PASTA WITH GROUND BEEF AND TOMATO
Pasta in a tomato base with Italian Seasonings and Ground beef. A simple easy weeknight meal. Sometimes I toss in some sliced mushrooms too. As alway's, you can adjust any of the ingredients to taste.

Steps:
- Preheat oven to 350'.
- In a medium skillet, add beef and onion and cook until beef is no longer pink and onion is translucent.
- Drain off fat and set aside.
- While beef is browning, in a large pot, cook pasta according to package directions. (I usually cook it a minute less than directed because it will cook while in the oven as well).
- When pasta is cooked drain and add rest of the ingredients to the pot, reserving 1/4 of the shredded cheese (about 1/2 cup) and blend well.
- Transfer above mixture to a large buttered baking dish and spread evenly.
- Top with remaining 1/4 of cheese.
- Cover and bake at 350' for 20-30 minutes. Uncover the last 5-10 minutes and bake until hot and bubbly and cheese on top is melted.

GROUND BEEF TOMATO SPINACH CASSEROLE
This is a remake of my recipe #290137. I had purchased a container of spinach to make the soup recipe for an iron chef competition at work. I ended up not participating because there was a conflict. I didn't want to throw away the spinach and it was too hot for soup, so I came up with this one-dish meal. It was very filling and low-fat. I calculated this on the WW website and it's 4 points per serving.

Steps:
- Cook pasta until al dente and set aside and keep warm.
- Spray a large dutch oven, with cooking spray.
- Brown ground beef, onions and garlic over medium heat until no longer pink.
- Add remaining ingredients and stir well.
- Bring to a boil, reduce heat and cook over medium heat for about 20 minutes.
- Stir in cooked pasta and heat through.

SPINACH AND TOMATO SAUCE
My mother in-law is an awesome cook and this was the first meal she made for me when my husband and I were dating. Since then anyone I have ever made this for raves about it and makes it themselves. My kids absolutely love it (they are 5 and 7) and the spinach doesn't scare them away. Even our black lab knows when it's being served for dinner and waits to lick the plates, although there is not much left at the end of this meal. .

Steps:
- Wash and remove stems of spinach, place in a large pot and fill a quarter of the way with water, add salt if desired.
- Bring to a boil and press down spinach, as it wilts, into boiling water.
- Cover for 5 minutes. Than drain and remove most of the water but not necessary to remove all. Set aside.
- Heat olive oil in medium saucepan, cook diced onion and garlic 5 -7 minutes just until translucent.
- Add diced tomatoes, bouillon cubes, basil, pinch of sugar and Salt and pepper to saucepan.
- Bring to just a boil than lower heat to medium low and cook for 20 minutes.
- While that's cooking use the same pot that you boiled the spinach in to boil more water for your pasta and cook according to package directions.
- Chop already cooked spinach.
- During the last 5 minutes of cooking pasta add the spinach to your tomato sauce.
- Drain pasta and put back into pot, add a ladel full of sauce and mix so spaghetti does not stick together.
- Place pasta on serving plates and spoon sauce over pasta.
- Sprinkle with Romano cheese and serve.

- Cook pasta according to package directions; drain. Add eggs and Parmesan cheese. Press onto the bottom and up the sides of a greased 9-in. deep-dish pie plate. - Bring a large pot of lightly salted water to a boil. Place pasta in the pot, cook for 8 to 10 minutes, until al dente, and drain.

I was surprised at how few recipes there were on here for ground beef and spinach with pasta, aside from lasagna and manicotti, so I made this up one night.

Steps:
- Saute the onion in a deep frying pan for 1-2 minutes, then add the ground beef.
- Cook until beef is browned, then add the tomatoes, spices, salt and pepper to taste.
- Simmer for 3-4 minutes, then add the spinach and simmer 3-4 minutes more.
- Adjust seasonings to taste.
- Meanwhile, boil and drain the pasta according to directions on the package.
- Combine the two and place in a baking tray.
- Sprinkle the cheese over the top and bake in a hot oven until melted and the dish is pipping hot, about 5 minutes.
- Serve with a salad and garlic bread.
PASTA WITH ROASTED TOMATO-PEACH SAUCE

- Set an oven rack about 6 inches from the heat source and preheat the oven's broiler.
- Place tomatoes, garlic cloves, peach halves, onion, and jalapeno pepper on a baking sheet.
- Broil for 20 minutes in the preheated oven, turning every 5 minutes. Remove from the oven and allow to cool. When cool enough to handle, remove and discard skins on onion and garlic cloves. Transfer all vegetables, peach halves, and any juices to the bowl of a food processor and pulse until a smooth puree forms.
- Transfer tomato mixture to a large saucepan. Add basil, rosemary, olive oil, black pepper, garlic powder, and salt. Bring to a simmer over low heat; cook for at least 30 minutes.
- While the sauce is cooking, bring a large pot of lightly salted water to a boil. Add penne and cook, stirring occasionally, until partially cooked, 6 to 8 minutes. Drain pasta, reserving 1 cup of cooking liquid.
- Add pasta to tomato sauce with 1/2 cup reserved cooking liquid. Cook until pasta is tender yet firm to the bite, adding more liquid if necessary, 3 to 5 minutes more.

- Stack beef steaks; cut lengthwise in half and then crosswise into 1 inch wide strips.
- In medium bowl, combine beef, garlic and oil; toss to coat. set aside. Cook pasta according to package directions, adding spinach to water during last minute of cooking.
- Drain well; do not rinse. Meanwhile heat large skillet over medium-high heat until hot. Add beef (1/2 at a time ) and stir-fry 1 minute or until outside is no longer pink.
- (Do no overcook ) Remove from skillet with slotted spoon; keep warm.
- In same skillet, add tomatoes and cook over medium-high heat until sauce is thickened.
- Return beef to skillet and add pasta mixture; heat through, mixing lightly.
- Stir in 3 tablespoons cheese; garnish with remaining cheese.
