3/4 cup shortening
1 cup packed brown sugar
1/4 cup mild-flavor molasses or full-flavor molasses
1 egg
2 1/4 cups Gold Medal™ all-purpose flour
2 teaspoons baking soda
1 teaspoon ground cinnamon
1 teaspoon ground ginger
1/2 teaspoon ground cloves
1/4 teaspoon salt
Granulated sugar

Steps:

  • Mix shortening, brown sugar, molasses and egg thoroughly in large bowl. Stir in remaining ingredients except granulated sugar. Cover and refrigerate at least 2 hours.
  • Heat oven to 375°F. Grease cookie sheet. Shape dough into 1 1/4-inch balls. Dip tops in granulated sugar. Place balls, sugared sides up, 3 inches apart on cookie sheet. Sprinkle each with 2 or 3 drops of water.
  • Bake 10 to 12 minutes or just until set but not hard. Remove from cookie sheet to wire rack.

1 teaspoon baking soda

1/2 teaspoon ground nutmeg
1/4 teaspoon salt
1/4 teaspoon ground cloves
1/4 teaspoon ground allspice
3/4 cup shortening
1 cup granulated sugar
1 egg
1/4 cup molasses
1 cup coarse white sparkling sugar

Steps:

  • In medium bowl, mix flour, baking powder, baking soda, ginger, cinnamon, nutmeg, salt, cloves and allspice; set aside.
  • In large bowl, beat shortening with electric mixer on medium speed until fluffy. Gradually add granulated sugar, beating well. Add egg and molasses; beat well. Gradually add flour mixture, beating on low speed until blended. Cover; refrigerate 1 hour.
  • Heat oven to 375°F. Shape dough into 1-inch balls; roll in sparkling sugar. On ungreased cookie sheets, place balls 2 inches apart.
  • Bake 9 to 11 minutes (tops will crack) or just until set. Remove from cookie sheets to cooling racks.

1 1/2 cups granulated sugar
1 cup shortening
1/2 cup molasses
2 eggs
3 teaspoons baking soda
1/2 cup water
5 1/2 cups Gold Medal™ all-purpose flour
1 1/2 teaspoons ground cinnamon
1 teaspoon ground ginger
1 teaspoon ground cloves
1 teaspoon salt
1 envelope plus 2 teaspoons unflavored gelatin
1 cup cold water
1 cup granulated sugar
2 1/4 cups powdered sugar
1 1/2 teaspoons vanilla
1 teaspoon baking powder
1/8 teaspoon salt

Steps:

  • In large bowl, mix 1 1/2 cups granulated sugar, the shortening, molasses and eggs until well blended. In small bowl, dissolve baking soda in water; stir into molasses mixture. Stir in remaining cookie ingredients until well blended. Cover and refrigerate at least 2 hours.
  • Heat oven to 375°F. Lightly grease cookie sheet. On floured surface, roll dough 1/4 inch thick. Cut with floured 2 3/4-inch round cutter (or cut with clean food can with both ends removed, such as rectangular-shaped pork luncheon meat can). Place about 2 inches apart on cookie sheet.
  • Bake 8 to 10 minutes or until light brown. Remove from cookie sheet to cooling rack. Cool completely, about 30 minutes.
  • In 2-quart saucepan, sprinkle gelatin on cold water to soften; stir in 1 cup granulated sugar. Heat to a rolling boil; reduce heat. Simmer uncovered 10 minutes. In large bowl, place powdered sugar and hot gelatin mixture. Beat with electric mixer on medium speed about 2 minutes or until foamy. Add vanilla, baking powder and salt; beat on high speed 12 to 15 minutes or until soft peaks form. Frost bottoms of cookies with frosting. Let stand until frosting is dry, 2 to 3 hours, before storing.

3/4 cup butter or margarine, softened
1 cup granulated sugar
1/4 cup molasses
1 egg
1/3 cup turbinado sugar (raw sugar) or coarse sugar

Steps:

  • Heat oven to 350°F. Spray cookie sheet with cooking spray.
  • In medium bowl, mix flour, baking soda, pumpkin pie spice and salt; set aside. In large bowl, beat butter and granulated sugar with electric mixer on medium speed until light and fluffy. Add molasses and egg, beating until combined. On low speed, beat in flour mixture until blended. Shape dough into 1-inch balls; roll in turbinado sugar. On cookie sheet, place balls 2 inches apart.

For a change, try substituting cut-up dates or other dried fruits for the raisins. NOTE: If you replace the shortening with butter as many reviewers have done, you will probably get a crispier vs. chewy cookie.

1 1/4 cups sugar
2 eggs
1/3 cup molasses
1 3/4 cups flour
1 teaspoon baking soda

2 cups old fashioned oats
3/4 cup raisins
3/4-1 cup semisweet chocolate chunks or 3/4-1 cup chocolate chips

Steps:

  • Preheat oven to 400°F.
  • Beat shortening, sugar, eggs, and molasses thoroughly.
  • Stir dry ingredients (flour-cinnamon) together and blend into wet ingredients.
  • Stir in oats, raisins and chocolate chips.
  • Drop dough by rounded teaspoonfuls about 2 inches apart on a lightly greased baking sheet.
  • Bake 8-10 minutes or until lightly browned.
  • Note: When I used a 1 1/2-inch wide cookie scoop, I got 3 1/2 dozen cookies.

Steps:

  • In a large bowl, combine the first nine ingredients. Divide into three batches; store in airtight containers in a cool, dry place for up to 6 months. Yield: 3 batches (9 cups total)., To prepare cookies: Preheat oven to 375°. In a large bowl, cream butter until light and fluffy. Add egg and molasses; mix well. Add 3 cups cookie mix; beat until smooth. , Shape into 1-in. balls and roll in sugar. Place 2 in. apart on ungreased baking sheets. Bake until the edges are firm and the surface cracks, 9-11 minutes.
