BENNIGAN'S SHRIMP PASTA
Make Bennigan's Shrimp Pasta with mushrooms, tomatoes, and creamy white sauce.

Steps:
- Cook pasta as directed on package
- Whisk together white sauce mix and milk in a bowl.
- Melt butter in a large skillet over medium heat. Add mushrooms and onions and cook, stirring occasionally, 8 minutes or until lightly browned and soft. Add garlic; cook, stirring, 1 minute until fragrant. Add ale, white sauce mixture, and tomatoes.
- Bring to a boil and stir constantly until sauce thickens. Add shrimp; reduce heat to medium-low and simmer 2 to 3 minutes until cooked through.
- Drain pasta and place in a large serving bowl. Add shrimp and sauce; toss to mix and coat. When serving, sprinkle with the scallions and cheese.

BENNIGANS MONTE CRISTO SANDWICH
Bennigan's makes the most awesome Monte Cristo sandwiches. A great break from the usual toasted ham & cheese.

Steps:
- Place turkey and Swiss cheese on one slice of bread and ham and American cheese on another slice of bread.
- Place third slice.
- in-between and secure the triple-decker sandwich in the corners with tooth picks.
- Place egg in mixing bowl, add water and beat together.
- Add salt, sugar, flour, and baking powder.
- Beat batter until smooth.
- Dip sandwich in batter and carefully cover all the sides and surface.
- Carefully place in hot oil and fry until golden.
- When sandwich has turned a warm gold color remove from hot oil and place on paper towel.
- Let cool for a few minutes before removing the tooth picks.
- Before serving slice into fourths and sprinkle.
- with powder sugar.
- Serve with Raspberry jam.
CHEF JOHN'S SANTA MARIA-STYLE BEANS
Classic Santa Maria-style beans are made with a special variety of pink beans called pinquitos. Steps:
- Place pink beans into a large container and cover with several inches of cool water; let stand 8 hours to overnight. Drain.
- Place drained beans in a stockpot with enough cold water to cover. Bring to a simmer and cook until almost completely tender, about 1 hour 45 minutes.
- While beans are simmering, cook and stir bacon in a large saucepan over medium heat until cooked through but not crispy, 5 to 7 minutes. Add ham; cook and stir until ham is heated through, about 1 minute. Stir garlic into ham mixture and cook until garlic is fragrant, about 1 minute more. Add tomatoes, 1/2 cup water, ketchup, sugar, dry mustard, paprika, chili powder, salt, chipotle chile powder, and oregano. Bring to a simmer, reduce heat to low, and cook until flavors blend, about 30 minutes.
- Drain beans, reserving 1 cup of the cooking liquid. Combine beans, reserved liquid, and tomato mixture in the beans stockpot; bring to a simmer, reduce heat to low, and cook, stirring occasionally, until beans are tender and mixture has thickened, about 30 minutes.
