Aside from the fact that Puto Bumbong showcases the richness of the Pinoy culinary scene, it also fits all kinds of celebrations. The dish's versatility is the reason it is suitable for all culinary roles, be it a side dish or a dessert.

1 1/4 cup Rice flour
1 cup Coconut milk
1 tbsp Ube flavouring
1 cup Coconut (desiccated)
1 cup Cheese (grated)
1/2 cup Butter
1 cup White sugar

Steps:

  • In a large container, combine rice flour, coconut milk and ube flavouring. Mix well until you form a dough. Set aside.
  • Fill your puto bumbong steamer with water halfway through. Apply heat and then let the water boil. Set aside.
  • Prepare bamboo tube and spread butter inside of each tube.
  • Then, fill each bumbong (bamboo tube) with the mixture. Note: Do not compress the rice so that steam can pass easily.
  • Once the water starts to boil rapidly, arrange each bamboo tube on the steamer. Continue to cook until steam comes out of the tube.
  • Remove the tube from the steamer. Arrange the contents over a piece of banana leaf, then top with freshly grated coconut, cheese and sugar.

  • In a large bowl combine both types of glutinous rice, add enough water to fully soak them and leave in a cool place for 24 hours.
  • Fully drain your rice then place them in a food processor or a blender, pulse to have a grainy wet consistency and add a bit of water while grinding them. You need to achieve a gritty but fine consistency similar to a moist sand.
  • Place the mixture in a lightly greased shallow tray, it should be no more than 2 cm in thickness. Do not press or compact, it should be loose otherwise it will come out really hard, place in a steamer then steam for 20 minutes in really high heat or until cooked and tender.
  • Remove the cooked puto bumbong from the tray, slice and shape into small cylinders, place on a banana leaf lined plate then spread some margarine on top, generously sprinkle it with freshly grated coconut and some palm sugar granules then serve.
