Iowa Maid-Rites image

I came up with my own version of Iowa MaidRites which also are called 'loose meat' sandwiches. Very versatile, leftover beef can be used for spaghetti or taco filling, or it can be frozen for later use.

4 pounds ground beef
1 (1 ounce) envelope dry onion soup mix
1 ½ (10.5 ounce) cans condensed French onion soup
16 hamburger buns, split

Steps:

  • Crumble the ground beef into a large skillet over medium-high heat. Cook and stir until evenly browned, crumbling even more as it cooks. Drain off the grease. Stir in the onion soup mix and French onion soup. Cover, and simmer over low heat for about 2 hours, or you may transfer to a slow cooker for this part.
  • To serve, spoon onto hamburger buns like a sloppy Joe.

The origins of this sandwich are disputed. A typical loosemeat sandwich consists of twice-ground beef cooked and seasoned with a secret ingredient or two, piled into hamburger buns and topped off with mustard, pickles, and chopped onions--never ketchup. Taylor's Maid-Rite in Marshalltown, Iowa will ship frozen Maid-Rites to your door.

1 lb twice- ground beef
1 tablespoon dried onion flakes
1 teaspoon ground black pepper
1/2 teaspoon salt
1 teaspoon sugar
2 teaspoons prepared yellow mustard
1 (12 ounce) bottle beer (not light beer)
4 hamburger buns, toasted if desired
chopped fresh onion
prepared yellow mustard
pickle

Steps:

  • In a skillet, brown the beef over medium-high heat, stirring to crumble; drain in a colander.
  • Return beef to pan; stir in onion flakes, pepper, salt, sugar, mustard, and beer.
  • Simmer, partially covered, over medium heat until liquid is evaporated (about 30 minutes.
  • To make a loosemeat sandwich: spoon beef into buns; serve immediately with chopped onion, mustard, and pickles.
  • Make sure everyone has a spoon so they can scoop up any stray beef that escapes.

1 boneless beef chuck roast (3 pounds)
1/3 cup tarragon wine vinegar
1/4 cup olive oil
1 envelope zesty Italian salad dressing mix
1/2 teaspoon meat tenderizer, optional

Steps:

  • Pierce meat generously with meat fork; turn meat and pierce again. In a large resealable plastic bag, combine the vinegar, oil, salad dressing mix and meat tenderizer if desired. Add roast; seal bag and turn to coat. Refrigerate for 8 hours or overnight, turning often. , Grill over medium heat for 6-9 minutes on each side or until meat reaches desired doneness.

2 tablespoons dark molasses
1/2 cup soy sauce
1/4 cup oil
3 cloves garlic, cut up (or 2 teaspoons garlic salt)

Steps:

  • Cut meat into cubes. Mix remaining ingredients and place cubes of meat in mixture. Let stand in refrigerator 24 hours or at least 5 hours if in a huffy. Broil or grill 6-12 minutes, or to desired doneness.
