CHICKEN, SHRIMP AND SAUSAGE CAJUN PASTA
This is a spicy dish. If you do not tolerate heat, adjust spices or omit cayenne and Cajun seasonings and use mild sausage.

Steps:
- 1. Cook pasta per directions on box, set aside.
- 2. In large Dutch oven, brown chicken and sausage in hot oil. Remove and drain.
- 3. Add onion, green and red peppers, celery, bell pepper, thyme, oregano, paprika, salt, cayenne pepper and Cajun seasoning to the pan. Cook and stir for about 5 minutes until onions and peppers are tender.
- 4. Add pasta, tomatoes with juice and tomato sauce, chicken and sausage into the Dutch oven. Bring to a boil.
- 5. Stir in shrimp and parsley. Cover and cook for 5-8 minutes longer or until shrimp curl and turn pink. Serve.
ONE-POT CAJUN FETTUCCINE ALFREDO PASTA RECIPE BY TASTY

Steps:
- In a small bowl, combine all spices for the cajun seasoning and mix together. Set aside. Store any extra in an airtight container for future use.
- In a heavy bottom pot (such as a Dutch oven), heat 2 tablespoons of olive oil over medium heat.
- Add the sliced chicken and 2½ tablespoons of the prepared cajun seasoning.
- Add the andouille sausage and cook until the chicken is no longer pink, about 4-5 minutes.
- Remove the meat from the pot and add the remaining olive oil.
- Add the garlic, diced peppers and onions and cook until the onions are transparent and softened, about 5 minutes.
- Add the milk and stir so that the seasoning is incorporated into the liquid.
- Turn the heat to high and bring to a boil.
- Add the uncooked fettuccine, stirring constantly until the noodles are al dente, about 10 minutes.
- On low heat, add the meat back in and stir so that it's evenly incorporated.
- Add the cheese and parsley, and stir. Remove from the heat.
- Enjoy!

Steps:
- Heat butter and olive oil in a large skillet pan over medium-high heat. Add sausage, frozen vegetables, and mushrooms. Saute until sausage is almost fully cooked, onions are tender, and any liquid from the frozen vegetables has almost fully evaporated, 10 to 12 minutes. Stir in Creole seasoning, garlic, and pepper; cook for 2 minutes. Add shrimp, Alfredo sauce, and Parmesan cheese. Cook and stir until sauce has thickened and shrimp are bright pink on the outside and the meat is opaque, about 5 minutes.

- Season chicken with salt and pepper. Heat olive oil in a large, covered cooking pot over medium-high heat. Brown chicken in the hot oil, 5 to 7 minutes.
- Add sausage to the pot and continue to cook until lightly browned, about 5 minutes more. Stir in garlic and cook for about 2 minutes. Add chicken broth, heavy cream, pasta, and Cajun seasoning. Stir together and bring to a simmer over medium-high heat, about 5 minutes.

- Cook sausage in 12-inch nonstick skillet over medium-high heat 4 minutes or until cooked. Remove sausage to paper-towel-lined plate.
- Season chicken, if desired, with salt and pepper. Cook chicken in same skillet, stirring occasionally, 4 minutes or until chicken is thoroughly cooked. Remove chicken from skillet and set aside.
- Stir red peppers and onion into same skillet* and cook, stirring occasionally, 4 minutes or until tender. Stir in garlic and cook, 30 seconds. Stir in broth and Hellmann's® or Best Foods® Real Mayonnaise. Bring just to a boil over high heat. Reduce heat to low and simmer 1 minute. - In a covered container or sealed plastic bag, combine all spice ingredients and shake until mixed.
- Add 6 qts water, 2 tbsp olive oil, 2 tbsp kosher salt to pasta pot and heat to boil. Add pasta to boiling water and cook until al dente, approx. 8 minutes. Strain pasta in colander, lightly cool with cold water. Mix 1 tbsp of olive oil into pasta, and set aside.
- In a dry hot skillet add 2 tablespoons of the Cajun Fire Spice, allow spices to heat up and slightly smoke. Add 1 tbsp olive oil and sausage. Cook until the oils leach on to the pan, then add shrimp and chicken and coat well with spices and sausage oils.
- In a separate sauce pot melt the butter and add the whipping cream and half and half on low heat and simmer for 2 to 3 minutes. We do not want to brown the butter.Stir in the garlic and two tablespoons of the Cajun Fire Spice. Slowly whisk in 2 1/4 cups Parmesan cheese until the sauce thickens, combine with sausage, chicken and shrimp and stir well. Add the Cajun Alfredo Sauce to the cooked fettuccine and gently mix.
- Plate pasta to center of dish and mound with a fork. Top with Parmesan cheese, fresh flatleaf parsley, dust the plate with 1 tbsp Cajun Fire Spice.

- Place the shrimp and 3 tablespoons Essence in a large resealable plastic bag and shake. Place the bag in the refrigerator while you prepare the sauce.
- Heat a deep 3-quart skillet over medium-high heat. Add 1 tablespoon olive oil and the andouille sausage. Saute sausage for 2 minutes, stirring often. Add onions and saute for 2 minutes. Add crushed red pepper flakes and garlic and cook 1 minute. Add Worcestershire sauce.
- Meanwhile, cook the pasta in boiling salted water according to package instructions.
- To the skillet, add cream, milk, remaining Essence, black pepper, chili powder, and salt. Stir to a consistent color. Add butter and stir until melted. Stir in cheese until melted. Lower heat to a simmer.
- Heat the remaining olive oil in another large skillet over high heat and add the shrimp. Saute shrimp for 1 to 2 minutes per side or until they just start to turn pink. Add the shrimp and cooked, drained pasta to the first skillet. Stir to combine and blend flavors, about 1 minute.
- Serve in a large pasta bowl. Sprinkle with parsley and Essence for garnish.
