Big chunks of beef create a hearty chili slowly simmered for the best mix of flavors.

2 1/2 lb beef stew meat, cut into 1-inch cubes
2 tablespoons Gold Medal™ Wondra® quick-mixing flour
2 tablespoons oil
4 1/2 teaspoons chili powder
2 teaspoons salt
2 teaspoons dried oregano leaves
2 teaspoons ground cumin
2 dried bay leaves
1 1/2 cups Progresso™ beef-flavored broth (from 32-oz carton)
1 can (28 oz) Muir Glen™ organic diced tomatoes, undrained
1 large onion, chopped (1 cup)
1 medium green bell pepper, chopped (1 cup)
3 cloves garlic, finely chopped
3 tablespoons cornmeal
1 can (15 oz) Progresso™ black beans, drained, rinsed
1 can (4.5 oz) Old El Paso™ chopped green chiles
Shredded Monterey Jack cheese
Sour cream
Chopped fresh cilantro
Tortilla chips

Steps:

  • In large resealable food-storage plastic bag, place half of the beef and 1 tablespoon of the flour; seal bag and shake to coat. Repeat with remaining beef and flour. In 4-quart Dutch oven, heat oil over medium-high heat. Cook beef in oil until brown on all sides; drain, if desired.
  • Stir in remaining chili ingredients except cornmeal, beans and chiles. Heat to boiling; reduce heat to low. Cover; simmer 3 hours or until meat is tender.
  • Stir in cornmeal; cook and stir about 1 minute to thicken. Add beans and chiles; cook until thoroughly heated. Remove bay leaves. Serve chili with garnishes.

6 cans (16 ounces each) hot chili beans, undrained
1 can (10 ounces) diced tomatoes and green chilies, undrained
1 can (8 ounces) tomato sauce
1/4 cup chopped onion
2 tablespoons molasses
1 teaspoon salt-free Southwest chipotle seasoning blend
1 teaspoon Worcestershire sauce
1/2 teaspoon salt
1/2 teaspoon ground cumin
1/2 teaspoon chili powder

Steps:

  • In a large skillet, cook beef over medium heat until no longer pink; drain. Transfer to a 6-qt. slow cooker. , Stir in the remaining ingredients. Cover and cook on low for 6-8 hours or until heated through.

1 beef heart
2 lbs ground beef
1 onion, chopped
1 green pepper, chopped
2 garlic cloves, chopped
chopped tomato
coconut oil
Tabasco sauce (to flavor)
2 tablespoons chili powder
1 tablespoon cumin
3 dashes paprika
3 dashes salt
3 dashes pepper

Steps:

  • Cut heart into cubes heat oil,cook heart until lightly brown. Remove set aside.
  • Add oil cook peppers and onions 2minutes add garlic cook few minutes.
  • Add all beef cook through. Add tomatoes stir everything.add beef heart.
  • Add tabasco/spices. Stir and simmer a few hours. Stir once in awhile and keep tast testing.

1 tablespoon olive oil
1 ½ pounds ground beef
1 small onion, chopped
1 stalk celery, chopped
½ green bell pepper, chopped
1 (28 ounce) can diced tomatoes
1 (15.5 ounce) can light red beans, drained
1 (15.5 ounce) can dark red beans, drained
1 (15.5 ounce) can black beans, drained
1 (14.5 ounce) can diced tomatoes with green chile peppers
3 tablespoons chili powder, or to taste
2 teaspoons white vinegar
sea salt and ground black pepper to taste
shredded Cheddar cheese, or to taste

Steps:

  • Heat olive oil in a large pot over medium heat. Cook and stir ground beef in the hot pot until browned and crumbly, about 10 minutes. Add onion, celery, and green bell pepper. Cook until onion is translucent, about 5 minutes.
  • Stir diced tomatoes, light red beans, dark red beans, black beans, diced tomatoes with chile peppers, and chili powder into the meat mixture. Bring to a boil. Reduce heat to low and let simmer until chili has started to thicken, about 1 hour. Season with vinegar, salt, and pepper. Garnish with Cheddar cheese.

  • Add 1 Tbsp olive oil to pan. Cook onions, stirring frequently, for two minutes or until translucent. Add garlic and cook an additional 2 minutes. Add tomato paste and stir until all vegetables are coated.
  • Add beer and stir, being careful to scrape all the browned bits from the bottom of the post. (this is both for flavor and to prevent sticking and burning later.)
  • Return beef heart to pot and add all remaining ingredients. Bring to a boil, reduce heat and cook covered at a bare simmer for 5 to 6 hours, stirring often. Add stock as necessary to achieve desired consistency.
