Crockpot Reuben Dip served over rye crackers is the perfect fix it and forget it party food. That classic sandwich turned dip! A crowd pleaser!

Ingredients

2 (8 ounce) packages cream cheese, softened
1 (12 ounce) package Swiss cheese, divided
1 (8 ounce) container sour cream
1 cup Frank's Kraut, drained
12 ounces deli corned beef, sliced thin and chopped

Steps:

Place all of the ingredients in a large bowl. reserving half of the Swiss cheese.
Combine with mixer.
Spread into the bottom of a crock pot sprayed with non-stick cooking spray. Cover.
Cook on low for 2 hours. Uncover and add remaining Swiss cheese to the top. Cover.
Cook for 30 minutes more.
Serve hot with rye crackers, Thousand Island Dressing and Sweet Gherkin Pickles.

A wonderful, easy, creamy hot dip that even sauerkraut haters love. I often take this to work potlucks because I can assemble it at work. Just throw everything in and stir a few times. Also, it's delicious when it's overcooked and kind of dry!

Ingredients

1 (16 ounce) jar sauerkraut, drained
1 (8 ounce) package cream cheese, softened
2 cups shredded Swiss cheese
2 cups shredded cooked corned beef
¼ cup thousand island dressing

Steps:

In a slow cooker, combine the sauerkraut, cream cheese, Swiss cheese, corned beef and thousand island dressing. Cover, and cook on high for 45 minutes if you're in a hurry, low for longer if you're not, or just until hot and cheese is melted. Stir occasionally while cooking. Serve with cocktail rye or crackers.

1 lb corned beef, finely chopped
1 (16 ounce) can sauerkraut, rinsed, drained and chopped
1 cup thousand island dressing
1 1/2 cups swiss cheese, shredded
1 (3 ounce) package cream cheese, cubed
1 tablespoon prepared horseradish
1 teaspoon caraway seed
miniature party rye rounds

Steps:

Place all ingredients in a crock pot.
Cook on low setting for 2 1/2 to 3 hours.
You can serve right from crock pot on warm setting!
