CREAMY NEW ENGLAND FISH CHOWDER

Creamy New England Fish Chowder image

An authentic, easy New England fish chowder recipe. Made with milk, potatoes, and good, fresh fish.

Provided by Unpeeled

Categories     Soup

Number Of Ingredients 10

3 medium Yukon gold potatoes, peeled and cut to a medium dice
5 tablespoons unsalted butter, divided
1 medium yellow onion, diced small
1 bay leaf
1 pound fresh haddock or cod fillets, picked over for bones
1 12-ounce can of evaporated milk
1/2 cup half-and-half or heavy cream
1 1/2 teaspoons kosher salt, or to taste
cold water
fresh minced chives and oyster crackers, to garnish (optional)

Steps:

  • Dice the potatoes and onions. PRO TIP: Keep cut potatoes from discoloring by covering them in cold water until ready for use.
  • In a soup pot, melt half the butter over medium-low heat. Add the diced onions and bay leaf and cook, stirring, over medium heat until translucent, about 5 to 7 minutes.
  • Add the diced potatoes and add enough water to the pot to cover the potatoes and onions. Cover and gently boil until the potatoes are just fork tender, about 10 minutes.
  • Lay the whole fish fillets on top of the potatoes and onion. Add the evaporated milk and the half-and-half or cream. Do not stir. Cover and cook at a simmer, without stirring, for about 15 minutes. Check the pot once or twice to make sure the liquid does not boil.
  • Check to make sure that the potatoes have fully softened, and the fish is cooked and flakes apart easily. Add the rest of the butter, the salt, and a good dose of fresh black pepper. Stir gently to combine and break the fish apart a bit. Taste for seasoning.
  • Top with fresh minced chives and serve with oyster crackers or hot biscuits.

  • The Slipway Crab Roll. The whole point of a crab roll is the crab—get the best you can find, and don’t mess with it too much. And, that bun: It has to be split top.
  • Blueberry Hand Pies. These little blueberry pies are simple to make, and thanks to their rectangular shape, you won’t end up with wasted scraps of dough.
  • Perfectly Steamed Lobster. Buy perky, energetic lobsters; they should be active and extend their claws upwards when lifted. View Recipe.
  • Creamy Fish Chowder. Summer evenings in Maine can be chilly, especially early and late in the season. When it’s sweater weather, it’s chowder time. View Recipe.
  • Beer-Steamed Clams. Clams are inexpensive, plentiful, easy to cook, and delicious. And you barely need a recipe—once they open, they’re done. View Recipe.
  • Blueberry Buckle. Like a glorified, oversized blueberry muffin. Earn extra points by using Maine’s wild blueberries and offering vanilla ice cream on the side.
  • New England Clam Chowder. Channel New England with this rich and warming one-pot clam chowder. If fresh clams are unavailable (or you're running short on time), substitute two 10-ounce cans of baby clams and 6 cups of bottled clam juice.
  • Chase’s Daily Omelet. Any seasonal vegetables can replace the zucchini and onion; at Chase’s, they change it up frequently. View Recipe.
  • Butter-Poached Lobster with Asparagus and New Potatoes. Lobster will get tough if overcooked, so be gentle with it during the last step. View Recipe.
  • BA's Ultimate Lobster Rolls. Warm, toasty, buttered rolls are key. If you can't find New England–style buns, trim 1/4-inch from both sides of standard hot dog buns to remove the crust and expose more surface area.

  • Heat a stockpot over medium heat. Add the butter and, when it's melted, add the onions and celery. Cook, stirring occasionally, about 5 minutes. Add the flour and whisk until it's smooth, cooking for another minute (this will allow the raw flour taste to cook out).
  • Slowly pour in 1/2 cup of the chicken broth, whisking constantly, until it's smooth. Add the potatoes, remaining chicken broth, and creamed corn to the pot and stir well. Bring to a gentle boil, reduce the heat to keep it at a simmer, and cook for 10 minutes.
  • Add the Old Bay, salt and pepper. Taste and add more seasoning if necessary. Ladle into bowls, top with the crumbled bacon (if using), and serve immediately.
