¾ cup lukewarm water
3 ½ teaspoons active dry yeast
2 large eggs
½ cup whole milk
3 tablespoons unsalted butter, melted
¼ cup granulated sugar, plus 2 tablespoons
4 cups bread flour, plus more for dusting
½ teaspoon kosher salt
8 cups canola oil, for frying, plus more for greasing
powdered sugar, for topping

Steps:

  • Pour the water into a medium bowl or large liquid measuring cup and sprinkle the yeast over the top. Let stand for about 5 minutes, until foamy.
  • Add the eggs, milk, melted butter, and sugar, and whisk to combine.
  • In a large bowl, whisk together the flour and salt.
  • Pour the wet ingredients into the dry ingredients, stirring with a flexible spatula to form a shaggy dough. Turn the dough out onto a clean surface and use your hands to knead until it comes together in a smooth ball, about 2 minutes.
  • Grease a clean large bowl with canola oil. Transfer the dough to the greased bowl and cover tightly with plastic wrap. Let the dough rise in a warm place until doubled in size, about 1 hour.
  • Punch the dough down with your fist, then turn it out onto a lightly floured surface.
  • Roll the dough into a large rectangle, about ¼ inch (6 mm) thick. With a sharp knife, cut the dough into 2-inch (5 cm) squares, then transfer the squares to a baking sheet lined with parchment paper.
  • Heat the canola oil in a large pot over medium-high heat until it reaches 350˚F (180˚C).
  • Lower the dough squares, 3-4 at a time, into the hot oil. As soon as the beignets puff up, use tongs or a kitchen spider to gently flip them over. Fry until golden brown on both sides, flipping as needed, 2-3 minutes more. Transfer the beignets to a wire rack to drain.
  • Dust the beignets with powdered sugar and serve warm.

Steps:

  • In a bowl of a kitchen aid mixer dissolve yeast in warm water. Add the milk and next 5 ingredients. Then beat in flour, 1 cup at a time, on medium-high speed for 1 minute. Dough will be sticky. Work 1/4 of the dough at a time. Place on a well-floured board and roll dough to about 1/8 inch thick. Cut dough into 2 inch squares (irregular shapes are OK). Preheat oil to 370 degrees. Fry squares in oil, just a few at a time. When they rise to the surface, flip and cook until golden brown. Drain on paper towels. Dust with powdered sugar, or cinnamon sugar. Serve warm.

1 package dry yeast
1 1/2 cups warm water (just above body temperature, around 110 degrees F)
1/2 cup sugar
2 eggs
1 cup milk
7 cups flour
1 teaspoon salt
1/4 cup shortening
Vegetable oil, for frying
Powdered sugar

Steps:

  • In a bowl of a standing mixer, sprinkle the yeast over the warm water and stir to dissolve. Then add the sugar, eggs, and milk and blend with a paddle attachment. Add half the flour, salt, and shortening and blend well. Add the remaining flour and continue mixing to form a dough. Place the dough on a flour work surface and form into a ball. Place the dough in a greased bowl, and cover with plastic wrap then refrigerate overnight.
  • The next day, punch down the dough on a work surface, then cover it with a damp towel, and let it rest for 15 minutes. Then roll the dough into a rectangle 1/4-inch thick. With a pizza cutter, cut into 2-inch squares.
  • Heat some oil for deep fat frying to 365 degrees F. Drop in the beignets, 3 or 4 at a time, and fry on both sides until golden brown. They will look like pillows. Drain them on a brown paper bag and dust extremely heavily with powdered sugar.

1 ½ cups warm water (110 degrees F/45 degrees C)
½ cup white sugar
1 teaspoon salt
2 eggs
1 cup evaporated milk
7 cups all-purpose flour
¼ cup shortening
1 quart vegetable oil for frying
¼ cup confectioners' sugar

Steps:

  • In a large bowl, dissolve yeast in warm water. Add sugar, salt, eggs, evaporated milk, and blend well. Mix in 4 cups of the flour and beat until smooth. Add the shortening, and then the remaining 3 cups of flour. Cover and chill for up to 24 hours.
  • Roll out dough 1/8 inch thick. Cut into 2 1/2 inch squares. Fry in 360 degree F (180 degrees C) hot oil. If beignets do not pop up, oil is not hot enough. Drain onto paper towels.
  • Shake confectioners' sugar on hot beignets. Serve warm.

