WILD MUSHROOM AND BEEF STEW



Wild Mushroom and Beef Stew image

Fragrant mushrooms and tender meat are combine with fresh herbs to give this classic beef stew a gourmet twist.

Number Of Ingredients 10

2 pounds of chuck (cut up into bite size cubes)
1 large onion (chopped)
1 pound of a variety of mushrooms (roughly chopped)
1 bay leaf
5 cloves of garlic
6 sprigs of thyme
1 cup Cognac
olive oil
salt and pepper to taste
about 1 quart beef stock

Steps:

  • Cut up the meat into medium bite size cubes and season with salt and pepper on both sides. Preheat a Dutch oven or a thick bottomed pot with vegetable oil until it starts to smoke.
  • Preheat the oven to 325-degrees.
  • Place the beef into the pot, making sure not to overcrowd the pan. Allow to brown on all sides.
  • In the meantime, wash and roughly chop your mushrooms.
  • Check on the meat and remove once nice and brown. Set aside. You will have some fat and bits on the bottom of the pot. Let it be. This is your flavor.
  • Add in the onions, a few cloves of garlic, a few stems of thyme, a bay leaf and mushrooms and toss to cover with the fat in the pot. Sautee for about 10 minutes.
  • Add the meat back into the pot and sprinkle evenly with one tablespoon of flour. Mix to combine until none of the flour remains.
  • Take about 1 cup of cognac and pour into the pot. NEVER POUR OUT OF THE BOTTLE! I flame can catch onto the bottle while pouring and the bottle will explode. You can either let it cook out as it or light the cognac on fire with a long match or if the pot is shallow enough, tilt it towards the flame so it will catch on fire. This is also called, deglazing.
  • Once all the alcohol has cooked out, about 3 minutes, you will be left with a beautiful glazed meat.
  • Pour in enough beef stock to cover the meat and mushrooms almost all the way. Adjust seasoning and cover with tightly fitting lid. Place into the oven for 30 minutes.
  • After 30 minutes, turn the heat down to 275-degrees and allow to cook for another 90 minutes or until meat is nice and tender.

2 lbs chuck roast or 2 lbs skirt steaks, cut in slices thick
1 cup flour
sea salt
pepper, ground
1/3 cup olive oil
2 sprigs fresh oregano or 1 teaspoon dried oregano
2 sprigs fresh thyme or 1 teaspoon dried thyme
2 sprigs fresh marjoram or 1 teaspoon dried marjoram
1 sprig fresh rosemary or 1/2 teaspoon dried rosemary
2 yellow onions, thinly sliced
2 tomatoes
3 garlic cloves, crushed
1 cup dry white wine
1 bay leaf
2 pinches nutmeg, freshly grated
1 ounce bittersweet chocolate
2 ounces dried wild mushrooms, soaked in water to cover overnight
3 cups beef stock

Steps:

  • Place the flour in a shallow bowl, season with salt and pepper, and stir to combine. Lightly dredge the beef slices on both sides in the seasoned flour, shaking off any excess.
  • In a heavy-bottomed Dutch oven or flameproof ceramic baking dish over medium heat, warm the olive oil. Working in batches if necessary, add the beef and brown on all sides, about 5 minutes. Transfer the beef to a plate with a slotted spoon. Reserve the pot with the remaining oil.
  • Next, make a sofregit. If using fresh oregano, thyme, marjoram, and rosemary sprigs, tie them in a bundle with kitchen string and set aside. Return the pot to medium heat, add the onions, and sauté until soft, about 3 minutes. Cut the tomatoes in half and, using the large holes of a grater-shredder, grate the pulp directly into the pot. Discard the skins. Add the garlic. When the vegetables are cooked, after about 4 minutes, add the wine. Add the gerb bundle or dried herbs and the bay leaf and nutmeg. Then grate the chocolate directly into the pot. Simmer over medium heat until the ingredients begin to form a sauce, about 5 minutes.
  • Drain the mushrooms in a sieve ined with cheesecloth, reserving the liquid, and add to the pot. Return the beef to the pot with any juices. Add the stock and enough of the mushroom-shoaking liquid to cover the beef. Season to taste with salt and pepper.
  • Reduce the heat to low, cover partially, and cook until the beef is thoroughly tender and the sauce is thick and concerntrated, about 1 hour. If using fresh herbs, remove and discard the herb bundle, and then discard the bay leaf. Transfer to a warmed serving dish or serve in the Dutch oven.

