Steps:
- In a 13 x 9 x 2 inch baking pan stir together graham cracker crumbs, 3 tablespoons of the sugar and butter. Press firmly into bottom of pan.
- In large mixing bowl beat cream cheese and remaining sugar with an electric mixer on medium speed until smooth. Spread evenly over crumb crust.
- Slice bananas and place on top of cheese mixture. Drizzle with 2 tablespoons chocolate syrup.
- Spoon drained pineapple over bananas. Spread Cool Whip over top. Sprinkle with pecans and cherries. Drizzle with remaining chocolate syrup.
- Refrigerate for 2 hours or overnight.

- Beat half the cream cheese in large bowl with mixer until creamy. Gradually beat in 1-1/2 cups milk. Add dry chocolate pudding mix; beat 2 min. Add 1 cup COOL WHIP and half the melted chocolate; beat on low speed just until blended. Spoon into 2-1/2-qt. bowl.
- Reserve 1/4 cup pineapple tidbits. Beat remaining cream cheese in separate bowl with mixer on medium speed until creamy. Gradually beat in remaining milk. Add dry vanilla pudding mix; beat 2 min. Add reserved pineapple juice and 1 cup of the remaining COOL WHIP; beat on low speed just until blended. Stir in remaining pineapple tidbits.
- Arrange wafers over chocolate pudding layer. Reserve 1/2 banana for garnish. Cut each of the remaining bananas crosswise, then lengthwise in half; arrange over wafers. Top with layers of vanilla pudding mixture, strawberries and reserved pineapple tidbits. Drizzle with remaining melted chocolate. Top with remaining COOL WHIP; sprinkle with nuts. Refrigerate 1 hour.
- Cut reserved banana half lengthwise in half; insert into top of dessert just before serving.

TRADITIONAL BANANA SPLIT
There is some debate in our ice cream parlor what the "traditional" split consists of. I did some research before we opened and it seems that this is the most consistently "traditional" split served, even though some have marshmallow, peanuts, crushed cherries and more. I prefer hot fudge over the chocolate syrup, personally :P

Steps:
- Line up ice cream scoops next to each other in an oval deep dish or a banana boat.
- Cut the ends of the banana off (about 1/4 inch) while still in the peel.
- Slice in half longways.
- Pop each half of the banana out of the peel onto each side of the ice cream row, pressing down and in a little so it'll stay put.
- Top the vanilla ice cream with the pineapple, the chocolate with the chocolate syrup and the strawberry with the strawberry sauce.
- Spoon the wet walnuts over all three scoops of ice cream.
- Top each scoop with some whipped cream and a cherry for each.
- Enjoy!

TINY BANANA SPLITS

- Line a baking sheet with parchment. Put the chocolate in a small microwave-safe bowl, and microwave in 30-second increments, stirring after each, until smooth. Transfer the melted chocolate to a mug.
- Put the walnuts in another small bowl. Peel the bananas, trim the ends and cut each into six 2-inch pieces. Dip each piece halfway into the chocolate, and let any excess drip off. Roll the chocolate-dipped ends in walnuts, then set them on the prepared baking sheet. Refrigerate to set the chocolate. (The bananas can be refrigerated up to 2 hours.)
- Whip the cream in a small bowl until soft peaks form. Add the preserves, and stir to incorporate. Transfer the mixture to a pastry bag fitted with a large star tip. Pipe a star-shaped dollop on top of each banana. Garnish with a piece of cherry and sprinkles.

- In a small bowl, combine crumbs and melted butter. Set aside 1/2 cup; press remaining crumbs into a 15x10x1-in. pan. Slice bananas widthwise and layer over crust. Cut ice cream widthwise into 10 slices; place over bananas. Spread edges of ice cream slices to cover banana and form a smooth layer. Sprinkle with nuts. Cover and freeze until firm. , In a large saucepan, melt chocolate chips and butter; stir until smooth. - Halve bananas, then cut into quarters. Place 3 segments into each serving dish. Using a melon baler to achieve "tiny" scoops, place a scoop of each flavor of ice cream on top of the banana. (Ice cream may be scooped ahead of time and refrozen. This will help the ice cream to hold its shape.)

- Whisk milk and pudding together in a large bowl for 2 minutes. Stir in pineapple. Fold in whipped topping.

- Make the bombe: Spread vanilla ice cream in an even layer on bottom and up sides of a 5-quart heatproof bowl with a 9 1/2-inch-diameter rim. Ice cream should form a concave layer that comes up to the rim of the bowl. Freeze until set, about 20 minutes. Using an offset spatula, smooth the surface of the ice cream layer. Freeze again until very firm, at least 1 hour.
- Meanwhile, place chocolate and banana in a heatproof bowl. Heat cream in a saucepan until bubbles begin to form around edges. Pour over chocolate and banana, and let stand for 1 minute. Whisk until combined. Set bowl over a pot of simmering water, and whisk until chocolate melts. Refrigerate, stirring occasionally, until thick and spreadable, about 1 hour.
- Spread chocolate-banana mixture in a thin, even layer over entire surface of vanilla ice cream layer. Freeze until firm, about 30 minutes.
- Spread pistachio ice cream in a flat, smooth layer over chocolate-banana mixture, but not up sides. Freeze until firm, about 30 minutes.
- Spread chocolate ice cream in a flat, smooth layer over pistachio ice cream. Freeze until firm, about 30 minutes.
- Place banana cake over chocolate ice cream, top side up, and press gently until cake fits snugly against ice cream. (If vanilla ice cream and ganache layers extend beyond top of cake, trim them with a sharp knife.) Cover with plastic wrap, and freeze overnight (or up to 3 days).
- To unmold bombe, dip bowl in a larger bowl of very hot water or use a small kitchen torch to warm outside of bowl. Continue dipping or torching bowl until bombe releases when inverted onto a serving platter. Remove bowl, wipe ice cream drips off platter, and freeze until bombe is very firm, about 1 hour.
- Make the topping: Place chocolate and shortening in a heatproof bowl set over a pot of simmering water. Stir until chocolate and shortening melt. Let cool slightly, then slowly pour on top of bombe, spiraling in concentric circles to create a solid center with long drips down the sides. Sprinkle pistachios on top, and freeze until chocolate is set, about 10 minutes.
- Run a large knife under hot water, and dry well. Use it to slice bombe into wedges, as you would a cake, wiping knife clean between cuts.
