- Heat the olive oil in a large (12-inch) skillet. Add the onion and saute over medium heat until translucent, 5 to 10 minutes. Add the garlic and cook for 1 more minute. Add the wine and cook on high heat, scraping up all the brown bits in the pan, until almost all the liquid evaporates, about 3 minutes. Stir in the tomatoes, parsley, salt, and pepper. Cover, and simmer on the lowest heat for 15 minutes.

- In a large skillet, combine the oil, onion, garlic and red pepper over medium heat. Cook, stirring, 3 to 4 minutes. Add the tomatoes, basil, bay leaf, salt and pepper. Bring to a low simmer and then reduce heat to low. Cover and cook about 15 minutes, stirring occasionally. Discard the bay leaf.

- Fire up. Preheat the grill to medium hot and when it is ready, clean the grates thoroughly. Clean grates are very important for this recipe. Get some smoke started by putting some dry wood chips on the heat source.
- Prep. Slice the tomatoes crosswise. Peel and slice the onion in half crosswise. Peel the carrot. Mince the garlic.

Then roll them over and grill the skin side. Don't worry if they blacken a bit on the skin side. Remove them and let them cool until you can handle them. The tomato skins should slip off pretty easily when they cool off enough so you can handle them. When the other veggies are cool, chop them fine.
