These large, buttery rolls are my family's favorite Christmas tradition. We eat them on Christmas morning under the tree!

2 (.25 ounce) envelopes active dry yeast
1 teaspoon white sugar
¼ cup warm water
6 cups all-purpose flour
1 teaspoon salt
¾ cup butter
1 ½ cups milk
¾ cup white sugar, divided
3 eggs, beaten
¼ cup butter, melted
1 cup raisins
1 egg yolk
2 tablespoons water

Steps:

  • Sprinkle the yeast over 1/4 cup of warm water in a small bowl and stir in 1 teaspoon of sugar. The water should be no more than 100 degrees F (40 degrees C). Let stand for 5 minutes until the yeast softens and begins to form a creamy foam.
  • Sift together the flour and salt. Cut in 3/4 cup butter with a knife or pastry blender until the mixture resembles coarse crumbs. Bring the milk to a boil; remove from the heat and stir in 1/2 cup sugar. Cool until the milk is lukewarm, no more than 100 degrees F (40 degrees C). Pour the milk and yeast mixture into the flour. Add the eggs and mix well to form a soft, sticky dough.
  • Turn the dough out onto a well-floured surface and knead until smooth and elastic, about 8 minutes. Add more flour a tablespoon at a time, if necessary. Place the dough in a buttered bowl, turning to coat the dough. Cover with a light cloth and let rise in a warm place (80 to 95 degrees F (27 to 35 degrees C)) until doubled in volume, about 1 1/2 hours.
  • Roll the dough into a square on a floured surface. Brush the dough with the melted butter and sprinkle with the remaining 1/4 cup sugar and the raisins. Roll up the dough to form a log, pinching the seam to seal.
  • Preheat an oven to 375 degrees F (190 degrees C). Grease a 9x13-inch baking pan.
  • Cut the log into slices about 1 1/2 inches thick. Place the slices in the prepared pan and let them rise for 30 minutes. Beat the egg yolk with 2 tablespoons of water to form an egg wash. Brush the buns with egg wash.
  • Bake in the preheated oven until the buns are golden brown and the centers are set, about 25 minutes.

2 tablespoons butter
1 jar (8 ounces) process cheese sauce
1 pound thinly sliced cooked roast beef
6 French or Italian sandwich buns, split

Steps:

  • In a skillet, saute onion in butter until tender. Stir in cheese sauce until melted. Cook and stir until heated through. Stir in beef until evenly coated. , Spoon onto buns; wrap each in aluminum foil. Bake at 350° for 8-10 minutes or until bread is crispy.

3/4 lb ground beef
2 tablespoons green peppers
2 tablespoons minced dried onion
1/2 cup breadcrumbs
1/4 cup barbecue sauce
1 teaspoon salt
8 ounces crescent roll dough
mozzarella cheese
1 egg yolk

Steps:

  • Cook beef, pepper & onion in skillet over med. heat until brown. Remove from heat and stir in bread crumbs, barbecue sauce and salt. Set aside.
  • Preheat oven to 375º. Separate crescent roll dough in 4 rectangles on lightly floured board. Roll dough in 8x4 rectangle-cut crosswise in half. Place 2 tbsp of meat mixture on each half. Top with some mozzarella. Pull corners of dough toward the center and twist. Pinch to seal. Place buns on greased cookie sheet. Repeat with rest. Makes 8 buns.
  • In small cup, beat egg yolk and 1 tsp water with fork until blended. Brush top of buns.
  • Bake 10-15 minutes or until golden.

2 packages (1/4 ounce each) active dry yeast
1/2 cup warm water (110° to 115°)
3/4 cup warm whole milk (110° to 115°)
1/4 cup sugar
1/4 cup shortening
1 large egg
1 teaspoon salt
3-1/2 to 4 cups all-purpose flour
1-1/2 pounds ground beef
1/4 cup chopped onion
1 can (8 ounces) tomato sauce
8 slices process American cheese, quartered

Steps:

  • In a large bowl, dissolve yeast in warm water. Add the milk, sugar, shortening, egg, salt and 2 cups flour; beat until smooth. Stir in enough remaining flour to form a soft dough. , Turn onto a floured surface; knead until smooth and elastic, about 4-6 minutes. Place in a greased bowl, turning once to grease top. Cover and let rise in a warm place until doubled, about 30 minutes., In a large skillet, cook beef and onion over medium heat until meat is no longer pink; drain. Stir in tomato sauce. Remove from the heat; set aside. , Punch dough down; divide into 16 pieces. On a lightly floured surface, gently roll out and stretch each piece into a 5-in. circle. Top each circle with two pieces of cheese and about 3 tablespoons beef mixture. Bring dough over filling to center; pinch edges to seal., Place seam side down on a greased baking sheet. Cover and let rise in a warm place until doubled, about 20 minutes. Bake at 400° for 8-12 minutes or until golden brown. Serve warm. Refrigerate leftovers.
