GRANDMA'S RUSSIAN TEA
I grew up drinking this tea at my grandmother's house. I now fix it at my house on really cold days, when I am sick (lots of vitamin C!), and at Christmas. It is perfect to let simmer on the stove to make the house smell good and to serve to guests. I have no idea why its called 'Russian' tea; that is just what my grandmother always called it. Use any tea you like. I've used regular black tea, decaf, and cinnamon spice, and it's all great. If using spiced tea, you may want to adjust the amount of cinnamon, cloves, and allspice. This is also great reheated!

Steps:
- Steep tea bags in boiling water until the tea is of desired strength, 4 to 5 minutes. Remove and discard tea bags.
- Combine 1 1/2 quarts water, cloves, and cinnamon together in a large pot; bring to a boil. Stir brewed tea, pineapple juice, sugar, orange juice concentrate, lemonade concentrate, and allspice into the boiling water to dissolve the sugar. Serve immediately or reduce heat to low and keep at a simmer until ready to serve.

I love this tangy beverage on a cold winter's morning when I want something tasty and hot, but don't want coffee! It makes a great gift from your kitchen, too! If calories are your concern, use an artificially sweetened orange drink mix, eliminate the sugar and sweeten to taste with sugar substitute.

- In a large bowl, combine instant tea powder, orange drink mix, lemonade powder, sugar, cinnamon and cloves. Mix thoroughly. Store in a sealed jar.
- To use, mix 3 to 4 tablespoons of mix with 1 cup hot or cold water. Adjust to taste.

REAL CITRUS SPICED RUSSIAN TEA (VIDEO)
Steps:
- In a pot, combine the water, oranges, lemons, cinnamon, cloves, nutmeg and sugar and bring to a boil. Boil for about 5 minutes and remove from heat.
- Add the tea bags into the mixture and allow to steep covered for about 5 minutes. Remove the fruit, spices and tea bags (without squeezing out the bitter tannins out of the bag).
- Taste and adjust sugar to taste. Serve immediately, reheat if necessary.

- In a large bowl, combine the first seven ingredients. Store in an airtight container in a cool, dry place for up to 6 months., To prepare hot tea: Place 2 teaspoons tea mix in a mug; stir in boiling water until mix is dissolved. Yield: 1 serving.

RUSSIAN TEA CAKES
Steps:
- First, brown the butter: Place the butter in a medium saucepan over low heat to cook. Check it after about 7 minutes; it should be a medium-brown color, not too light but not too burnt. Once it reaches that color, take it off the heat and let it cool. Refrigerate to continue to cool for about 30 minutes.
- Preheat the oven to 350 degrees F. Line 3 half sheet pans with parchment paper.
- Add the cold browned butter, flour, powdered sugar, salt, vanilla extract and cinnamon to a food processor; process until light and fluffy. Transfer to a large bowl. Add the walnuts and mix with a rubber spatula until combined.
- Using a small ice cream scoop, portion 48 mounds of the dough onto your prepared sheet pans, spacing them 2 inches apart. Place in the freezer to cool for 15 minutes.
- Bake until the cookies are firm and smell nutty and toasty, 15 to 18 minutes. Rotate the pans 180 degrees halfway through baking.
- Meanwhile, place additional powdered sugar in another large bowl. Once the cookies are out of the oven, let cool for exactly 6 minutes 30 seconds then toss in the powdered sugar. Enjoy!
MAMA'S OLD-FASHIONED RUSSIAN TEA
Our instant Russian Tea mixes with Tang and instant tea powder are good, but nothing can compare to coming in to the wonderful aroma of this old-fashioned beverage as it simmers on the stove! It brings back special memories of Christmas time when I was a child and this was our "special holiday treat" during World War II.

Steps:
- Boil water with cloves and cinnamon sticks for 20 minutes in large non-aluminum pot.
- Remove from heat, add the tea bags and cover.
- Allow mixture to"steep" for at least 4 hours, preferably overnight.
- After steeping process is completed, combine in another sauce pan the orange, pineapple, and lemon juices with the sugar.
- Heat gently, stirring to melt and mix the sugar.
- Drain spices from tea mixture.
- Combine the tea and juice mixtures.
- Heat and enjoy!
- NOTE: Preparation time does not include"steeping time".
