CHILE-RUBBED BEEF TENDERLOIN WITH GARLIC-HERB OIL

Steps:
- Preheat the oven to 450 degrees F.
- Mix together the ancho chile powder, cumin, paprika, coriander, cayenne, garlic powder, 2 teaspoons salt and 1/2 teaspoon pepper in a small bowl. Rub the olive oil on the tenderloin, then rub evenly with the spice mixture. Let stand at room temperature for 30 minutes.
- Heat the canola oil in a large ovensafe skillet, preferably cast-iron, over medium-high heat. Sear the tenderloin (bending it to fit in the skillet if necessary) until golden brown on all sides, about 3 minutes per side. Transfer the skillet to the oven and roast until an instant-read thermometer inserted into the center of the tenderloin reads 130 degrees F (for medium rare), about 20 minutes. Transfer to a cutting board and let rest for 10 minutes.
- Remove the string and slice the tenderloin crosswise. Spoon over some of the Garlic-Herb Oil and sprinkle the meat with additional salt. Serve the remaining Garlic-Herb Oil in a bowl on the side.
- Combine the olive oil and garlic in a small saucepan. Turn the heat to medium low and gently poach the garlic for 5 minutes; the oil should be at a very bare simmer but not boiling, otherwise the garlic will burn. Turn off the heat and allow to cool completely.
- Remove the garlic from the oil and discard; transfer the oil to a bowl. Add the parsley, cilantro, chives, red pepper flakes and salt to taste to the oil and stir to combine.
MARINATED BEEF TENDERLOIN
My three grown children and grandkids enjoy this tempting tenderloin. Leftovers make wonderful sandwiches with oven-fresh bread and Dijon mustard. I sometimes substitute a marinated eye of round roast...and it turns out fine.

- In a bowl, combine the first nine ingredients; mix well. Cover and refrigerate 1 cup for basting. Pour remaining marinade into a shallow dish; add bay leaf and tenderloin. Turn to coat; cover and refrigerate overnight., Drain and discard marinade and bay leaf. Place tenderloin on a rack in a shallow roasting pan. Bake, uncovered, at 425° for 55-60 minutes or until meat reaches desired doneness (for medium-rare a thermometer should read 135°; medium, 140°; medium-well, 145°), basting often with reserved marinade. let stand for 15 minutes before slicing.

- Preheat oven to 450 degrees.
- Place roasting pan on stove and heat oil over medium-high heat.
- Pat tenderloin with paper towels.
- Sprinkle all over with salt and pepper.
- Place in roasting pan with oil and roast in oven (or in a hot, covered grill).
- While meat cooks, toast Cascabel chile in a small skillet over high heat,.
- turning pieces once, until blistered and fragrant. I recommend using a Cascabel chili as it has a tangy medium hot flavor.
- Let cool until brittle.
- Using a mortar and pestle, pound chile into a powder.
- Mix powder in medium bowl with remaining ingredients to create the aioli.
- Remove meat from oven or grill after 25 to 30 minutes, or when internal temperature is in the 130 to 150 degree range. Because you are using such a hot oven, you may want to check the internal temperature of the meat as the 25 minute mark approaches to make sure you don't overcook it.
- Let rest 10 to 15 minutes.
- Slice and serve with aioli on the side.

MUSTARD-AND-CHILE-RUBBED ROASTED BEEF TENDERLOIN
For parties or picnics, meat that you've prepared the day before is a time-saving trick worth adopting. Everyone knows that beef tenderloin, served hot, is a fail-safe dish for a dinner party. It comes out of the oven caramelized, glistening and perfect. If the primary goal is to serve it chilled or room temperature, however, the trick is to swab the meat with flavor - lots of chile powder, oregano, garlic, mustard and olive oil - before sliding it into the oven (roast it rare so it stays tender and juicy). The next day all you need to do is slice and serve, no compensatory condiments necessary. The flavors of mustard and chile, carried by the fat in the olive oil, have penetrated the meat beautifully.

- Preheat oven to 450 degrees. Tie roast with kitchen string in three evenly spaced places to help keep its tubular shape.
- In a small bowl, whisk together 1 tablespoon oil, the mustard, oregano, chipotle chile, chile powder, cumin, black pepper and garlic.
- In a large skillet, heat remaining 2 tablespoons oil until very hot. Season beef generously all over with salt. Place it in pan and sear bottom without moving until it forms a golden brown crust, about 3 to 4 minutes. Turn and repeat with remaining sides.
- Transfer beef to a rimmed baking sheet. Using a pastry brush, smear mustard-chile rub all over beef. Roast until a thermometer registers 115 degrees for rare and 120 for medium-rare (beef will continue to cook as it rests), 12 to 15 minutes. Let cool completely, then wrap and refrigerate. Bring to room temperature for at least 2 hours before slicing and serving.

HERB-COATED BEEF TENDERLOIN WITH ROASTED-GARLIC AIOLI

- Preheat oven to 400°F. Trim tops of garlic by about 1/2 inch; place in parchment-lined foil and drizzle with 1 tablespoon olive oil. Wrap to seal and roast until soft, 1 hour. Unwrap and let cool completely.
- Slip garlic cloves out of their jackets and into a blender. Blend with egg, lemon juice, 1/2 teaspoon salt, and 1/8 teaspoon pepper until smooth. With motor running, slowly stream in 3/4 cup vegetable oil until thick and smooth; if too thin, add up to 1/4 cup more oil. Refrigerate in an airtight container at least 30 minutes and up to 3 days; season to taste before serving.
- Place beef on a rack set in a rimmed baking sheet; season generously with salt and pepper. Refrigerate, uncovered, at least 4 hours and up to overnight. Preheat oven to 275°F. Pat beef dry; brush with remaining 2 tablespoons olive oil. Transfer to a roasting pan or large ovenproof skillet, such as cast iron. Roast until a thermometer inserted in center reads 125°F for medium rare, 60 to 65 minutes. Tent with foil; let stand 15 minutes.
- Finely chop herbs on a large cutting board and spread out in an even layer. Untie roast and roll in herbs, pressing to coat. Transfer to a serving platter, slice, and serve with aioli.
STEAK WITH CASCABEL CHILE AND LIME

- 1. Pull firmly, but gradually, on the chile stems to release the seed pod and stems. Shake out remaining seeds. In a small dry skillet over medium heat toast the chiles, pressing with a spatula and turning, until aromatic and slightly softened, 10 to 15 seconds. Put the chiles in a bowl and barely cover with hot water. Cover the bowl and soak the chiles about 30 minutes. 2. Meanwhile, heat 1 teaspoon of the oil in the same skillet and cook the onion and garlic over medium-low heat until softened, about 4 minutes. Transfer to a blender. Taste the chile-soaking water, and if it's not bitter, save it for the sauce. Lift the chiles from the water and add them to the blender. Add 3 tablespoons chile water and 2 tablespoons tap water (or 5 tablespoons water). Purée smooth, scraping down the sides of the blender. 3. Scrape the paste into a fine-mesh strainer placed over a bowl. Press with the back of a wooden spoon to release the pulp. Stir 1/4 teaspoon of the salt into the paste. 4. Put the remaining oil on a plate and coat the steaks, 1 at a time, on both sides with oil. Season with salt and pepper. Heat a large nonstick skillet over medium-high heat. Lay 2 of the steaks in the hot pan. Spread about 1 teaspoon of chile paste on top of each steak. Cook until the steaks are browned on the bottom, about 5 minutes. Turn the meat and spread 1 teaspoon of chile paste on the cooked side. Cook until the steaks are done to your taste, about 3 more minutes for medium rare. Transfer to a plate and cover to keep warm.
