SPICED CHICKEN LOAF

A mixture of ground chicken with stuffing mix, cheese, egg, onion and seasonings baked into a tangy tasty loaf.

1 pound ground chicken
⅔ cup herb stuffing mix, crushed into fine crumbs
¼ cup grated Parmesan cheese
1 egg
1 cup diced onion
½ teaspoon salt
½ teaspoon ground black pepper
1 pinch garlic pepper seasoning
2 teaspoons ketchup
2 teaspoons barbeque sauce

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • In a large bowl combine the chicken, stuffing mix crumbs, cheese, egg, onion, salt, pepper and garlic pepper seasoning. Mix together, then stir in ketchup and barbeque sauce. Mix well and pour mixture into a bread loaf pan.
  • Bake in preheated oven for 50 minutes. Turn oven off and let sit in hot oven for an additional 15 minutes.

2 eggs
1 cup milk
2 cups chopped cooked chicken
1 cup dry breadcrumbs
2 tablespoons chopped green peppers
2 tablespoons chopped celery
1/2 teaspoon salt
1/4 teaspoon paprika
1 cup sliced mushrooms
2 tablespoons butter
3 tablespoons flour
1 cup milk
1/2 cup chicken broth
1/2 teaspoon salt
1/8 teaspoon nutmeg
2 teaspoons lemon juice
2 beaten egg yolks

Steps:

  • To make the chicken loaf:.
  • Beat eggs and add milk. Add remaining loaf ingredients.
  • Pour into a greased loaf pan. Bake at 350 degrees for 30 minutes.
  • Unmold loaf, slice, and serve with mushroom sauce.
  • To make the mushroom sauce:.
  • Brown mushrooms in butter.
  • Add flour and blend.
  • Add milk, broth, salt and nutmeg. Cook until thick.
  • Add lemon juice to beaten egg yolks. Slowly stir egg mixture into sauce. cook, stirring, about 2 minutes until creamy.

Number Of Ingredients 15

1 loaf Rhodes Bread Dough or 12 Rhodes Dinner Rolls, thawed
2 cups thinly sliced onions
1/4 cup butter
12 ounces beef tenderloin steaks or sirloin steak
1 teaspoon flour
1 teaspoon brown sugar
1/2 teaspoon oregano leaves
1 teaspoon minced garlic
1 tablespoon parsley flakes
1/2 teaspoon salt
1/2 teaspoon pepper
1/2 cup beef broth
3/4 cup grated Monterey Jack cheese
1/4 cup grated Parmesan cheese
1 can beef gravy, if desired

Steps:

  • Spray board or counter top with non-stick cooking spray. Roll loaf or combined dinner rolls into a 12x16-inch rectangle. Cover with plastic wrap and let rest. In a skillet, saute onion in butter over medium low heat 10-15 minutes or until golden brown. Remove onion with slotted spoon and set aside. Cut beef into thin strips and add to skillet. Increase heat to medium. Cook and stir until browned. Return onion to skillet. Stir in flour, sugar, oregano, garlic, parsley, salt and pepper. Add broth and cook and stir for 6-8 minutes or until liquid has evaporated. Remove plastic wrap from dough. Spread beef mixture evenly over middle third of dough going lengthwise. Sprinkle with Monterey Jack and Parmesan cheese. Fold sides over meat mixture. Tuck ends under. Place on a large sprayed baking sheet. Make several 1/4-inch deep cuts on top of loaf. Cover with plastic wrap and let rise 30 minutes. Remove wrap and bake at 350°F 30-35 minutes. Serve warm with beef gravy, if desired.

1/2 teaspoon chili powder

Steps:

  • Combine loaf ingredients together in a large bowl and mix well to ensure even blending.
  • Pack into a loaf pan, or muffin tin for mini loaves.
  • Mix sauce ingredients together and spread evenly over loaf.
  • Bake uncovered for 60 minutes at 350 degrees.
  • To freeze: wrap unbaked loaf well, label and freze.
  • To serve: defrost overnight and then bake as directed. Add 30-45 minutes baking time if baking from frozen.
