CZECH SOURDOUGH RYE BREAD [ŠUMAVA] IN BREAD MACHINE



Czech Sourdough Rye Bread [Šumava] in Bread Machine image

If you've been to the Czech Republic you've seen this bread at all the stores, bakeries and restaurants. This bread machine recipe comes very close to the taste and texture. You will need to obtain or produce a thick rye-based sourdough starter and be sure to proof it.

Number Of Ingredients 10

1 cup non dairy milk
1 tablespoon salt
1 tablespoon honey
1 cup sourdough starter
1 1/2 cups rye flour
1 cup bread flour
3/4 cup wheat flour
1/2 cup grated half-baked potato
5 tablespoons wheat gluten
2 teaspoons caraway seeds

Steps:

  • Add ingredients according to your bread machine manual and press the dough cycle. The dough will need to rise, up to 24 hours, in the bread machine until doubles in size. You can then bake it, in your bread machine, for one hour.

I love King Arthur Flours sourdough rye recipe, but it is for a bread machine, which I don't like. Mainly because of the shape of the finished loaf, so I mix and knead it in the bread machine, and after the first rise, I shape and bake in the oven.

Number Of Ingredients 12

2 tablespoons oil
1 1/2 teaspoons molasses
1 1/2 tablespoons honey
1 large egg
1/3 cup water
1 cup sourdough starter
2 1/4 cups all-purpose flour, unbleached
3/4 cup rye flour
1 1/2 teaspoons salt or 2 teaspoons kosher salt
2 tablespoons caraway seeds
1 1/2 teaspoons instant yeast
4 teaspoons vital wheat gluten

Steps:

  • Put all ingredients in the bread machine in the order specified by your machine's manufacturer.
  • Set on the dough setting. Let it do it's thing, checking after 10 minutes or so to see if you need to adjust the liquid or flour.
  • Let rise, take out and form as desired.
  • Let rise again, and heat your oven to 350.
  • Slash and bake for 15 minutes, turn and bake another 15 minutes. Test for doneness. I use an instant read thermometer, and shoot for 195-200 degrees.
  • Let cool completely, slice and enjoy!

A nice-flavored light rye loaf with lots of caraway seeds. Sweetened with both brown sugar and molasses. Allow to cool before slicing.

1 ¼ cups lukewarm water (100 degrees F/38 degrees C)
2 tablespoons dry milk powder
1 teaspoon salt
2 tablespoons brown sugar
2 tablespoons molasses
2 tablespoons butter
¾ cup whole wheat flour
1 ¾ cups bread flour
¾ cup rye flour
1 ½ tablespoons caraway seeds
1 ¾ teaspoons active dry yeast

Steps:

  • Put lukewarm water, milk powder, salt, brown sugar, molasses, butter, whole wheat flour, bread flour, rye flour, caraway seeds, and yeast into the pan of a bread machine in the order suggested by the manufacturer. Select the Grain setting and 2-pound loaf size.
