J.P.'S BIG DADDY BISCUITS
This recipe will produce the biggest biscuits in the history of the world! Serve these gems with butter, preserves, honey, gravy or they can also be used as dinner rolls...you get the picture. The dough can also be prepared several hours, and up to a day ahead of time. If so, turn dough out onto aluminum foil that has been either floured, lightly buttered or lightly sprayed with cooking spray. Roll up foil until it is sealed, and refrigerate. Don't be surprised if your biscuits rise even higher because the baking powder has had more time to act in the dough. You may have to make a few batches before you get desired results: desired results equals huge mongo biscuits.

Steps:
- Preheat oven to 425 degrees F (220 degrees C).
- In a large bowl, whisk together the flour, baking powder, salt, and sugar. Cut in the shortening until the mixture resembles coarse meal. Gradually stir in milk until dough pulls away from the side of the bowl.
- Turn out onto a floured surface, and knead 15 to 20 times. Pat or roll dough out to 1 inch thick. Cut biscuits with a large cutter or juice glass dipped in flour. Repeat until all dough is used. Brush off the excess flour, and place biscuits onto an ungreased baking sheet.
- Bake for 13 to 15 minutes in the preheated oven, or until edges begin to brown.

- Place roast in a deep roasting pan, fat side up; pour vinegar over roast. Let stand for 15 minutes. Sprinkle with salt and pepper. Add water to pan. , Cover and bake at 400° for 3-1/2 hours or until meat is tender, adding additional water if needed. About 15 minutes before roast is done, uncover to brown the top. , Remove roast to a serving platter and keep warm; skim fat from pan juices. Pour juices into measuring cup, adding water if needed to measure 3 cups. , Mix flour and cold water until smooth; stir into pan juices. Bring to a boil. Reduce heat; cook and stir for 1-2 minutes or until thickened. Stir in browning sauce if desired. Season with salt and pepper. Serve gravy with roast.

Cover and bake at 400 degrees F for 3-1/2 hours or until meat is tender, adding additional water if needed. About 15 minutes before roast is done, uncover to brown the top. Remove roast from pan and keep warm; skim fat from pan juices. Measure the juices, adding water if needed to equal 3 cups. Mix flour and cold water until smooth; stir into pan juices. Cook and stir until thickened and bubbly. Cook and stir 1 minute more. Stir in browning sauce. Season with salt and pepper. Serve gravy with roast.

BIG DADDY'S SUNDAY BREAKFAST FEAST
Big daddy loves his breakfasts. This is his special Sunday morning breakfast. What's so great about this recipe is it's practically failproof, easy to make, common ingredients and oh so yummy.

- Biscuits: Make your favorite biscuits. I make two bisquick biscuits. Add milk and a little sour cream. Bake them in my iron skillet at 400º for approximately 20 minutes. As I make them fairly big. This give a nicely browned crunch outside and leaves the inside soft and light tasting.
- Mock Sauce: Take equal amounts of sour cream and mayo approximately 1/2 cup of each and put in a small saucepan with about 3 tablespoons butter and a little salt and heat is completely through while whisking to make sure it's mixed well and very smooth.
- When biscuits have about 6 minutes or so left of baking time, get my large pan out and fry 4 eggs and 8 slices of of black forest ham sandwich meat. If I happen to have bacon I will fry that up and use that. Usually I don't have it though. When eggs are done (Hubs like the middle semi-hard and browned) I put 2 slices on top of each egg and top that with a slice of pepper jack cheese. I turn fire off and cover pan which melts the cheese.
- While cheese is melting I take the biscuits out, cut in half then add a little butter to each one and place on plate. Top each biscuit half with the egg,ham and cheese. Then all is topped with the sauce. Man oh man is this ever good. Hubs shakes his head up and down and says hmmm hmmm with every bite. hehehe
