PORTILLO'S ITALIAN BEEF (COPYCAT)

Make and share this PORTILLO'S ITALIAN BEEF (Copycat) recipe from Food.com.

Provided by Denver cooks

Categories     Meat

Time 40m

Yield 4 serving(s)

Number Of Ingredients 14

1/4 lb beef fat, trimmings
4 cups water
2 knorr beef bouillon cubes (double-size cubes, or use 4 standard size)
1 1/2 teaspoons Kitchen Bouquet, browning & seasoning sauce
1 teaspoon lemon juice
1/2 teaspoon dried oregano
1/4 teaspoon salt
1/4 teaspoon ground black pepper
1/8 teaspoon garlic powder
1/8 teaspoon ground cayenne pepper
1 pinch msg
4 hard french bread sandwich buns
1 lb roast beef, London broil or 1 lb italian style roast beef, sliced very thin
marconi hot giardiniera or cooked sweet pepper

Steps:

  • Preheat the oven to 400 degrees F.
  • Render the beef fat by chopping it into small bits (about the size of peas) with a food processor. Be sure the fat is very cold--it will chop better. If you don't have a food processor, you can chop the fat by hand. Use a sharp knife and cut it as small as you can. Heat up the fat in a sauté pan over medium heat until the bits are browned. Strain the solids from the fat and measure 1/4 cup of fat for the gravy.
  • Make the beef gravy by combining all of the ingredients, including the beef fat, in a medium saucepan over medium heat. When the mixture begins to boil reduce the heat and simmer for 5 minutes, then turn the heat to low.
  • Make the sandwiches by heating up the rolls in the hot oven for 3 minutes.
  • For each sandwich, drop 1/4 pound of sliced beef (separate the slices) into the gravy for 2 minutes. Make sure the gravy isn't boiling. It should be around 180 degrees F. After the beef has soaked in the gravy, use tongs to arrange the beef on a warmed sandwich roll and top with your choice of hot giardiniera or sweet peppers. Or both. Spoon on some extra gravy just before serving.

PORTOBELLOS WITH ARUGULA AND PARMIGIANO

Portobellos with Arugula and Parmigiano image

_**Editor's note:** The recipe and introductory text are from Mario Batali's book_ [Italian Grilling](http://www.ecookbooks.com/p-21587-italian-grill.aspx?affiliateID=10053). _Reprinted with permission by Ecco. All rights reserved._ This was one of the first dishes I put on the menu at my restaurant Pó... a long, long time ago. You can vary it by using different greens, such as spicy young watercress, or other cheeses, including sheep's-milk cheese, semi-soft or aged. The beauty of the dish lies in the seemingly incongruous marriage of anchovies and mushrooms: anchovies plus mushrooms equals steak.

Provided by Mario Batali

Yield Serves 6

Number Of Ingredients 9

6 large portobello mushrooms, stems removed
1/4 cup plus 2 tablespoons extra-virgin olive oil
1 teaspoon anchovy paste
2 tablespoons balsamic vinegar
1/2 teaspoon dried thyme, crumbled
Generous 4 cups trimmed arugula, washed and spun dry
Juice of 1/2 small lemon
Coarse sea salt and freshly ground black pepper
A 4-ounce chunk of Parmigiano-Reggiano for shaving

Steps:

  • Preheat a gas grill or prepare a fire in a charcoal grill.
  • Place the portobellos on the grill and cook, turning two or three times, until slightly soft-ended, 5 to 8 minutes. Transfer to a platter, arranging the mushrooms grill side up.
  • In a small bowl, whisk together 1/4 cup of the olive oil, the anchovy paste, vinegar, and thyme. Spoon the mixture evenly over the portobellos and let stand for 30 minutes.
  • In a large bowl, toss the arugula with the remaining 2 tablespoons olive oil and the lemon juice. Season with coarse sea salt and pepper.
  • Divide the arugula among six plates and top each with a mushroom. Using a vegetable peeler, shave the Parmigiano over the salads. Serve immediately.

53 ITALIAN SEAFOOD RECIPES FOR THE FEAST OF THE SEVEN FISHES

From epicurious.com
  • Clam Toasts with Pancetta. Shellfish and pork are a power duo. The salty-sweet pancetta soffritto is the backbone of this flavorful clam toast. It's a favorite in our test kitchen, so you may want to make sure to prepare an extra-large batch.
  • Cioppino Seafood Stew With Gremolata Toasts. Feel free to pack all seven of your required fishes into this classic San Francisco seafood stew. It's a great recipe for entertaining, given that you make the tomato base one day ahead.
  • Crab Toast with Lemon Aioli. Start the evening with these lemony crab toasts—just don't be surprised if they disappear a little more quickly than you expected.
  • Marinated Anchovies With Bread and Butter. For a simple, just-the-right-amount-of-salty appetizer, doctor up a tin of anchovies with a touch of vinegar, a few peperoncini, and a sprinkling of lemon zest.
  • Squid, Lemon, and Zucchini Blossom Fritto Misto. You probably can't get squash blossoms this time of year, but the same method can be applied to thinly sliced fennel, squash, or green onions.
  • Fried Squid with Aioli. How does this squid remain so shatteringly crisp? The secret is hiding in the batter: potato starch and arepa flour, the tickets to everlasting crunchiness.
  • Slow-Roasted Salmon with Fennel, Citrus, and Chiles. This elegant salmon dish is perfect for your Italian Christmas dinner—just slide it into a low oven for 40 minutes and it’s tender, luscious, and ready to serve.
  • Anchovy Pasta With Garlic Breadcrumbs. Cook breadcrumbs—mixed with bright lemon zest and fresh garlic—until toasted and crunchy and then try not to inhale them before garnishing this spicy anchovy pasta.
  • Salmon Nduja With Pickled Currants. Spicy nduja is traditionally made with pork, but because salmon is a fatty fish, it works well, too. This makes a sophisticated holiday starter that's well balanced thanks to a topping of tangy pickled currants.
  • Rock Shrimp Pasta with Spicy Tomato Sauce. This is one of our easiest Feast of the Seven Fishes recipes. All you have to do is add already-peeled shrimp to a tomato sauce spiked with fennel and chiles.
