BEER BATTERED LOBSTER MEDALLIONS

I created this recipe myself after seeing a similar dish on a supper club menu. It has been a smash on the occasions I served it.

Number Of Ingredients 11

1 medium lobster tail, for each serving
1 cup Bisquick (or similar baking mix)
1/2 cup cornstarch
1/2 teaspoon garlic powder
1/2 teaspoon onion powder
1/2 teaspoon cayenne pepper (or to taste)
8 ounces beer
1 egg
1 tablespoon hot sauce, to taste (I use Frank's)
oil (for deep frying)
drawn butter, for dipping (this is definitely not lo-cal You can use a mild tartar or a creamy fresh-herb dip of your own desig)

Steps:

  • Prepare Beer Batter--"the longer it sits, the better it gits".
  • Mix dry ingredients, set aside.
  • Mix liquids (incl. egg) add to dry and mix just until no longer lumpy.
  • While the batter sits covered on the kitchen counter (no refrig. necessary) shell the tails by cutting from the thick end over the hump of the top of the shell with a heavy duty kitchen scissors.
  • This is easiest if tails are partially frozen.
  • Slice tails into 1/2 inch thick medallions, drain on paper towels.
  • When 2 inches of frying oil is good and hot for deep frying, drop battered medallions, a single layer deep into hot oil, cooking in batches so as to prevent sticking together.
  • Drain on a paper grocery bag covered with paper towel.
  • Small batches can be kept warm in a medium high oven
  • Serve hot with drawn butter with rice or potato dish and a nice herb salad.
  • A semi sweet white wine goes nicely.
  • Any leftover batter can be used to fry up some cut veggies such as cauliflower, okra, onions, mushrooms or dill pickle slices, but MUST be used immediately or be tossed out.
  • If you do the veggies, wash 'em and coat 'em in a little flour or cornstarch to help the batter stick, if you like. (not imperative, but it'll help)

About 1 pound baby lobster
Salt
Splash vinegar
Laurel leaves
Freshly ground black pepper
Lettuce, for decoration (optional)
About 5 ounces papaya
About 5 ounces kiwi
About 1/8-ounce ketchup
About 1/4-ounce mayonnaise
About 1/2 cup brandy

Steps:

  • Bring a large pot of salted water to a boil, add lobster, lower the heat and cook for about 8 to 10 minutes with the vinegar, laurel and pepper.
  • Remove the loin of the lobster and cut it into medallions. Then prepare the lettuce bouquet and the papaya and kiwi pearls. To finalize add the sauce composed by ketchup, mayonnaise, salt, pepper and brandy.

2 quarts vegetable oil (for frying)
8 (4 ounce) cod fish fillets
salt and pepper
1 cup all-purpose flour
2 tablespoons garlic powder
2 tablespoons paprika
2 teaspoons salt
2 teaspoons ground black pepper
1 egg, beaten
1 (12 ounce) bottle beer

Steps:

  • Heat oil in a deep fryer to 365 degrees F (185 degrees C).
  • Rinse fish, pat dry, and season with salt and pepper.
  • Combine flour, garlic powder, paprika, 2 teaspoons salt, and 2 teaspoons pepper. Stir egg into dry ingredients.
  • Gradually mix in one beer until a thin batter is formed.
  • You should be able to see the fish through the batter after it has been dipped.
  • Dip fish fillets into the batter, then drop one at a time into hot oil.
  • Fry fish, turning once, until both sides are golden brown.
  • Drain on paper towels, and serve warm.

This is a SUPER EASY AND FAST not to mention CHEAP and NO MESS way to make a beer batter for your fresh fish while camping. Using only beer, your freshly caught fish, some oil for your skillet, and shake and pour buttermilk pancake mix containers found in your local supermarket. Great for camping!

1 cup beer, or as needed
1 (7 ounce) container shake and pour buttermilk pancake mix
2 pounds trout fillets
½ cup oil for frying

Steps:

  • Heat oil in a large skillet over medium heat.
  • Pour beer into the pancake mix container in place of the water it calls for. Make the batter as thick or thin as you prefer. Close the lid, give it a few shakes, and boom it's done.
  • Dip fish into the batter using a pair of tongs, or if you want to dirty a dish, pour the batter in a bowl first. If you cut your fish into smaller pieces, you can toss them into the container, close the lid and shake it a couple of times, then carefully remove the coated pieces.
  • Remove the fish from the batter using tongs, and place into the hot oil. Fry the fish until golden brown on both sides, 3 to 4 minutes per side.

¾ cup beer
1 ½ cups milk
4 cups pastry flour
1 tablespoon baking powder
½ teaspoon baking soda
2 tablespoons cornstarch
salt to taste
ground black pepper to taste
.063 teaspoon garlic powder
1 ½ pounds cod fillets
2 quarts vegetable oil for frying

Steps:

  • In a medium bowl, stir together flour, baking powder, baking soda, and cornstarch.
  • In a large bowl, beat together eggs and milk. Mix in beer. Stir in flour mixture. Season with salt, black pepper, and garlic powder.
  • In an electric deep fryer or a heavy saucepan, heat oil to 375 degrees F (190 degrees C).
  • Coat fish in batter, and submerge in hot oil. Fry until golden brown, about 4 to 5 minutes. Serve.

1 pound fish fillet or 1 pound uncooked peeled deveined large shrimp, thawed if frozen
3 to 4 tablespoons Original Bisquick™ mix
1 cup Original Bisquick™ mix
1/2 cup beer
1 egg
1/2 teaspoon salt

Steps:

  • Heat oil (1 1/2 inches) in heavy saucepan or deep fryer to 350°F. Lightly coat fish with 3 to 4 tablespoons Bisquick mix.
  • Mix remaining ingredients with hand beater until smooth. (If batter is too thick, stir in additional beer, 1 tablespoon at a time, until desired consistency.) Dip fish into batter, letting excess drip into bowl.
  • Fry fish about 2 minutes on each side or until golden brown; drain. Serve hot and, if desired, with tartar sauce.

2 large eggs
1 bottle light- or medium-bodied lager (12 ounces), cold
2 1/2 cups all-purpose flour (spooned and leveled)
Coarse salt
5 cups vegetable oil
2 1/2 to 3 pounds shrimp, firm fish fillets (such as cod), or desired vegetables (such as onions or pepperoncini), cut into pieces if necessary
2 cups buttermilk (if using onions)

Steps:

  • In a medium bowl, whisk eggs until smooth, then whisk in beer. Add 1 1/2 cups flour and 1 1/2 teaspoons salt and whisk until combined. Place 1 cup flour in a shallow bowl. Place a wire rack on top of a rimmed baking sheet; set near stove.
  • In a wide 6-quart pot fitted with a deep-fat or candy thermometer, heat oil to 375 degrees over medium. (The oil should bubble rapidly when a pinch of flour is added.) Working in small batches, lightly coat food in flour, then dip in batter, gently shaking off excess. Fry, turning halfway through, until browned and crisp, about 5 minutes per batch (adjust heat to maintain 375 degrees). With a slotted spoon, transfer food to rack to drain and discard any browned bits of batter. Season immediately with salt. Keep warm in a 200-degree oven.
