Beef and Pasta Salad image

My husband and I like zesty pasta salads and have tried many different types. This delightful dish can be eaten warm or cold, so it's a perfect meal anytime of year.

Number Of Ingredients 8

3 cups spiral pasta, cooked and drained
1 medium green pepper, julienned
1 cup halved cherry tomatoes
1/2 cup sliced ripe olives
1 pound beef top sirloin steak, cut into strips
2 tablespoons canola oil
1 bottle (8 ounces) Italian salad dressing
1-1/2 cups shredded provolone or part-skim mozzarella cheese

Steps:

  • In a large bowl, combine the pasta, green pepper, tomatoes and olives. In a large skillet, stir-fry sirloin in oil until cooked as desired; drain. , If serving salad hot, add dressing to skillet and bring to a boil. Pour over pasta mixture; toss to coat. Add cheese; serve immediately. , If serving salad cold, let beef cool for 15 minutes. Add the beef, dressing and cheese to pasta mixture; toss to coat. Chill for at least 1 hour.

1 can (8 ounces) tomato sauce
1 cup reduced-fat Italian dressing
1 tablespoon chopped fresh basil leaves or 1 teaspoon dried basil leaves
1 tablespoon fresh dried oregano leaves or 1 teaspoon dried oregano leaves
1 cup sliced fresh mushrooms
5 roma (plum) tomatoes, coarsely chopped (1 1/2 cups)
1 large peeled or unpeeled cucumber, coarsely chopped (1 1/2 cups)
1 medium red onion, chopped (1/2 cup)
1 can (2 1/4 ounces) sliced ripe olives, drained

Steps:

  • Cook and drain pasta as directed on package. Rinse with cold water; drain.
  • Mix tomato sauce, dressing, basil and oregano in large bowl. Add remaining ingredients; toss.
  • Cover and refrigerate about 2 hours or until chilled but no longer than 48 hours.

I got this off the Campbell's site after searching ages for it. My friend makes this all the time and serves it with salad and it's a tasty, easy, and quick meal. It's also a decent hot pot luck dish. My friend also puts cheese on the top and bakes it to brown the cheese. I'm posting it so I don't loose it, lol.

Steps:

  • COOK beef and onion in skillet until browned. Pour off fat.

kosher salt and ground black pepper to taste

Steps:

  • Bring a large pot of salted water to a boil. Add shells and cook, stirring occasionally, until tender yet firm to the bite, about 9 minutes. Drain. Rinse with cold water, drain, and set aside.

1/2 lb. whole wheat spaghetti, uncooked
3 large carrots, cut into thin matchlike sticks (about 2 cups)
2 cups fresh pea pods, halved diagonally
1 large red pepper, cut into thin matchlike sticks (about 2 cups)
1/3 cup lime juice
1/3 cup lite soy sauce
2 Tbsp. honey
1 Tbsp. PLANTERS Peanut Oil
3/4 cup PLANTERS Unsalted COCKTAIL Peanuts
1-3/4 lb. boneless beef sirloin steak, well trimmed

Steps:

  • Cook spaghetti as directed on package, omitting salt and adding vegetables to the cooking water for the last 3 min. Meanwhile, blend lime juice, soy sauce, honey, oil and nuts in blender until smooth.
  • Drain spaghetti mixture, reserving 1/2 cup of the cooking water. Place spaghetti mixture and reserved cooking water in large serving bowl. Reserve 1/4 cup peanut dressing; toss remaining with spaghetti mixture. Refrigerate 1 hour.
  • Heat grill to medium-high heat. Grill steak 6 to 7 min. on each side or until medium doneness (160°F). Remove from grill; cover. Let stand 5 min. before cutting into slices.
  • Fan meat slices over spaghetti mixture; drizzle with reserved peanut dressing.

8 ounces rotelle pasta (or other small pasta shape)
6 cups broccoli stems
10 ounces well trimmed sirloin steaks
1 1/4 cups plain plain fat-free yogurt
3 tablespoons light mayonnaise
1 tablespoon balsamic vinegar
3/4 cup basil leaves
1 teaspoon salt
1 lb plum tomato, quartered
1 medium red onion, halved and thinly sliced

Steps:

  • Cook pasta in large pot of boiling water according to package directions.
  • Add broccoli spears during last 2 minutes of cooking, drain.
  • Meanwhile, preheat broiler.
  • Broil steak 4 inches from heat for 4 minutes per side for medium, or until done to taste.
  • Transfer steak to cutting board and thinly slice across the grain, on the diagonal.
  • Combine yogurt, mayonnaise, vinegar, basil, and salt in food processor and process until smooth.
  • Transfer dressing to large serving bowl.
  • Add steak and any juices accumulated on cutting board and toss to coat.
  • Add pasta, broccoli, tomatoes, and onion to bowl and toss again.
  • Recipe can be made ahead and refrigerated.
  • Bring back to room temperature before serving.

  • In a 4- to 6-quart Dutch oven, cook pasta according to package directions, adding corn for the last 3 minutes of cooking time. Using tongs, transfer corn to a large cutting board. Drain pasta. Rinse in cold water and drain again; set aside. Cool corn until easy to handle.
  • Meanwhile, coat an unheated large nonstick skillet with cooking spray. Preheat skillet over medium-high heat. Add beef strips. Cook for 4 to 6 minutes or until slightly pink in the center, stirring occasionally. (If using shredded beef, cook until heated through.) Remove from heat and cool slightly.
  • On a cutting board, place an ear of corn pointed end down. While holding corn firmly at stem end to keep in place, use a sharp knife to cut corn from cobs, leaving corn in planks; rotate cob as needed to cut corn from all sides. Repeat with the remaining ear of corn. In a large bowl, combine pasta, beef, tomatoes, basil, and the 2 tablespoons Parmesan cheese.
  • In a screw-top jar, combine vinegar, oil, garlic, salt, and pepper. Cover and shake well. Pour over pasta mixture; toss gently to coat. Gently fold in corn planks or place corn planks on top of individual servings. Serve immediately. If desired, garnish with additional Parmesan cheese.
