POTATO AND BEEF PIE

Steps:
- Boil potatoes until they are soft when pierced with a fork; Drain and place in a large bowl.
- Beat with a mixer on medium speed while adding milk; Do not overbeat as you want them mashed but still a little lumpy.
- Add garlic powder, salt and pepper to the potatoes (I also add some butter).
- Put half of the potatoes in the bottom of a greased casserole dish.
- Combine meat with onions and evenly distribute on top of potatoes and sprinkle cheese on top of meat.
- Spread the rest of the potatoes on top of the cheese.
- Sprinkle all with bread crumbs to cover and dot with butter pats.
- Bake at 350° for 30 minutes.
CHEESY BEEF AND POTATO PIE
This is a traditional dish with a cheesy twist--the cheese just makes it for me! The cheese has to be mature to get the perfect taste of this dish.

Steps:
- Preheat the oven to 190°C, 375°F.
- Place the mince, onion and carrots in a large nonstick frying pan and dry-fry over a moderate heat for 5 minutes, until browned.
- Stir in the tomatoes, stock and seasoning and bring to the boil.
- Transfer to a 20cm x 23cm ovenproof dish, top with the potato slices, sprinkle with the grated cheese and cook in the preheated oven for 40 minutes, until the top of the pie is golden brown and the potatoes are tender.
- I serve with steamed green veggies.

- 1. Cook and stir meat and onion in a large skillet over medium heat for about 5 minutes. Add steak sauce; bring to a boil.
- 2. Reduce heat and simmer for 5 to 7 minutes. Spoon into a 1-1/2-qt. casserole.
- 3. Mix mashed potatoes and cheese. Spread mashed potato mixture evenly over meat mixture. Sprinkle with paprika.
- 4. Bake in a preheated 350-degree oven for 12 to 15 minutes or until thoroughly heated.

SAVORY BEEF AND CHEDDAR PIE
I'm not sure where this recipe originated from, my mother used to make it all the time for us. The herbs and spices really make this dish and I wouldn't cut out the sour cream it pairs wonderfully with the pie!

Steps:
- Cook ground beef, onion and garlic in a large frying pan over med-high heat for 5-10 min, breaking beef into small pieces until no longer pink and onion is tender.
- Drain grease.
- Add oregano, basil, rosemary, thyme, salt, sugar, pepper, sage and tarragon.
- Mix well, stir in tomato sauce.
- Reduce heat to low, cover and simmer 15 minute.
- Meanwhile, prepare Cheddar Pastry.
- Preheat oven to 425 degrees.
- Sift flour and salt together, stir in cheese.
- Cut in shortening until mixture resembles coarse crumbs.
- Add water, one Tbs at a time, stirring lightly until mixture forms a ball.
- Divide pastry in half.
- Roll one half on floured surface into a 12" circle, place in a 9" pie plate.
- Sprinkle 1/3 of the mozzarella cheese on bottom of pastry.
- Top with 1/3 of the beef mixture.
- Repeat cheese and beef layer twice.
- Roll remaining pastry into a 10" circle, cut steam vents and place on top of the pie.
- Trim pastry edges a 1/2" from the rim and fold pastry under bottom crust, crimp the edges.
- Beat egg with 1 Tbs of water.
- Brush top of pie with egg wash, you will not use it all.
- Bake 15 min @ 425 degrees.
- Reduce oven temp to 350 degrees and continue baking for 20 minute.
- Let pie sit 20 min to set.
- Cut pie into wedges, top with a dollop of sour cream and sprinkle with bell peppers.

- Preheat oven to 425°. Place potatoes and carrots in a large saucepan; add water to cover. Bring to a boil. Reduce heat; cook, covered, 8-10 minutes or until crisp-tender; drain. , In a large skillet, heat butter over medium-high heat. Add onion; cook and stir until tender. Stir in flour and seasonings until blended. Gradually stir in broth and milk. Bring to a boil, stirring constantly; cook and stir 2 minutes or until thickened. Stir in chicken, peas, corn and potato mixture; remove from heat., Unroll a pie crust into each of two 9-in. pie plates; trim even with rims. Add chicken mixture. Unroll remaining crusts; place over filling. Trim, seal and flute edges. Cut slits in tops. , Bake 35-40 minutes or until crust is lightly browned. Let stand 15 minutes before cutting. Freeze option: Cover and freeze unbaked pies. To use, remove from freezer 30 minutes before baking (do not thaw). Preheat oven to 425°. Place pies on baking sheets; cover edges loosely with foil. Bake 30 minutes. Reduce oven setting to 350°; bake 70-80 minutes longer or until crust is golden brown and a thermometer inserted in center reads 165°.
