This Day 5: Dinner, on the 21 Day Wonder Diet. This is so delicious, lots of flavour with very little fat! Be sure to have all of your ingredients prepared and measured out before you start, so you can just tip each thing in as required!

1/2 cup couscous
1/2 cup boiling water
1 tablespoon sesame seeds
180 g rump steak, sliced thinly
1 small red onion, cut into wedges
1 garlic clove, crushed
150 g baby bok choy, quartered
1 long red chili, sliced thinly
2 tablespoons beef stock
2 tablespoons oyster sauce
2 tablespoons light soy sauce
150 g snow peas, sliced thinly

Steps:

  • Combine couscous with the water in medium heatproof bowl, cover; stand 5 minutes.
  • Meanwhile, toast sesame seeds in heated wok about 30 seconds; transfer to small bowl.
  • Stir-fry beef in heated wok until browned; transfer to another small bowl.
  • Stir-fry onion in heated wok 1 minute. Add garlic, bok choy and chilli; stir fry 1 minute. Add stock, sauces and beef; stir-fry until hot. Remove from heat; stir in peas.
  • Serve couscous topped with stir-fry and sprinkled with sesame seeds.

Use bunches of young beetroot for this recipe if you can - they'll be full of flavour

1 seasonal green lettuce , such as Batavia, Webb's or Cos
400g small cooked beetroot , fresh or vacuum-packed, cut into wedges
bunch radishes , halved if large
2 x 300g/10oz thick sirloin steak
5 tbsp good olive oil , plus a lilttle extra
1 red onion , cut into wedges
1 tbsp capers
2 tbsp balsamic vinegar
2-3 tbsp soured cream

Steps:

  • Tear the lettuce into pieces, pile on a platter and scatter over the beetroot and radishes.
  • Brush the steaks with oil, then season. Toss the onion in oil. Heat a griddle pan, then cook steaks for 2-3 mins each side, remove and cover with foil to rest. Cook the onions until softened.3 Thinly slice the steaks and arrange over the leaves with the onion and capers. Dress with vinegar and remaining oil, season, then drizzle over soured the cream. Serve with bread.

300 g chickpeas, rinsed and drained
1 lebanese cucumber, chopped coarsely
2 small tomatoes, chopped coarsely

1/4 cup lemon juice

Steps:

  • Spray beef with cooking oil. Cook beef in heated small frying pan; remove from heat. Cover; stand 5 minutes.

I was given the ingredients for this recipe by a British friend as a way to use up leftover roast beef. These are also good when eaten like cheeseburgers.

1 lb leftover roast beef
1 onion, minced
1 tablespoon fresh parsley
1/2 cup breadcrumbs
1 large egg
1 pinch cinnamon
flour

Steps:

  • Use a sharp knife or food processor to mince the beef.
  • Heat up a skillet on medium with a bit of oil.
  • In a bowl, mix the beef, onion, parsley, bread crumbs, egg, and cinnamon.
  • Form into patties and coat both sides lightly with flour.
  • Cook rissoles on one side until browned, then turn to the other side and cook until browned and heated through.
  • Serve topped with ketchup or leftover gravy.
