Beet Salad with Goat Cheese image

This is a delicious and easy salad which takes little time and is a great meatless main course. It uses beets, goat cheese, candied walnuts and baby greens. For a main dish salad, add chicken. Feel free to include more of your favorite vegetables too.

4 medium beets - scrubbed, trimmed and cut in half
⅓ cup chopped walnuts
3 tablespoons maple syrup
1 (10 ounce) package mixed baby salad greens
½ cup frozen orange juice concentrate
¼ cup balsamic vinegar
½ cup extra-virgin olive oil
2 ounces goat cheese

Steps:

  • Place beets into a saucepan, and fill with enough water to cover. Bring to a boil, then cook for 20 to 30 minutes, until tender. Drain and cool, then cut in to cubes.
  • While the beets are cooking, place the walnuts in a skillet over medium-low heat. Heat until warm and starting to toast, then stir in the maple syrup. Cook and stir until evenly coated, then remove from the heat and set aside to cool.
  • In a small bowl, whisk together the orange juice concentrate, balsamic vinegar and olive oil to make the dressing.
  • Place a large helping of baby greens onto each of four salad plates, divide candied walnuts equally and sprinkle over the greens. Place equal amounts of beets over the greens, and top with dabs of goat cheese. Drizzle each plate with some of the dressing.

1 small red beet
1 tablespoon extra-virgin olive oil
12 frozen mini phyllo shells
1 4-ounce log goat cheese
1 tablespoon heavy cream or milk
1 teaspoon honey
Kosher salt

Steps:

  • Preheat the oven to 375 degrees F. Put the beet on a sheet of foil, drizzle with the olive oil and wrap to enclose. Bake until easily pierced with a knife, 60 to 70 minutes. Let cool, then peel and chop.
  • Bake the phyllo shells as the label directs. Let cool.
  • Pulse the goat cheese and heavy cream in a mini food processor until smooth. Add the chopped beet, honey and 1/4 teaspoon salt. Pulse until very smooth and bright pink, about 1 minute.
  • Transfer the beet mixture to a large resealable plastic bag and snip off a corner; pipe into the phyllo shells. Refrigerate at least 20 minutes before serving.

These roasted beets with goat cheese are heaven! Earthy, tender beets paired with creamy goat cheese and topped with fresh chives? Perfection.

4 beets (you can roast up to 8 beets at a time; use 4 for serving)
Olive oil
Kosher salt
2 ounces soft goat cheese (optional)
Thinly sliced chives, for garnish

Steps:

  • Preheat the oven to 425 degrees Fahrenheit.*
  • Wash the beets. Trim off all but about 1 inch of the beet greens (you can save them for later and use them in salads). Leaving on the stem helps keep the beets from "bleeding" out red juice in the oven.
  • Rub the beets lightly with olive oil. Place the beets in a covered oven proof dish. (You also can wrap each beet individually in aluminum foil and place them on the oven grates).
  • Roast the beets for 45 minutes to 1 1/2 hours, depending on the size and freshness, until tender when pierced with a fork. Check every 10 minutes until tender; we've found medium sized beets take about 1 hour.
  • Allow them to cool for a few minutes. Then place them under cool water and rub off the skins with your fingers. You can serve immediately, or refrigerate the whole beets until serving and serve them cold.
  • To serve, slice the beets into rounds and arrange them on a plate. Drizzle the top with olive oil and sprinkle with 1 pinch kosher salt. Top with goat cheese dollops and thinly sliced chives.

Beautiful, sweet, twice-roasted beets and baked goat cheese with crunchy nuts and slightly bitter greens is my idea of an easy, healthy, beautiful fall lunch! Or dinner, or breakfast, or brunch. Serve with toasted walnut bread.

½ cup chopped walnuts
1 large beet, top and bottom trimmed and beet greens retained
1 tablespoon walnut oil, or more to taste
2 ounces soft goat cheese
kosher salt and freshly ground black pepper to taste
2 tablespoons champagne vinegar
1 cup reserved beet greens, cut into very thin slivers
2 teaspoons chopped fresh chives

Steps:

  • Preheat oven to 275 degrees F (135 degrees C).
  • Spread walnuts onto a baking sheet and toast in the preheated oven until the nuts turn golden brown and become fragrant, about 45 minutes. Watch the nuts carefully because they burn quickly. Set walnuts aside to cool to room temperature.
  • Turn oven up to 375 degrees F (190 degrees C). Crinkle up a piece of aluminum foil and place it into an oven-safe dish (such as a pie dish) to act as a disposable rack. Place beet onto foil.
  • Bake in the preheated oven until the beet just starts to turn tender, about 45 minutes. Wrap beet in aluminum foil and let cool to room temperature.
  • Turn oven temperature up to 400 degrees F (205 degrees C).
  • Peel beet with a sharp paring knife; peel skin from beet. Cut beet in half and cut halves into thick half-moon-shaped slices.
  • Drizzle walnut oil in a baking dish and brush oil over the bottom of the dish; arrange beet slices in the dish in a single layer. Crumble goat cheese into the empty spaces and over beets. Sprinkle with kosher salt and black pepper.
  • Bake beet and cheese in oven until beet pieces are sizzling and the edges of the cheese are slightly browned, about 15 minutes. Cool slightly, about 10 minutes.
  • Drizzle warm beet and cheese with vinegar and top with roasted walnuts, beet greens, and chives. Serve warm.

1 can(s) pillsbury home style biscuits
1 can(s) sliced beets
1/2 - red onion sliced thin
1/4 cup(s) apple cider vinegar
1/3 cup(s) canola oil
1 tablespoon(s) oregano, dried
3 tablespoon(s) water
1 - small log goat cheese
1 cup(s) olive oil for brushing

Steps:

  • In a large bowl add canola oil, Apple cider vinegar, 3 tbsp of water and 1 tbsp of oregano. Salt and pepper to taste. Mix well. Add beets and sliced red onion.set aside.
  • Preheat oven 375. Open pillsbury biscuits and separate each biscuit in two. Place each half into muffin pan pressing into pan. Brush with olive oil and sprinkle lightly with oregano. Place in oven for 10 minutes until lightly brown.
  • While biscuits are in oven, place beets in small chopper a tablespoon at a time (about half) and chop just slightly s you still have small pieces.
  • Remove biscuits from oven. Make indent with a small spoon in center of each biscuit. Now fill with beet mixture (about 1/2 teaspoon each). Then place crumbles of goat cheese on top. Also, about half teaspoon of cheese. Brush with olive oil again and sprinkle with dried oregano. Bake another 15 minutes until brown and crispy. Can be served with more olive oil or olives. Enjoy!

  • ROAST THE BEETS: Cut off the green stems of the beets. Scrub the beets under running water to remove dirt and sand. Oil the beets, then wrap tightly in tin foil. Place them on a foil-lined pan (in case they drip) and roast for about an hour or until tender. Remove from oven and let cool a bit. Over the sink, slide off the skins. Wash your hands right away to avoid stains from the beet juice. Slice thinly - about 1/16 to1/8 inch - using a sharp knife. See Note 1 for shortcut.
  • PREPARE PUFF PASTRY: Unroll the sheet of puff pastry and lay it on a parchment- or foil-lined baking pan. Blend water and egg to create an egg wash. Lightly brush puff pastry with egg wash. Cut pastry in half to make two pieces (this is optional for easier handling).
  • ASSEMBLE, BAKE, SERVE: Crumble half the goat cheese on the puff pastry leaving a 1/2 inch edge all around. Cover with the beet slices, overlapping a bit. Sprinkle with salt and pepper.
