From time to time I receive e-mails asking some common questions for an Authentic Carne Asada recipe, the first one being how to marinate the meat. I always give out the same answer: every cook or grill master has their own unique way of seasoning their meat. I hope you enjoy this delicious recipe.

2 pounds of flank steak or skirt steak
The juice of 1 orange
The juice of 2 limes
1/4 cup of light beer
2 tablespoons of Kikkoman Soy Sauce
2 tablespoons of vegetable oil
Fresh ground pepper to taste
1 large white onion sliced (optional)
Vegetable oil to brush the grill before grilling
Corn tortillas
Guacamole
Salsa
Lime wedges
Grilled green onions and nopales or a salad of your choice.

Steps:

  • Place the flank steak in a large baking dish and, if using the sliced onion, spread the slices over the meat.
  • In a medium-sized bowl mix together the orange juice, lime juice, light beer, Kikkoman soy sauce, vegetable oil, and freshly ground black pepper.
  • Pour the marinade over the meat; cover with a plastic film and refrigerate for at least one hour.
  • Light up your charcoal grill, or preheat your gas grill. (You can also use a cast iron grill pan, the ones you use over the stove top). And brush your grill with a little vegetable oil as this will prevent the meat from sticking.
  • Remove meat from marinade and pat dry. Place meat on the grill and cook for 8 to 10 minutes per side. (Cooking time will depend on the meat thickness and your personal preferences, either medium or well done). Remove meat from grill and place it on your cutting board. Slice it and serve it with corn tortillas and other garnishes mentioned above.
  • If you would like to have the same effect as that of the Mexican-American restaurant, place the cooked meat on a preheated cast iron pan, add a few drops of Soy Sauce and serve immediately. Enjoy!

This is an amazing recipe for carne asada. I tried probably thirty different recipes until I found this one. Now this is the only one I will make. It is just that good.

5 lbs flank steaks
1/2 cup vegetable oil
1 cup red wine vinegar
1 cup lemon juice
1/2 cup orange juice
1 cup water
1/4 cup garlic (peeled, fresh)
1 1/2 tablespoons white pepper
1 1/2 tablespoons salt
2 tablespoons ground cumin
2 tablespoons chili powder
1 tablespoon ground cloves
1/2 orange (sliced)
1/2 bunch fresh cilantro (chopped)

Steps:

  • Mix all marinade ingredients together to combine. Marinate flank steak in the mixture in the refrigerator for one hour or more. Remove the steak from the marinade and barbecue meat until done.
  • Cut into strips or dice meat, and serve with warm corn tortillas with salsa and guacamole. Or, plase in flour tortilla and roll up burrito-style with beans, rice, cheese, and sour cream.

Traditional Mexican Carne Asada With Fresh Salsa image

An excellent Mexican tradition, excellent for groups, or even just for two. The best way to cook the beef is with a standard charcoal grill, but gas works too. Prep and Cook time vary, but usually you can start the charcoal at the beginning of prep and it will be hot by the time you're ready. TIP: Have the butcher thin slice the roast for you if not already thin sliced, it's much easier and saves a lot of prep time. In place of the spices listed, you may also use Carne Asada Seasoning, or even Season Salt like Johnny's or Lowery's.

3 lbs beef roast, thin sliced
1 bunch cilantro
5 tablespoons paprika
3 tablespoons garlic powder
2 tablespoons salt
1 tablespoon cayenne pepper
1 cup lime juice, fresh squeezed
3 cups tomatoes, diced
1/4 cup jalapeno pepper, diced
1/4 cup onion, diced
20 corn tortillas

Steps:

  • In a large mixing bowl, separate slices of beef and mix with half cup of lime juice until coated evenly.
  • Combine paprika, garlic powder, salt and cayenne pepper. Generously sprinkle on both sides of the sliced beef.
  • Chop cilantro, reserving half. Sprinkle cilantro between slices of beef. Cover beef and allow to rest in the refrigerator while preparing salsa.
  • Combine diced tomatoes, diced jalapeños, diced onions, remaining cilantro and 1/4 cup lime juice. Salt and Pepper to taste.
  • When the grill is nice and hot, use a meat fork pushed into a half of an onion to wipe down the grill surface.
  • Evenly spread out the sliced beef over the surface of the grill. With long metal tongs, carefully watch the beef and turn it as needed to cook evenly. Carefully test the meat for doneness by tearing the meat. When it pulls apart easily, it's done.
  • Heat a some corn tortillas in the microwave for a few seconds between moistened paper towel or lightly steam on the stove.
  • Pull cooked beef into strips and lay in the middle of a tortilla, add a spoonful of salsa mixture, and a bit of fresh lime juice. Enjoy!

The spices found in the achiote rojo has a very complex and have a deep flavor. Avoid the urge to taste it before diluting it. You will most definitely get the wrong impression of this Mayan mix. If you have trouble finding achiote rojo in your regular market, try a store that caters to the local Hispanics. I direct grill this recipe with a mix of regular charcoal and mesquite charcoal. But it's your choice... you're the chef! Prep time does not include time to marinade.

1 ounce achiote paste
1/2 cup chicken stock
1 teaspoon chili powder
1 teaspoon liquid smoke
1/4 cup fresh cilantro, chopped
1/4 cup onion, chopped
1 garlic clove, chopped
2 lbs flank steaks

Steps:

  • Break up achiote rojo into a powder, or as best you can as it is a little moist.
  • Mix remaining ingredients except meat into the achiote rojo. Mix well to break up any large pieces of the achiote.
  • Place meat in a container or your choice to marinade in and pour the achiote rojo mixture on and work it into the meat.
  • Cover and marinade for as long as possible. Time DOES NOT indicate marinade time.
  • Get the grill going, pop a beer and get busy. Remember, the wood charcoal is very hot. I get it so my hand can stand the heat test for 2-3 seconds. Closer to 2 seconds, though.
  • Put the meat on the grill. Let the meat get good and charred then turn over. Grill for a few minutes and the meat is almost done. At this point make a foil sack to put the meat in . Push the coals away from one side of the grill, put meat in foil sack so that all the meat is covered. Then just put the meat sack on the side where no coals are. They will finish cooking in their own juices.
  • When done let the meat rest a few minutes. Cut on a bias and roll 'em up in tortillas and salsa of choice.

  • In a medium bowl combine everything except steak. Either add steak to bowl or place steak in large ziplock bag and then add marinade.
  • Ensure steak is well coated with marinade and cover bowl or close bag and place in refrigerator to marinade for at least 30 minutes. Preferably leave to marinade in refrigerator for a couple of hours.
  • Heat grill or place grill pan over high heat until hot. Make sure either grill or pan are very hot.Have a sheet pan ready with foil to place steak onto as it is cooked.
  • Place steak on grill or grill pan. Times vary per cut of steak and thickness of steak.For skirt steak: cook on each side for 2-3 minutesFor flank steak: cook on each side for 8-10 minutes For other steaks: coon on each side for 3-4 minutes. Cook until desired doneness. Highly recommend not cooking skirt or flank steak for any longer to avoid tough, dry meat. Use thermometer if you want to ensure accurate doneness.
