around the border. Fold the other side of the dough over, and roll and crimp the edges. Lightly press a floured fork around the edge of the patty.
  • Place the patty onto a cookie sheet and repeat the procedure with the remaining dough. The patties may be covered in plastic and frozen at this point for later use. Brush each patty with the egg wash and bake for 15 to 20 minutes, or until the patties begin to turn a golden color.

2 1/2 pounds stewing beef, in one-inch cubes
3 tablespoons flour
2 tablespoons butter
2 to 3 tablespoons cooking oil
1/2 cup finely chopped onion
2 cloves garlic, minced
2 cups veal or beef stock
1/2 cup dry vermouth
1/2 teaspoon dried thyme
1/2 teaspoon dried rosemary
Salt and freshly-ground pepper
1/2 pound small fresh mushroooms
3 tablespoons heavy cream
2 tablespoons Dijon mustard
1 1/2 tablespoons capers

Steps:

  • Dry the pieces of beef and dust them lightly with flour. Heat one tablespoon of the butter and one tablespoon oil in a heavy three-quart casserole. Brown the meat over medium-high heat without crowding. Add a little more oil if necessary. Remove the beef from the casserole and lower the heat.
  • Saute the onion in the casserole until tender. Add the garlic and saute another minute. Stir in the stock and vermouth, scraping the bottom of the casserole. Return the beef and any juices it might have released to the casserole. Add the thyme and rosemary. Bring to a simmer, season to taste with salt and pepper and cover. Adjust heat so the stew simmers gently. Simmer for 1 1/2 hours.
  • Heat the remaining tablespoon of butter and 1 tablespoon of oil in a skillet and saute the mushrooms quickly over very high heat until they are lightly browned. Drain them and add them to the casserole. Continue cooking the stew for another 15 minutes or so, until the beef is tender. If you are making this stew in advance, complete it up untll this point, then finish step four just before serving.
  • Combine the cream and mustard. Stir a little of the hot sauce from the stew into this mixture, then add the cream mixture back to the casserole. Add the capers, recheck seasonings, bring the sauce to a simmer once again and then serve.

3 slices bacon
1 cup water
1/4 cup carrot, chopped
1/4 cup celery, chopped
2 tablespoons fresh parsley, chopped
1 medium bay leaf
2 teaspoons butter
1 tablespoon onion, chopped
1/4 cup mushroom, chopped
1/4 cup sour cream
2 tablespoons capers

Steps:

  • Cut steak in serving sized pieces. Cook bacon in a large skillet until crisp; remove, crumble, and set aside. Brown steak in bacon drippings. Add water, carrot, celery, and bay leaf; cover and cook over low heat 1 1/2 hours, or until meat is tender, stirring occasionally.
  • Remove bay leaf and remove beef to a serving platter and keep warm.
  • Meanwhile, in a separate skillet, melt butter over medium low heat. Add onions and mushrooms and saute until tender, about 5 minutes. Add to first skillet and blend with an immersion blender or process in stand up blender.
  • Stir in sour cream and capers; heat through. Pour gravy over steaks; garnish with bacon crumbles and chopped parsley.

2 bacon strips, diced

2 tablespoons chopped green pepper
1 tablespoon chopped onion
1 can (14-1/2 ounces) diced tomatoes, undrained
1 to 2 bay leaves
1 teaspoon sugar
1/2 teaspoon celery salt
1/8 teaspoon salt
1/8 teaspoon pepper
2 tablespoons all-purpose flour
1/2 cup water

Steps:

  • In a large bowl, combine the beef, bacon, onion, salt and pepper. Shape into four oval patties; brown in a skillet over medium heat. Remove patties and keep warm. , Drain, reserving 1 tablespoon drippings. In the same skillet, saute green pepper and onion in drippings until tender. 4-1/2 teaspoons minced fresh thyme or 1-1/2 teaspoons dried thyme, divided
3 tablespoons water
1/2 teaspoon garlic salt
1/2 teaspoon dried oregano
Dash paprika
Dash pepper
1-1/4 pounds lean ground beef
1/4 cup all-purpose flour
1 egg, beaten
1/4 cup seasoned bread crumbs
2 tablespoons butter
1 cup spaghetti sauce, divided
3/4 cup shredded cheddar cheese
2 tablespoons grated Parmesan cheese
4 to 6 hamburger buns, split, optional

Steps:

  • In a large bowl, combine 1-1/2 teaspoons of fresh thyme (or 1/2 teaspoon dried), water, garlic salt, oregano, paprika and pepper. Add beef; mix well. Shape into four to six patties. 2 lbs lean ground beef
1 tablespoon butter
1 tablespoon olive oil
2 green onions, chopped
2 garlic cloves, minced
1/4 lb mushroom, sliced
salt & freshly ground black pepper
2/3 cup dry white wine
2 tablespoons Dijon mustard
2/3 cup heavy cream
2 tomatoes, peeled and chopped
2 tablespoons capers
2 tablespoons parsley, chopped (optional)
salt & freshly ground black pepper

Steps:

  • Shape beef into 6 oval patties. Melt butter in large skillet and add oil. Heat until foaming. Add green onions and saute until softened; stir in garlic and saute for 30 seconds. Add beef patties and cook to desired degree of doneness. Season with salt and pepper. Set beef patties aside to keep warm on a hot platter.
  • In same skillet, saute mushrooms until limp and add to the warm beef patties.
  • To prepare Mustard Cream Sauce, deglaze pan with dry white wine. Reduce volume by half. Add Dijon mustard, heavy cream, tomatoand capers. Heat slowly until hot but do not boil.
  • Pour Mustard Cream Sauce over beef and mushrooms. Sprinkle parsley over top to garnish, if desired.
  • Good served over hot buttered noodles.
