BEERBECUE BEEF FLANK STEAK
There are very few things in life as beautiful as a glistening, smoky flank steak on a grill, being painted with beerbecue sauce. Any beer will do, but try to use something on the more aggressive side if you can. The subtle bitterness from the beer in the background really makes this sauce pop.

- Pour ketchup, molasses, and white vinegar in a bowl; add white sugar, 2 teaspoons black pepper, 1 teaspoon salt, cayenne pepper, cumin, allspice, and cinnamon. Whisk until sauce is smooth. Pour in beer.
- Place flank steak into a non-reactive container; pour sauce over meat. Poke at least 100 holes per side in the flank steak using 2 forks.
- Cover container with plastic wrap and marinate beef 8 to 12 hours (up to overnight).
- Remove flank steak from marinade and pat the meat dry with paper towels. Pour leftover marinade into a saucepan, place over medium heat, and bring to a boil. Reduce heat to low and simmer for 5 minutes to make a basting sauce.
- Preheat an outdoor grill for high heat and lightly oil the grate. Season flank steak with salt and black pepper.
- Grill flank steak for 2 1/2 minutes; turn meat around on grate to a 45-degree angle to make diamond grill marks; grill for 2 1/2 more minutes. Repeat on second side, turning meat 45 degrees after 2 1/2 minutes and grilling 2 1/2 more minutes.
- Flip steak to original side and paint meat with sauce. Continue to grill until sauce has glazed onto the meat, about 30 seconds. Turn meat over and brush other side with sauce. Sauce will burn if cooked too long. Repeat 1 more time, brushing and glazing sauce onto meat for about 30 seconds on each side. An instant-read meat thermometer, inserted into the thickest part of the flank steak, should read 125 degrees F (52 degrees C).
- Transfer steak to a platter and let rest 5 to 10 minutes before slicing lengthwise down the center; cut each half across the grain into slices about 3/8 inch thick. Drizzle slices with more sauce to serve.

BRAISED FLANK STEAK WITH LEMON AND GARLIC
This is one of my mother's best recipes from my childhood. Flank steak was cheap back then, so feel free to substitute chuck steak or flap meat. The ingredients are simple but very flavorful. It's excellent with buttered noodles or white beans, and a green vegetable such as broccoli or asparagus.

- Mix the flour and garlic powder together in a shallow dish. Season with salt and pepper to taste. Dip the steak in the flour mixture evenly coating both sides. Set aside. Discard remaining flour mixture.
- Heat the cooking oil in a skillet over medium-high heat. Place the steak in the skillet and cook until browned on both sides, about 5 minutes for each side. Stir in the chicken broth, lemon juice, garlic, and cloves. Bring the mixture to a boil over medium-high heat, then reduce heat to low. Cover, and simmer until steak is tender, about 1 1/2 hours.
- To serve, remove steak from the skillet, and slice across the grain in thin strips. Place on serving plates, and ladle sauce over meat.

- Sprinkle both sides of the steak with the oregano, salt and pepper.
- Heat a large nonstick skillet over medium high.
- When the pan is very hot, add the steak.
- Cook the steak for 4 minutes, or until it lifts easily off the pan and is browned on the underside.
- Turn the steak and cook another 4 minutes.
- Add the vermouth and tomatoes to the pan, cover, reduce heat to medium, and simmer 25 minutes.
- Turn heat up to medium high and cook another 5 minutes, or until the liquid in the pan has evaporated.
- Transfer the meat to a carving board, and let sit 5 minutes before cutting on the diagonal into very thin strips.
- Serve the steak strips fanned out on the plate, and spoon some of the tomato from the pan over the meat.
STEAK WITH BEER-BRAISED ONIONS

- Cook the bacon in a large nonstick skillet over medium-high heat, stirring occasionally, until crisp, about 6 minutes. Add 1 tablespoon olive oil, then add the onion and cook until softened, about 3 minutes. Add the thyme sprigs, 1/2 teaspoon salt and a few grinds of pepper and cook until the onion is lightly browned, about 5 more minutes. Add the beer, reduce the heat to medium and simmer until reduced by three-quarters, about 15 minutes. - Prepare a non-reactive container or freezer bag appropriately sized for the steak(s). Thinly slice shallot, mince or roughly chop the garlic. Pick the thyme leaves (optional).
- Add all marinade ingredients to container (beer should be last) and whisk until well combined. Add steak and make sure it is well covered with marinade.
- Marinate for 3 to 24 hours, covered and refrigerated. Occasionally move the steak around to ensure all of its surfaces are adequately accessed by the marinade. Bring to room temperature before cooking.

CARNE ASADA: COLOMBIAN-STYLE GRILLED FLANK STEAK

- In a bowl or large measuring cup, whisk together the vegetable oil, 1/2 bottle of beer, orange juice, lime juice, vinegar, and Worcestershire sauce.
- Whisk in the garlic, cumin, Sazon Goya, and salt and pepper to taste.
- Place the flank steak inside a resealable plastic bag and add the marinade mixture. Seal the bag tightly, then leave the steak to marinate overnight in the fridge.

Add the onions, peppers, and garlic to the pot and stir to coat with oil, then sprinkle with 1/2 teaspoon of salt. Saute until the onions soften, about 5 minutes. Pour the beer into the pot and scrape the bottom of the pot with a wooden spoon to loosen any stuck bits of onion. Bring the beer to a boil for 1 minute to boil off some of the alcohol.
- 2. Slice and season the flank steak, then add to the pot: While the peppers and onions are cooking, slice the flank steak into 2 inch pieces and sprinkle with the salt and Ancho chile powder.
