Cherry Cranberry Relish with Jello image

Cranberry relish with Jello is tangy, sweet, and easy to make with fresh cranberries and cherry Jello. Make this recipe for your holidays!

6 oz Cherry Jello
2 cups boiling water
2 cups cranberries ((fresh or thawed))
1 medium orange (zest and segments)
1 cup sugar
2 stalks celery (chopped)
1/2 cup pecans
1/2 cup walnuts

Steps:

  • Dissolve jello in hot water, right in the pan. I use a glass 8x 8", and stir completely until clear.
  • Pulse the cranberries, orange segments, zest, sugar, celery and nuts several times in a food processor. Keep in mind this can be left chunky, but small. Do not over process until smooth!
  • Pour mixture into liquid jello pan and stir to mix thoroughly.
  • Cover with plastic wrap and refrigerate. After 1 hour stir the jello to mix it up, recover and refrigerate until set. Stir thoroughly to break it up prior to serving.

1 tsp. ground cinnamon
1/4 tsp. ground cloves
1 pkg. (3 oz.) JELL-O Cranberry Flavor Gelatin
1 cup chopped walnuts, toasted
1 Tbsp. orange zest or lemon zest
1 cup finely chopped mixed dried fruit (apricots, raisins, dates)

Steps:

  • Bring juice, cinnamon and cloves to boil in medium saucepan. Add to gelatin mix in large bowl; stir 2 min. until completely dissolved.
  • Refrigerate 1-1/2 hours or until thickened (spoon drawn through leaves a definite impression.)
  • Stir in fruit, nuts and zest. Refrigerate 1 hour or until set.

1 can (8 oz.) crushed pineapple in juice, undrained
1 pkg. (12 oz.) cranberries
1 pkg. (3 oz.) JELL-O Orange Flavor Gelatin
1/2 cup sugar
1/2 cup chopped walnuts

Steps:

  • Drain pineapple, reserving juice. Add enough water to reserved juice to measure 1 cup; pour into medium saucepan. Add cranberries, dry gelatin mix, sugar and pineapple; mix well. Bring to boil, stirring frequently.
  • Reduce heat to medium; cook 3 to 5 min. or until cranberries are softened, stirring occasionally. Remove from heat; stir in nuts. Cool 30 min.
  • Spoon cranberry relish into small bowl. Refrigerate 6 hours or until firm. Stir before serving.

2 cups fresh cranberries
1 (15 ounce) can mandarin oranges, drained and chopped
1 cup pecans
1 (15 ounce) can crushed pineapple, drained
2 (3 ounce) packages cranberry-flavored gelatin mix (such as Jell-O®)
¾ cup white sugar
1 cup boiling water
1 cup cold water

Steps:

  • Place cranberries, mandarin oranges, and pecans into a food processor and pulse several times to chop; process mixture until finely ground, about 30 seconds. Transfer mixture into a large bowl.
  • Mix pineapple, gelatin, sugar, boiling water, and cold water together in a separate bowl until gelatin and sugar have dissolved. Pour gelatin mixture into cranberry mixture and stir. Pour into a gelatin mold and refrigerate 8 hours or overnight before serving.

2 1/2 cups fresh orange juice
1 teaspoon cinnamon
1/4 teaspoon ground cloves
1 (85 g) package cranberry Jell-O gelatin
1 cup finely chopped mixed dried fruit (apricots, raisins ,dried cranberries)
1 cup toasted walnuts, chopped
1 teaspoon orange zest (optional)

Steps:

  • Mix the juice, cinnamon and cloves in a saucepan and bring to a boil-medium-high heat.
  • Have dry jello powder in a bowl and add boiling juice,stir at least 2 minutes until the jello is completely dissolved.
  • Refrigerate apprx 1 1/2 hours or until thickened (when you draw a spoon through it it will leave an impression).
  • Stir in the fruit, nuts.
  • and orange peel (if you are using it).
  • Refrigerate 1 hour.
  • Serve as a condiment or dessert topping.

Got this recipe from a co-worker. It makes an enormous amount of sweet relish with just a touch of tartness from the cranberries. The raspberry jello is the key to even non-cranberry eaters enjoying the dish. Feel free to substitute cranberry Jello if you want a stronger cranberry flavor. I chop my nuts, cranberries, apples and oranges in a food processor. For a chunkier relish, chop the apples, oranges, and nuts by hand. I have thirded everything for a smaller amount using an 8 ounce can of crushed pineapple with good results as well. Can also be made with splenda and sugar free gelatin.

3 (3 ounce) boxes raspberry Jell-O gelatin
3 cups water
2 cups sugar
20 ounces crushed pineapple, undrained
12 ounces cranberries, finely chopped
3 large apples, peeled, cored, and chopped
3 navel oranges, peeled, seeded, and chopped
1 cup pecans, chopped (or walnuts)

Steps:

  • Mix the 3 boxes of gelatin with the 2 cups of sugar.
  • Bring the 3 cups of water to a boil and pour over gelatin and sugar mixture.
  • Whisk until dissolved and set aside.
  • In a very large mixing bowl, mix crushed pineapple, finely chopped cranberries, chopped apples, and chopped oranges.
  • Stir in chopped pecans or walnuts.
  • Pour gelatin over fruit and nut mixture; mix well.
  • Cover and refrigerate for at least 24 hours and up to 2 weeks before serving.

Steps:

  • Dissolve lemon gelatin in boiling water in a bowl; stir in cold water. Chill in refrigerator until partially thickened, 30 to 40 minutes.
  • Chop cranberries in a food processor and mix sugar into cranberries, pulsing once or twice to combine. Let cranberry mixture stand a few minutes to let sugar dissolve.
