4 oz Cream Cheese (softened)
2 tablespoons softened butter
1/4 cup granulated sugar
1 large egg
1 tablespoon all-purpose flour
1/2 cup Nutella (plus 1/4 cup of Nutella for the topping)
3/4 cup all-purpose flour
1/2 cup Cocoa Powder
1/2 teaspoon baking powder
1/2 teaspoon salt
4 tablespoons butter (softened)
1 cup granulated sugar
1 teaspoon pure vanilla extract
2 large eggs

Steps:

  • Preheat oven to 350 F. degrees.
  • Line a 8 x 8 baking pan with parchment paper.
  • Beat the softened cream cheese, butter, granulated sugar, all purpose flour, and egg until smooth. Scrape the mixing bowl once, add 1/2 cup of Nutella and beat until creamy and combined comepletely. Set aside while making the Nutella brownie batter.
  • Sift the all-purpose flour, cocoa powder, salt and baking powder into a medium sized bowl and set aside.
  • In a seperate small bowl cream the granulated sugar, 4 tablespoons of softened butter together. Add the eggs and vanilla extract to the bowl beating one egg in at a time.
  • Fold the flour mixture into the bowl ingredients and mix with a wooden spoon or spatula until combined.
  • Spread 3/4 of the Nutella brownie batter into the bottom of the 8 x 8 baking pan with a small metal spatula. Spread the thick brownie batter into all 4 corners of the baking pan.
  • Next spread the filling batter over the brownie batter in the baking pan leaving a one inch border of brownie batter uncovered around the edges of the pan.
  • Randomly dollop the remaining brownie batter and the remaining 1/4 cup of Nutella over the top of the pan. Use the tip of a knife to swirl the brownie batter and Nutella into the filling layer.
  • Bake the Nutella brownies in a preheated oven for 40 minutes for gooey fudgy Nutella brownies. For cake likeNutella brownies bake for 50 minutes.
  • Cool completely before cutting.

2 tablespoons (30ml) vegetable oil
1 1/4 cups (9oz/260g) white sugar
1 cup (7oz/200g) packed light brown sugar
4 (2oz/57g each) large eggs, (at room temperature)
1 tablespoon (15ml) pure vanilla extract
3/4 teaspoon salt
1 cup (3.5oz/130g) all purpose flour
1 cup (3.5oz/100g) good quality, unsweetened cocoa powder
7 oz (200g) roughly chopped chocolate or large chocolate chips

Steps:

  • Preheat oven to 175°C | 350°F.
  • Lightly grease an 8x12-inch baking pan* with cooking oil spray. Line with parchment paper (or baking paper); set aside.
  • Combine melted butter, oil and sugars together in a medium-sized bowl. Whisk well to combine. Add the eggs and vanilla; beat until lighter in colour (another minute).
  • Sift in flour, cocoa powder and salt. Gently fold the dry ingredients into the wet ingredients until JUST combined (do NOT over beat as doing so well affect the texture of your brownies).
  • Fold in 3/4 of the chocolate pieces.
  • Pour batter into prepared pan, smoothing the top out evenly, and top with remaining chocolate pieces.
  • Bake for 25-30 minutes for just under-done brownies (fudgier texture) or until the centre of the brownies no longer jiggles and is JUST set to the touch. OR 35-40 minutes if you like your brownies well set and firm. NOTE: Brownies will continue baking and set in the hot pan out of the oven. If testing with a toothpick, the toothpick should come out dirty for fudge-textured brownies.
  • After 15-20 minutes, carefully remove them out of the pan and allow to cool to room temperature before slicing into 16 brownies. They set while they cool.ENJOY!

170 grams (¾ cup, 1 ½ sticks) unsalted butter, cut into small pieces
283 grams (10 ounces) chopped bittersweet chocolate (or chips), plus 2 more ounces for topping if desired
4 large eggs
200 grams (1 cup) granulated sugar
80 grams (⅔ cup) all-purpose flour
¾ teaspoon kosher salt

Steps:

  • Line a 9 x 9 inch (23 x 23 cm) baking pan with parchment paper and set aside.
  • Preheat the oven to 350ºF (175ºC) and position an oven rack in the middle of the oven.
  • Measure out all ingredients.
  • In a saucepan, melt the butter (170 grams, (¾ cup) over low heat. Once melted, remove from the heat and add all the chocolate (283 grams, 10 ounces) into the pan. Stir frequently until smooth. If the chocolate does not completely melt, place the pan back over the lowest heat and stir continuously until smooth. Remove from the heat and let cool for about 5 minutes.
  • Meanwhile in a large bowl, whisk together the eggs (4 large) and sugar (200 grams, 1 cup) just until combined (you do not want to beat a lot of air into them). Set the whisk aside and use a spoon or rubber spatula for the rest of the mixing. Slowly stream the melted chocolate/butter into the egg/sugar mixture while stirring continuously.
  • Add the flour (80 grams, ⅔ cup) and salt (¾ teaspoon) stir just until combined.
  • Spread the batter evenly into the prepared baking dish. If desired, you can also sprinkle some chopped chocolate on top.
  • Bake for 35-40 minutes or until a tester inserted in the center comes out with very moist crumbs clinging to it (not liquid batter, but crumbs).
  • Cool completely before removing from the pan and cutting. Brownies will not be set when still warm, but will set once cooled.
