4 large flour tortillas
1/2 pound provolone cheese, thinly sliced
1 pound good-quality roast beef, shaved very thin
1 cup jarred fire-roasted bell peppers, drained and julienned
2 tablespoons extra-virgin olive oil
Garlic salt
Mild giardiniera relish, for serving

Steps:

  • Heat a large nonstick skillet over medium heat. On one half of a tortilla, layer some provolone, then a layer of beef, then some roasted peppers. Fold in half to cover the lling. Repeat to make 3 more quesadillas. 2. Add 1 tablespoon olive oil to the skillet. Add 2 quesadillas and cook until golden on the outside and gooey in the middle, 4 to 6 minutes per side. Slide out of the pan and sprinkle lightly with garlic salt. Repeat with the remaining 2 quesadillas. Cut into wedges and serve with giardiniera relish.

  • In a large skillet, cook the beef over medium heat until no longer pink; drain. Stir in the beans, chilies, oregano, cumin and salt. Cook over medium-low heat for 3-4 minutes or until heated through. , Brush one side of each tortilla with butter. Spoon 1/2 cup of the meat mixture over half of unbuttered side. Sprinkle with 1/3 cup cheese; fold in half. , Place on a lightly greased baking sheet. Sprinkle with paprika. Bake at 475° for 10 minutes or until crisp and golden brown. Cut into wedges.

3 tablespoons lime juice
1 cup canned black beans, rinsed and drained

8 flour tortillas (10 inches)
1 to 2 tablespoons canola oil

Steps:

  • In a small bowl, combine the salsa, cilantro and lime juice. In another bowl, combine the beans, corn and 1/2 cup salsa mixture. Set remaining salsa mixture aside., Place beef, cheese and bean mixture on half of each tortilla; fold over. Burritoville, a local joint down by Southeast University here, specializes in some of the oddest burritos I've ever tasted. From the BBQ chicken to the Buffalo burrito, I've had them all, but they've got only one type of quesadilla. So I've decided to take one of my favorite burritos from there, the cheeseburger burrito and apply it to quesadilla form. Served with a side of fries and a Coke®, it's what I call my most recent of culinary triumphs. Serve with a side of ketchup, yellow mustard, and sweet relish.

1 teaspoon butter
½ small yellow onion, chopped
2 pounds ground beef
1 tablespoon Worcestershire sauce
1 teaspoon salt

2 cups shredded Colby cheese
4 teaspoons ketchup, or to taste

2 sirloin or rump steaks , weighing about 450g/1lb in total
1 tbsp olive oil , for brushing
200g medium cheddar , grated
8 flour tortillas
1 jalapeño pepper , chopped
1 large tomato , chopped
2 tbsp chopped coriander
salsa , to serve (optional)

Steps:

  • Half-fill a ridged pan or frying pan with water, bring to the boil, then cook the beans for 1 min before draining. Dry the pan.
  • Brush steaks with oil and season. Fry in the pan over a high heat for 2-3 mins on each side, then thinly slice.