Steps:

2 tablespoons vegetable shortening
3/4 cup (6 ounces) warm water
1 1/4 teaspoons active dry yeast
1/3 cup (67 grams) granulated sugar
1/2 cup evaporated milk
1 large egg, beaten
3 1/2 cups (455 grams) all-purpose flour, plus more for dusting
1/2 teaspoon kosher salt
1/2 cup confectioners' sugar, for dusting
Cafe au lait, optional, for serving

Steps:

  • Grease a large bowl with oil. Line a large sheet pan with paper towels.
  • Melt the vegetable shortening. Set aside to cool.
  • Add the water, yeast and sugar to the bowl of a stand mixer. Hand whisk to combine and set aside to bloom, 5 to 10 minutes.
  • Add the evaporated milk and egg to the bloomed yeast and whisk to combine. Add the flour and salt. Using a stand mixer with the dough hook attachment, mix on level 3/10 until thoroughly combined, about 5 minutes. Add the shortening and mix on level 5/10 until the dough is smooth, 4 to 5 minutes. The dough should be translucent when a small bit is stretched out with your fingers.
  • Transfer the dough into the oiled bowl with a dough scraper. Cover with plastic or a towel and set aside until it doubles in size, about 2 hours.
  • Heat 4 inches of oil in a large Dutch oven or deep fryer to 360 to 370 degrees F.
  • On a clean workspace dusted with flour, roll out the dough to a 1/4-inch thickness, dusting with flour as needed. Cut the dough into 2 1/2-inch squares. Working in batches, carefully transfer into the oil. After dropping the squares in the oil, flip after 15 seconds and continue to flip every 15 seconds for the first minute or so. This will prevent a "hump" from forming. Fry until they are golden brown and cooked through, about 2 minutes. Transfer them to the prepared sheet pan to drain. Dust generously with confectioners' sugar and serve immediately with cafe au lait if using.

2 tablespoons unsalted butter, softened
1/2 cup whole milk
1 large egg
8 cups safflower oil, for bowl and frying

Steps:

  • Using a standing mixer fitted with a dough hook, mix together yeast, warm water, and granulated sugar. Let stand until foamy, about 5 minutes. In a separate bowl, whisk together flour, salt, and nutmeg. While mixing yeast mixture on medium speed, add butter. In a smaller bowl, lightly whisk together milk and egg using a fork before adding to the yeast-butter mixture. Turn out dough onto a lightly floured surface and punch down. Using a lightly floured rolling pin, roll out dough to a 12-inch square. Using a pizza wheel or sharp knife, cut dough into 3-inch squares. Transfer squares to a floured baking sheet and cover loosely with plastic wrap. Let rise in a warm, draft-free spot for 30 minutes.
  • Meanwhile, heat oil in a medium pot or deep-fryer until it registers 350 degrees on a deep-fry thermometer. Working in batches, add a few squares to the oil and fry, rolling them around constantly with a slotted spoon or spider, until golden brown all over, 1 to 2 minutes. Transfer beignets to a paper towel-lined baking sheet to drain. Coat with confectioners' sugar, and repeat process with remaining dough and more confectioners' sugar. Serve warm.

250g strong white bread flour, plus extra for dusting
25g caster sugar
125g evaporated milk
1 medium egg
25g unsalted butter, melted
1.5l rapeseed or vegetable oil, for the bowl and deep-frying

Steps:

  • Mix together the yeast, flour, sugar and 1 tsp sea salt in the bowl of a stand mixer. Whisk together the evaporated milk and egg and tip into the bowl with the melted butter and 60ml just-boiled water. Knead on a medium speed for 2 mins in the stand mixer, or for 5 mins on a lightly floured work surface, until smooth. Shape the dough into a ball and put in a large, lightly oiled bowl.
