ULTIMATE SWEET POTATO FRIES RECIPE BY TASTY

Steps:
- Peel the sweet potatoes on a cutting board.
- Trim the ends of the potatoes and cut into ½-inch (1 cm) thick matchsticks.
- Add the cut potatoes to a large bowl of water and soak for 1 hour.
- Drain the potatoes in a colander, and rinse with cold water.
- Preheat the oven to 425˚F (220˚C).
- Thoroughly dry the sweet potato matchsticks with paper towels.
- Add the sweet potatoes to a large bowl and sprinkle with cornstarch, tossing until fully coated.
- Drizzle the grapeseed oil over the potatoes, add the paprika, garlic powder, and pepper. Toss to coat.
- Arrange the sweet potatoes in a single layer on a greased, foil-lined baking sheet.
- Bake for 15 minutes. Use a spatula to turn the sweet potato fries over.
- Bake for another 15 minutes.
- Turn off the oven and crack the door open, then let the sweet potatoes rest in the oven for 10 minutes.
- Season the fries with salt.
- Enjoy!

SWEET POTATO FRIES WITH AUNT TC'S SECRET SAUCES
What's my secret for super-crispy sweet potato fries? I actually have two. First, I soak the potatoes in cold water to remove the excess starch. Then, I give them a toss in a cornstarch and seltzer water mixture. The cherry on top? I dust these with a spicy-sweet spice blend and serve them with two different awesome sauces. Bet you can't eat just one!

- For the sweet potato fries: Soak the potatoes in cold water 30 minutes. Dry on paper towels.
- Stir together the brown sugar, garlic, paprika, salt and pepper in a small bowl.
- For the creamy barbecue sauce: Stir together the barbecue sauce, mayonnaise and House Seasoning in a bowl.
- For the spicy sauce: Stir together the ketchup, mayonnaise, House Seasoning and hot sauce in a separate bowl.
- For the sweet potato fries: Pour the oil to a depth of 3 inches in a Dutch oven. Heat the oil to 325 degrees F. Line wire racks with paper towels.
- Stir together the cornstarch and seltzer water in a medium bowl. Dip the sweet potatoes in the cornstarch mixture in batches until coated. (The coating will be thin. Stir the cornstarch mixture after each batch.) Fry the sweet potatoes, in batches, until they float to the top, 1 to 2 minutes. (The sweet potatoes won't brown yet.) Remove to lined wire racks to drain.
- Increase the oil temperature to 350 degrees F.
- Fry the potatoes a second time, in batches, until browned and crispy, 4 to 5 minutes. Remove to the lined racks to drain. Sprinkle immediately with the brown sugar seasoning. Serve right away with the sauces.
- Stir together the garlic and onion powder, paprika, salt and pepper in a small bowl. Store in an airtight container at room temperature.
OVEN FRIES WITH TAHINI YOGURT AND SMOKY-SWEET NUTS
This is an alternative take on loaded fries, but the cheesy sauce is replaced with tahini yogurt and the bacon bits with smoky-sweet nuts. It's no less decadent, however, and a great one to dig into and share. Double up on the smoky-sweet nuts, if you like. They're an easy way to introduce both texture and flavor to dishes, and are particularly good spooned onto hummus.

- Heat the oven to 400 degrees Fahrenheit/200 degrees Celsius.
- On a large parchment-lined baking sheet (tray), toss the potatoes with the rice flour, oil and 1 teaspoon salt. Spread them out in an even layer so they're not overlapping. Cover the baking sheet tightly with foil and bake for 15 minutes, until the potatoes steam and soften slightly.
- Meanwhile, make the pickled stems: Add the herb stems to a small bowl with the vinegar and set aside to gently pickle.
- Prepare the nuts: Add the oil to a small frying pan and heat over medium-high. Once hot, add the pine nuts and almonds, and cook, stirring occasionally, until toasted and nicely browned, about 1 to 3 minutes. Remove from the heat and immediately stir in the sugar, nigella seeds, Urfa and Aleppo chile flakes, paprika, and 1/4 teaspoon salt. Transfer to a bowl.
- Make the tahini yogurt: Add all the ingredients to a bowl with 2 1/2 tablespoons water and 1/4 teaspoon salt; whisk until smooth. Add an additional 1 or 2 tablespoons of water, if needed, until the mixture is just pourable, since it tends to thicken as it sits.
- Remove the foil from the potatoes, turn the heat up to 425 degrees Fahrenheit/220 degrees Celsius and return to the oven for 15 minutes. Use a spatula to gently flip the fries over, separating them if they stick together at all, and bake for 20 to 25 minutes more, until nicely golden and crispy. Set aside to cool for 5 minutes.
- To serve, transfer the fries to a large serving platter and drizzle with the tahini yogurt. Spoon the nut mixture on top, followed by the pickled stems and their liquid. Serve immediately.

I came up with this to satisfy my need for spicy snack foods and side dishes! My daughter really likes this and she usually doesn't go for spicy stuff! This is going to be a regular at my house!

- Cut washed, unpeeled potatoes into french-fry shaped pieces.
- Mix together peanut oil, lime juice, fish sauce, peanut butter, salt, pepper, garlic, cayenne, coriander powder, cumin, and onion powder in a large ziplock bag or mixing bowl.
- Add cut potatoes and mix around, making sure potatoes are evenly coated.
- Allow to marinate in this mixture for 1 hour.
- Preheat oven to 400 degrees F.
- Line baking sheet with aluminum foil (this makes for easy clean-up later!); pour small amount of vegetable oil on foil and wipe around with paper towel.
- Spread potatoes in single layer on foil, without potatoes touching, if you can.
- Bake for 40-45 minutes, turning potatoes once or twice during cooking.