Wild Mushrooms and Beef over Lentils image

6 small springs of fresh parsley, chopped
1 fresh lime
4 pounds (about 2 roasts) beef shoulder (tender major), silver skin removed
Salt and freshly ground black pepper
2 shallots, finely minced
2 cloves garlic, finely minced
5 sprigs fresh thyme, leaves minced
3 sprigs fresh parsley, leaves finely chopped
2 fresh sage leaves, finely chopped
1 tablespoon olive oil
1 pound dried lentils
1 tablespoon olive oil (to saute white onion)
1 white onion, chopped
2 tablespoon unsalted butter
1/2 cup (about 2 ounces) shiitake mushrooms, cleaned with a brush and trimmed
1/2 cup (about 2 ounces) crimini mushrooms, cleaned with a brush and trimmed
2 portobello mushrooms (about 5 ounces), cleaned with a brush, gills removed, trimmed and sliced
2 fresh sage leaves, finely minced
2 tablespoons chopped fresh thyme leaves, about 4 large sprigs
1/2 cup demi-glace (brown sauce)
1 large ripe tomato, seeds removed and diced

Steps:

  • Microwave lime in a small bowl to release essential oils and set aside until it is just cool enough to handle.
  • Rinse beef to remove any blood residue and pat dry with paper toweling. Rub with salt and pepper and set aside briefly. Combine shallots, garlic, thyme, parsley, sage and olive oil to form a smooth paste. Rub into beef and let sit for a minimum of 2 hours.
  • Preheat oven to 350 degrees F. Heat oil in a large saute pan with an oven safe handle, and sear beef on all sides. Roast in oven until the beef reaches an internal temperature of 125 degrees F, about 20 to 25 minutes, so when you pull it out it will reach 145 degrees F for medium doneness during the carryover cooking while it is resting. (You will be using the pan juices for the lentils, so do not discard them.)
  • While the beef is roasting, rinse lentils in a colander and examine to make sure there are is no foreign material (such as pebbles). Transfer to a saucepot with just enough water to cover, and bring to a boil. Reduce and simmer for about 20 minutes until lentils are re-hydrated and water is absorbed, then remove from heat.
  • While lentils are cooking, heat olive oil in a large skillet over medium heat, and saute white onion until translucent. Add 2 tablespoons butter to the saute pan and when it melts, add shiitake, crimini, and portobello mushrooms to the onion pan along with sage and thyme. Cook mushrooms until they begin to soften and to give up their juices. Stir sauteed onion- mushroom-herb mixture into pot of lentils along with demi-glace. Lower heat and cook for a few minutes to integrate flavors, but do not allow lentils to get mushy. Remove from heat and keep in a warm place.
  • Remove beef from oven and transfer to a utility platter to let rest. Strain pan juices from beef into lentil mixture and stir to combine. Keep covered and warm.
  • Sliced rested beef into thin slices. Stir diced tomato into lentils. Spoon some lentil/mushroom mixture into the center of serving dish and top with beef. Garnish with chopped parsley.

BEEF MEDALLIONS WITH WILD MUSHROOMS CREAM SAUCE

1 ounce mixed dried wild mushrooms
2 cups beef broth, 25% less sodium, warmed
2 teaspoons canola oil, divided
1 tablespoon butter, softened
1/4 cup shallot, finely diced
1 teaspoon roasted garlic, seasoned paste
3/4 cup dry white wine
3/4 cup whipping cream
8 beef medallions (4oz each, AAA beef)
1/4 teaspoon salt
1/4 teaspoon pepper

Steps:

  • Preheat oven to 350°F.
  • Place mushrooms in a bowl with warm broth and soak for 20 minutes, or until tender. Strain mushrooms and reserve broth.
  • In large saucepan, on medium-high heat, add 1 tsp of oil, butter, shallots, garlic paste and mushrooms. Cook until shallots are caramelized, about 5 minutes. Add wine and deglaze the pan, about 3 minutes.
  • Next add the broth and simmer, allowing the liquid to reduce by half, about 5-8 minutes. Add cream and cook another 2 minutes,.
  • Meanwhile, season beef with salt and pepper. Add remaining oil to an ovenproof skillet and pan-sear beef on high heat, 1 minute per side and place in the oven.
  • Cook about 7-19 minutes or until an instant-read thermometer reaches 160F for medium. Remove beef from oven and set aside to rest,
  • Divide steaks among 8 plates, drizzle 2 tablespoons mushroom sauce overtop (save any leftovers for another use) and serve.
