3 lbs. Ground Beef (80/20 Ground Beef recommended)
2 Tbsp. paprika
1 tsp. cumin
1 tsp. Mexican oregano
1 tsp. cinnamon
2 tsp. garlic powder
2 tsp. ancho powder
1 tsp. chili powder
1.5 tsp. kosher salt
½ tsp. ground clove
Scrambled eggs
Tortillas

Steps:

  • Combine all spice ingredients in a bowl.
  • Place a large skillet over a stove or campfire at medium heat.
  • Brown the Ground Beef, breaking into crumbles as it cooks.
  • Add spice mix to skillet and stir through the beef.
  • Cook 10-15 minutes to allow flavors to mingle and beef to cook through.
  • Serve with eggs and tortillas for beef chorizo breakfast tacos!

2 tablespoons extra-virgin olive oil
1 pound ground beef
8 ounces fresh chorizo, casings removed
Kosher salt and freshly ground pepper
1 small onion, chopped
1 clove garlic, minced
2 tablespoons tomato paste
2 tablespoons chili powder
2 teaspoons ground cumin
1 teaspoon ground coriander
1 teaspoon smoked paprika
1 8-ounce can tomato sauce

Steps:

  • Combine the olive oil, ground beef and chorizo in a skillet over medium-high heat. Cook, stirring, until browned, 5 to 6 minutes. Season with salt and pepper.
  • Add the onion and garlic to the skillet and cook, stirring, until softened, about 4 minutes. Clear a space in the pan and add the tomato paste, chili powder, cumin, coriander and paprika; cook, stirring, until incorporated. Add the tomato sauce and 1 cup water; stir everything together and simmer until thickened, 6 to 7 minutes.

1 medium onion, diced
2 teaspoons garlic, minced
2 cups black beans, cooked
1 cup tomatoes, diced
2 teaspoons cumin
2 1/2 cups tomato juice
salt and pepper

Steps:

  • Cook beans a day in advance.
  • Brown the beef and chorizo in a heavy pot. Drain off any excess fat.
  • Add the onion and garlic and cook until just soft.
  • Add the remaining ingredients.
  • Bring to a boil.
  • Reduce the heat and simmer for 45 minutes. Serve warm.
