Beer-and-Mustard Pulled Turkey Recipe for the Instant Pot or Pressure Cooker image

This quick dinner of turkey thighs cooked in a barbecue-like sauce can be made in an instant pot electric pressure cooker or in a standard stovetop device.

Number Of Ingredients 11

2 teaspoons ground coriander
1 teaspoon dry mustard
1 teaspoon salt
1 teaspoon ground black pepper
1/2 teaspoon garlic powder
2 (1 1/4-to 1 1/2-pound) bone-in turkey thighs, skin removed
1 (12-ounce) bottle dark beer, preferably a porter
2 tablespoons packed dark brown sugar
2 tablespoons apple cider vinegar
1 tablespoon whole-grain mustard
1 tablespoon canned tomato paste

Steps:

  • Mix the coriander, dry mustard, salt, pepper, and garlic powder in a small bowl; rub the mixture over the thighs, coating them evenly and thoroughly.
  • Pour the beer into a 6-quart stovetop or electric pressure cooker; nestle the thighs into the beer.
  • Lock the lid onto the pot.
  • STOVETOP: Set the pot over high heat and bring it to high pressure (15 psi). Once this pressure has been reached, reduce the heat as much as possible while maintaining this pressure. Cook for 30 minutes.
  • ELECTRIC: Set the machine to cook at high pressure (9-11 psi). Set the machine's timer to cook at high pressure for 45 minutes.
  • Use the quick-release method to drop the pot's pressure to normal.
  • Unlock and open the cooker. Transfer the thighs to a carving board; cool for a few minutes. Debone the meat and chop it into small bits.
  • Set the stovetop cooker over medium heat or turn the electric cooker to its browning function; bring the liquid inside to a simmer. Cook until reduced to about half its volume when you opened the pot in the previous step, about 4 minutes.
  • Stir in the brown sugar, vinegar, mustard, and tomato paste until smooth. Cook for 1 minute, stirring all the while. Add the chopped turkey, stir well, and set aside off the heat or unplugged for a couple of minutes to heat through.

1 teaspoon paprika
1/2 teaspoon coarse salt
1/2 teaspoon black pepper
12 ounces beer
2 tablespoons flour
2 tablespoons tomato paste
1 cup beef broth (or chicken)
1 large onion
6 carrots

Steps:

  • Heat oil in pressure cooker ( medium).
  • Brown beef on both sides, then remove and set aside.
  • Add to same pan: small amount of beer and loosen/stir up bits.
  • Add flour and tomato paste to pan and cook over medium for one minute.
  • Place the meat and everything else ( and the rest of the beer ) in the pan.
  • Close this lid and cook on high pressure for about 1 hour.
  • Let pressure come down naturally.
  • Serve over rice or noodles.

2 bottles (12 ounces each) beer or nonalcoholic beer
3/4 cup German or Dijon mustard, divided
1/2 teaspoon coarsely ground pepper
1 fully cooked bone-in ham (4 pounds)
4 fresh rosemary sprigs
16 pretzel hamburger buns, split
Dill pickle slices, optional

Steps:

  • In a 6-qt. electric pressure cooker, whisk together beer, 1/2 cup mustard and pepper. Add ham and rosemary. Lock lid; make sure vent is closed. Select manual setting; adjust pressure to high and set time for 20 minutes. When finished cooking, allow pressure to naturally release for 10 minutes, then quick-release any remaining pressure., Remove ham; cool slightly. Discard rosemary sprigs. Skim fat from liquid remaining in pressure cooker. Select saute setting and adjust for high heat. Bring liquid to a boil; cook for 5 minutes., When ham is cool enough to handle, shred meat with 2 forks. Discard bone. Return ham to pressure cooker; heat through. To serve, place shredded ham on pretzel bun bottoms with remaining mustard and, if desired, dill pickle slices. Replace tops.

1 cup root beer, divided
1 cup ketchup
1 tablespoon brown sugar
1 tablespoon Worcestershire sauce
2 teaspoons liquid mesquite smoke flavoring
2 teaspoons grill seasoning (such as Montreal Steak Seasoning®)
1 teaspoon dry mustard
½ teaspoon browning sauce (such as Kitchen Bouquet®)
16 large hamburger buns, split and toasted

Steps:

  • Cut pork loin into 8 portions and sprinkle with salt and pepper.
  • Turn on a multi-functional pressure cooker (such as Instant Pot®) and select Saute function. Add pork and cook until browned, about 3 minutes per side. Pour in 1/2 cup root beer and cancel Saute function.
  • Close and lock the lid. Select high pressure according to manufacturer's instructions; set timer for 20 minutes. Allow 10 to 15 minutes for pressure to build.
  • While pork is cooking, mix remaining root beer, ketchup, liquid smoke, brown sugar, Worcestershire sauce, grill seasoning, mustard, and browning sauce in a large bowl. Set aside.
