TRADITIONAL MARYLAND CRAB IMPERIAL RECIPE
Steps:
- Add butter, flour, and milk to a sauce pan and heat over medium heat, while stirring, until it's well blended and thickens. Allow to cool slightly.
- Transfer your white sauce to a large bowl and mix in the crab meat, beaten egg, pimiento, mayonnaise, dry mustard, salt & pepper.
- Place mixture into 4 crab shells, scallop shells, or individual baking dishes.
- Sprinkle equal amounts of bread crumbs, Old Bay Seasoning, & thin slices of butter to cover the tops of each serving.
- Bake in 350 degree fahrenheit oven for approximately 15 minutes. Then turn your oven on broil for 3 to 4 minutes, while keeping a close eye on them, to brown the tops.
CRAB IMPERIAL
This is a recipe that is a favorite of many of us coastal Delaware natives. Our newly elected Vice -President, Joe Biden, has more than likely been served this when he came to political dinners. There are many varied crab imperial recipes, but this is one we enjoy. I hope you will try it and tell me what you think.

Steps:
- Gently go through the lump crab meat for any shell fragments. Set crab meat aside.
- Mix mayonnaise, Worcestershire sauce, salt and egg together until well blended.
- Fold in the sauteed peppers and drained pimentos.
- Very carefully, fold in the crab meat lumps until coated with mayonnaise mixture.
- Place in buttered casserole dish.
- Casserole Topping:.
- In small bowl, mix together the egg yolk and the mayonnaise.
- Now spoon on top of the casserole filled with crab mixture.
- Sprinkle the Old Bay seasoning on top.
- Bake 350 degrees for 25 minutes or until browned. May serve with lemon wedges.
EXCELLENT CRAB IMPERIAL

Steps:
- Preheat oven to 400 degrees F (200 degrees C). Lightly grease 6 individual baking dishes.
- Bring sherry to boil in a medium saucepan, and stir in shallots, green bell pepper, mushrooms, and pimento. Over medium heat, cook, stirring occasionally, until only a small amount of liquid remains.
- In a small saucepan over low heat, whisk together heavy cream and egg yolk for about 3 minutes. Stir into the shallot mixture. Mix in dry mustard.
- Remove the mixture from heat, and stir in the crab. Cool, stir in the mayonnaise, then scoop into the prepared dishes. Top with Gruyere cheese.
- Bake 10 minutes in the preheated oven, until lightly browned.

- Preheat oven to 375 degrees. Lightly grease a shallow 1 1/2-quart baking dish.
- In a medium bowl, whisk together mayonnaise, egg, lemon juice, Worcestershire sauce, Old Bay, salt, dry mustard, and cayenne pepper.
- Stir in parsley, shallot, and crab. Transfer to prepared baking dish.
- In a small bowl, stir together Ritz cracker crumbs and melted butter. Scatter on top of crab mixture.

- Preheat oven to 450 degrees F.
- Melt butter in a heavy small saucepot over medium heat. Add shallot and stir until very lightly browned, about 5 to 8 minutes.
- Blend in flour, white pepper and mace and stir 1 to 2 minutes.
- Add half-and-half, egg yolks, dry mustard, Worcestershire sauce, and sherry and cook until thick and smooth, about 3 to 4 minutes.
- Remove from heat and stir in mayonnaise, lemon juice and salt, and gently fold crabmeat into sauce, being careful not to break up chunks.
- Fill either shells, oven-proof shells, ramekins, or small oven-proof bowls.
- Sprinkle tops with paprika.
- Place onto a cookie sheet and bake until mixture is bubbling, about 12 to 15 minutes, and serve immediately.

Steps:
- Mix mayonnaise, egg, sugar, old bay, lemon juice and parsley together and blend well, this is your imperial sauce.
- Gently fold crabmeat into, imperial sauce, being careful not to break up crab meat.
- place portions in the baking dish of your choice, using ramekins or small casserole dishes
- Spinkle tops of crab imperial with old bay or paprika.
- Bake in 350-degree oven for 20-25 minutes (top will turn golden brown) or until a thermometer gets an internal reading of 165 degrees
- Allow to cool just a few minutes before serving, it will set and be more flavorful as it cools slightly.
