This recipe uses chopped apple and apple juice to make delicious apple muffins from scratch.

2 cups all-purpose flour
½ cup white sugar
3 teaspoons baking powder
½ teaspoon salt
¾ cup apple juice
⅓ cup vegetable oil
1 egg
1 teaspoon ground cinnamon
1 cup apples - peeled, cored and finely diced

Steps:

  • Heat oven to 400 degrees F (205 degrees C). Grease bottoms only of 12 muffin cups or line with baking cups.
  • In a medium bowl, combine flour, sugar, baking powder, cinnamon, and salt; mix well. In a small bowl, combine apple juice, oil, and egg; blend well. Add dry ingredients all at once; stir just until dry ingredients are moistened (batter will be lumpy.) Stir in chopped apples.
  • Fill cups 2/3 full. Bake for 18 to 22 minutes or until toothpick inserted in center comes out clean. Cool 1 minute before removing from pan. Serve warm.

Nonstick cooking spray
1/4 cup chopped pecans
3/4 cup plus 2 tablespoons packed brown sugar
1/2 teaspoon ground cinnamon
1 cup all-purpose flour
1 cup whole wheat pastry flour
1 teaspoon baking soda
1/2 teaspoon fine salt
1/4 cup canola oil
2 large eggs
1 cup natural applesauce
1 teaspoon vanilla extract
3/4 cup low fat buttermilk
1 Golden Delicious apple, peeled, cored and cut into 1/4-inch pieces

Steps:

  • Preheat the oven to 400 degrees F. Coat a 12-capacity standard muffin pan with cooking spray.
  • In a small bowl, mix together the pecans, 2 tablespoons of the brown sugar and the cinnamon.
  • In a medium bowl, whisk together the all-purpose and whole wheat flour, baking soda and salt.
  • In a large bowl, whisk the remaining 3/4 cup sugar and the oil until combined. Add the eggs, one at a time, whisking well after each addition. Whisk in the applesauce and vanilla.
  • Whisk in the flour mixture in two batches, alternating with the buttermilk. Whisk just until combined. Gently stir in the apple chunks.
  • Pour the batter into the prepared muffin pan and sprinkle with the pecan mixture. Tap the pan on the counter a few times to remove any air bubbles. Bake until a wooden pick inserted in center of one of the muffins comes out clean, 20 to 25 minutes.
  • Let cool on a wire rack for 15 minutes. Run a knife around the muffins to loosen them and unmold. Cool completely on the rack.

  • Preheat oven to 400 degrees. Spray a 12-cup standard muffin tin with cooking spray; set aside. Cut 3 apple quarters into 1/4-inch dice; cut remaining apple quarter into 12 thin slices for garnish.
  • Whisk together sugar, flour, baking soda, salt, and cinnamon in a medium bowl. Add diced apple and walnuts, if using; toss to coat. Whisk together eggs, buttermilk, and butter in a small bowl. Gently fold buttermilk mixture into flour mixture until just combined; do not overmix. Divide batter among muffin cups, filling each about three-quarters full. Top each with an apple slice. Bake until muffins are brown around edges and spring back when touched, 16 to 18 minutes. Let muffins cool slightly, about 5 minutes, before turning out of tin onto a wire rack. 4 ounces whole wheat flour (about 1 cup)
5 ounces all-purpose flour (about 1 cup)
1 teaspoon baking powder
1 teaspoon baking soda
1/4 teaspoon salt
1 tablespoon cinnamon
1/4 teaspoon nutmeg
1/2 cup canola oil
1/2 cup Splenda brown sugar blend
1/2 cup egg substitute
1 cup low-fat buttermilk
1 teaspoon vanilla
2 large apples, peeled, cored, and chopped (very large fuji or honeycrisp,tart)
2 tablespoons brown sugar, for sprinkling

Steps:

  • Preheat the oven to 450f. Grease and flour or line your large cup muffin pan.
  • Mix together the flours, baking powder, baking soda, salt, cinnamon, and nutmeg, set aside.
  • In a seperate bowl mix the oil, egg substitute, vanilla and sugar.
  • Then mix in the lowfat buttermilk gently.
  • Gently stir in the dry ingredients and fold in the apples until just mixed.
  • After filling muffin cups sprinkle the top of each muffin with a little brown sugar.
  • Divide the batter evenly (3/4 full) among the muffin cups. Use a large cup muffin pan and this recipe will make 6-8 large muffins (depending on your pan).
  • Bake for 10 minutes, then turn the heat down to 400 f and bake an additional 20-25 minutes or until a toothpick inserted in the middle comes out clean.
  • Cool the muffins in the pan for 5 minutes before turning them onto a rack to cool completely.
